I heard that Hyakumangoku No Shiro is a new sake rice developed by Ishikawa Prefecture over the past 11 years. The rice is easy to polish and has low protein content, resulting in a clear and fruity flavor.
The raw material rice is 100% Hyakumangoku No Shiro produced in Ishikawa Prefecture
Polishing ratio is 50%.
Alcohol content is 14 degrees Celsius
When the bottle is opened, the aroma has a fruity smell like pears and white peaches, and a light acidity reminiscent of grapefruit peel, giving it a citrusy freshness. The ginjo aroma, which is not too showy, and the refreshing fruitiness stand out in good balance.
When poured into a sake cup, it is very clear and nearly colorless, but there is also a faint lemon yellow color, and the viscosity is as smooth as water for a daiginjo.
When one takes a sip, it has a soft mouthfeel with a fresh pear or white peach-like sweetness that quickly spreads in the mouth.
The acidity lightens the palate without making it too sweet, and the rice-derived umami flavor without any cloying taste comes out in a flash.
In the aftertaste, a crisp acidity and a hint of grapefruit-like bitterness tighten the sweetness, which quickly fades away.

しんたろThis is my first Dewazakura, Sakurabana Ginjo-shu, raw sake. Perhaps the first honjozo type ginjo-shu.
Founded in 1892, this sake is made by the Dewazakura Sake Brewery in Tendo, Yamagata Prefecture. Sakurabana Ginjo-shu is considered a pioneer of ginjo-shu.
The aroma is subdued, with green apple, herbal, and a hint of melon or melon-like watery aroma. The taste was sweet first, followed by a refreshing acidity of the honjozo type, with a moderate umami and bitterness. It was very easy to drink on its own, and was delicious with any food. I saw your post about the offline meeting, it looks like a lot of fun 😆 My wife and I are beginners who recently started drinking sake, but we don't have many sake lovers, so we would love to have a drink while listening to the stories of our seniors! しんたろMutsu Hachisen's special junmai since Natsu Doburokku. The aroma is mild, with a green apple aroma. It has a good balance of sweetness, umami, and acidity, making it an easy-drinking sake. It is easy to pair with meals.
The brewer is Hachinohe Shuzo in Aomori Prefecture. Mutsu Hachisen is the main brand, replacing Mutsu Otokoyama, the founding brand.
The raw material rice is Mutsuhomare, the rice polishing ratio is 60%, the sake degree is +3 degrees, the acidity is 1.4, and the alcohol content is 15%.

The aroma is sweet and fruity 😌.
I thought it would be a dry sake, but it is quite sweet 😙There is some acidity, but "gorgeous" is the next best word for this one after J&N! It's like a gorgeous but light food wine 😙.
By the way, we watched the Edogawa fireworks display the weekend before last from the parking lot of my father's apartment building, and it was a bit disappointing because the wind direction was bad that day and the smoke came first and stayed there for a long time, hiding the fireworks 😓.
And in the second half of the day, paper shavings and dust from the fireworks were falling down 😳When I looked at my car the next morning, there was quite a lot of trash 🙁 🙁 But the sound and atmosphere of the fireworks was great and everyone enjoyed the fireworks.
But we all enjoyed the sound and atmosphere of the fireworks while drinking beer 🍻 and my father sat in his wheelchair and watched for about an hour until the end😇.
Then the next morning my dad woke up with a cheerful "Gummoni~ng 👋" and my sister asked him "How were the fireworks last night?" I asked him.

