This is my first Dewazakura, Sakurabana Ginjo-shu, raw sake. Perhaps the first honjozo type ginjo-shu. Founded in 1892, this sake is made by the Dewazakura Sake Brewery in Tendo, Yamagata Prefecture. Sakurabana Ginjo-shu is considered a pioneer of ginjo-shu. The aroma is subdued, with green apple, herbal, and a hint of melon or melon-like watery aroma. The taste was sweet first, followed by a refreshing acidity of the honjozo type, with a moderate umami and bitterness. It was very easy to drink on its own, and was delicious with any food. I would like to drink it again.
