I went on a one-day trip to Yamagata the other day😄and bought a bottle. Yamagata has a lot of good sake, but this was my first time to taste it! The aroma is gentle apple 🍎 The sweetness is moderate, but as you drink it, the umami is also very strong! The sharpness is good, and it is a beautiful sake. It is not too light, but has a good balance of umami and flavor. Delicious!

Today it's my favorite Tetorigawa, crisp and dry! Now the aroma is melon-like, apple-like! It has a subtle hint of melon and apple 😊Then it is slightly carbonated with almost no sweetness. Then comes a moderate sourness and bitterness, and it finishes crisp and clean. It has a moderate aftertaste and is a delicious sake 🍶I want to drink it this time of year! I think this sake goes well with just about anything, but it also goes well with gutty food. I haven't had a dry sake like this in a long time! It's good, but it may be to your liking...

Today is my favorite Kariho 😊 first Rokusyu! Summer Mist Japanese is morning mist! The aroma is banana-like with a hint of lactic acidity. The taste is a little sweet and bitter and easy to drink. The aftertaste is not as smooth as Asagiri, but it finishes nicely! Delicious. The level of Kariho is still high!

Next is the Hikoboshi label (blue one) brewed by Suminoe-san as a leader! The aroma is muscat-like, similar to Katsuyama-san! When you drink it, it has a sweetness, but you don't feel it that much. The flavor afterwards is moderately sweet with a nice acidity and bitterness 😄 Unlike Katsuyama's sake, this one has a more modern aroma, but the taste is dry and you can feel more of a sake sensation. The taste is different from Katsuyama's. I would like to enjoy this one a little more after a few days. I would like to enjoy the change of taste a little after a few days (lol). I could taste the high level of Miyagi again!

Yesterday was Tanabata 🎋 and Tanabata means DATE SEVEN (lol), an annual treat for the residents of Miyagi Prefecture😄This year, Katsuyama and Suminoe were the main brewers and seven breweries in Miyagi worked together to brew this sake! The aroma is sweet and muscat-like. The aroma is sweet and fruity. The sweetness is followed by a strong umami and acidity, and the finish is heavy, as is typical of Yamadanishiki! It is a very beautiful sake with a sense of transparency. This is a modern sake. Delicious 😋.

Today we have a light nigori of our favorite Tetorigawa! Ishikawa-mon sake rice is a very delicate rice that is very hard to make. The aroma is peach and apple, with a touch of lactic acidity. When you drink it, the sweetness is just right, and the slight carbonation is nice. The umami spreads from there, and the acidity is just right. The aftertaste is also very gentle. Low alcohol gives the impression of being dry and refreshing, but this is different. It has a gentle taste with a touch of umami. A sake to be drunk slowly.

Speaking of summer 😄I drink Summer Doburokku every year😊The aroma is apple, citrus, and rice! When you drink it, the sweetness is just right and the slight carbonation gives it a dry feeling! The sourness comes from there and the aftertaste is refreshing. This dryness goes well with all kinds of food! I want to drink it again next year!

The aroma is of green apple and muscat. The taste is sweet with moderate acidity and light umami. The aftertaste is moderate and delicious. It is best as a food wine. The acidity and umami will spread further with time, making it delicious! Great as a summer sake!

Sake Drinking at Rasai (⑫) Next up was my favorite old sake from Tedorigawa (^o^) I had just studied about mature sake at the recent sake taster brush-up training! I had just learned about mature sake at the sake taster's brush-up training the other day! It is also my favorite Tetorigawa! The aroma is rich, like nuts and dried fruits. From there, the sweetness is firm and the umami flavor permeates the mouth. It also has a long aftertaste. I don't remember if it has a typical Tedorigawa flavor. I heard that sweets go well with this kind of sake, and I thought it would go well with yokan (a type of sweet bean jelly).

Sake at the Rashaide (9) Yamada-Nishiki 😄The label was cool, but at first I couldn't figure out which sake it was. I didn't know at first. We had our first Bon! The aroma is like ripe apples. Sake Drinking at Rashai (7) Next up was Jikin! The sake rice is Hakutsuru Nishiki! It is Hakutsuru Shuzo's original sake rice and is a crossbreed of Yamadanishiki's parents. The Hakutsuru brewery developed this rice and uses it in their Jikin sake. I am deeply moved by this. I wonder if we can make better sake if we all incorporate the best parts in this way! On the palate, the umami from the apple-like fruity flavor comes rushing in. It also has a slight acidity and a moderate aftertaste. It certainly tastes like Yamada-Nishiki. It's really delicious!

Sake Drinking at Rashaide (6) Next is Koei Kiku, also from Saga! I hadn't drank it recently because it is a bit expensive... This one has a fruity taste like apples. When you drink it, it is sweet and slightly carbonated. It has a sweet and slightly carbonated taste, followed by sourness and a bit of bitterness, and a sharp aftertaste. It's been a while since I had it, but I can see why it's so popular. Very tasty! I'll buy Sunburst again.

Sake Drinking at Rashai (3) The next sake was Otters! We usually don't drink at such izakaya, but we were asked to compare this sake with the sake exported to the U.S., so we had some. To be honest, I could not tell the difference in taste, but I got the impression that the exported sake had a slightly lighter aftertaste. Both are stable and tasty, as is typical of Otters!