After Faylan, I chose YOKOYAMA from Iki Island in Nagasaki. This is my first time drinking it.
It is made from Gin-no-sato (Akita Sake No. 49), a sake brewing rice developed in Akita Prefecture.
The raw material rice is 80% Gin-no-sato produced in Iki.
Yamadanishiki 20% as Koji rice.
Polishing ratio: 50% for koji rice, 65% for kake rice
Alcohol level is 14 degrees Celsius.
The specifications are for a once-fired sake.
When the bottle is opened, the aroma is mildly fruity and sweet, like banana and melon.
When poured into a sake cup, it has a thin, clear, pale yellow color. The sake is smooth and silky.
When you take a sip, it is smooth and fresh. The sweetness spreads gradually. The taste is mellow with a good balance of acidity and sweetness.
The lingering aftertaste is round and umami spreading in the mouth, while it is crisp and clear, with a moderate bitterness. It is easy to drink.
Personally, I prefer it at room temperature rather than cold, as the umami increases. しんたろThis is the first Nabeshima I've had since I had a Jungin hidden sake before. The aroma was banana-like and cream bread-like as soon as it was poured into the glass, but after a little while, I didn't notice it anymore. Is this the ginjo aroma? I wonder what it is. It has a firm umami flavor, which is typical of Yamada-Nishiki. I read that it has a fine gasiness, but I couldn't tell without being told.
Alone, the bitterness lingered on both ends of the tongue, but when paired with Hue-type salami, it became surprisingly mild. The bitterness disappeared and the sweetness spread softly to the center of the tongue. I was surprised at how much the flavor impression changed.

Time goes back to ⌛️... two Saturdays ago when a lot was happening! As I mentioned in my previous post, this was the day of Bunraku's tasting at a nearby liquor store that I always drive to😙.
We took the bus 🚌 and walked 🚶 out to drink and arrived at the store sweating 💦!

The label says that the previous master brewer revived the Bodai Hashiro, but the Bodai Hashiro Kenkyukai website has a different story, which I will look into further.
Bodai-Hashiro is said to be the oldest sake brewing method established in the Muromachi period (1336-1573) at Shoreki-ji Temple at the foot of Mt. It is characterized by soaking raw rice in water to propagate lactic acid bacteria and using the "soyashi water" as the brewing water for the sake brewer.

たけるパパUnexpectedly, Sentori ⛄️ continued to be available, so I visited Yodogawa Sake Shop for the first time in a while and bought a bottle of Sentori. I noticed that I haven't had any Aomori 🍶...and I noticed the "back" label 😁.
When I poured it into the sake cup, it was light and refreshing. The color is clear, but has a slight yellowish tinge.
The rice used is Aomori's "Hanasoui," a rice suitable for sake brewing.
Polishing ratio is 50%.
The alcohol content is 16%.
Specifications: unfiltered, unpasteurized sake.
When the bottle is opened, the aroma is gorgeous and mellow, with a hint of apple.
The first sip reveals a smooth mouthfeel with a juicy flavor and fruity sweetness that spreads in the mouth. There is no cloying taste, and the taste is accentuated by the clear acidity that spreads along with the spreading sweetness.
After the acidity quickly recedes, a gorgeous umami flavor lingers in the aftertaste.
The taste does not make you aware of the 16% alcohol content, so you can easily drink more sake...but you will be drunk well. Mutsu Hachisen is delicious. This time it was a limited edition sake, but it made me want to try others. ジェイ&ノビィHello, Takeru Papa 😃.

たけるパパThis 375ml sparkling kijoshu is produced in April 2024 by the Watanabe Shuzo brewery located in the Hachimizo Mountains of Otawara City. This is the first time for Kyokko.
This time, it is filled with naturally sparkling carbon dioxide gas generated during the brewing process. Perhaps it is my imagination, but I have been enjoying sparkling sake lately.
The raw material rice is 100% Yume-Sarara.

Alcohol content is a low 12%.
Sake level is -76 (extremely sweet)

It is sealed with a cork stopper like a wine.
The bottle is effervescent, and I impatiently opened the cork. When I pulled up the cork, the cork stopper was pushed up with a popping sound, but I managed to open the bottle safely.
When the bottle was opened, the aroma was sweet like white peaches.
The sake has a pale yellow color and a thick, thick texture with fine bubbles bubbling up as it is poured into the sake cup with a shuffling sound.
As you take a sip, an elegant sweetness spreads in the mouth, followed by a refreshing acidity that quickly drifts in and disappears. After the acidity, a full-bodied sweetness typical of kijo-zake lingers on the tongue.
