Second bottle of barbecue! AIR in Akabu😄This sake is also "for casual occasions! So it fits perfectly (^o^) The aroma is like a rum and apple aroma. On the first day of Golden Week, I had a barbecue with my family and relatives! This is the sake to go with it! This is the United Arrows version of Yoshida Kura U's Night & Dance! The design is cool too 😄. This sake is "free for any occasion you like", so I took this opportunity! The aroma is fruity like pear and apple with some citrus freshness. When you drink it, it is sweet and slightly carbonated! The taste is sweet and slightly carbonated, with a sourness and bitterness that finishes off nicely. The low alcohol content makes it easy to drink. It is easy to drink and suitable for any occasion. It goes well with shellfish and meat on the barbecue! This sake is typical of Yoshida Kurau. We enjoyed it very much.

Yesterday was a nice day for a walk! There is a cherry blossom alley near my parents' house, and the double-flowered cherry trees are so beautiful🌸. Well, on such a nice day, I bought this! Nemuchi-san bought it because she was curious about it! Fuji Masamune brewed by Onuma Shuzo, famous for Kenkunichi! The concept of Kenkonichi is to make a sake that doesn't interfere with food, while Fujimasamune has a slightly higher glucose content, making it more of a sake that can be enjoyed on its own. And what can I say, I wanted to drink "Sake Mirai" sake this time (lol)! The aroma is mild, with hints of raichi and apple. When drunk cold, it has a beautiful sweetness and umami. The aftertaste is firm and delicious. When it is left a little longer, it has more umami, better sweetness, and a touch of bitterness. It is more delicious 😄I guess this Sake Mirai is characterized by its sweetness and umami. And the sweetness is just beautiful. The sweetness is like a Japanese sweet (lol)!

This is a sake I drank recently! I love Tetorigawa😄I couldn't drink the spring sake the other day, but I saw this one and bought it immediately! The aroma is of apples and peaches, and although it says it is dry, it is fruity. The aroma is apple and muscat! And a hint of citrus. It also has a rice flavor. When you drink it, the sweetness, acidity, and slight carbonation make it easy to drink. The sweetness is not so strong due to the acidity and slight carbonation, and the acidity is a nice accent that reminds one of spring. Today I saw on social networking sites that it is delicious, so here it is! It is the first sake made with white malted rice in Zao! The first sake made with white malted rice in Zao😄Zao has been taking on a lot of challenges lately. Really good thing! As a local, I am proud of this brewery😄. The aroma is very nice with muscat and citrus fruits, whereas the aroma of isoamyl acetate has been strong with banana. When you drink it, it goes from moderately sweet to sour and umami with good sharpness. The acidity is not as strong as it might be due to the white malted rice, and the balance of flavors is excellent! The low alcohol content makes it easy to drink. It's really delicious 😄. According to the master brewer, he made this sake with white malted rice, not to increase the acidity, but because he thought that white malted rice would suit the flavor of this sake. A wonderful sense of style! A sake brewery in Shiroishi City brews with white malted rice. Something that will be talked about a lot (laughs).

Here it is today! Shinshu Kamerei Hitogokochi! This is the "Tozawa Revitalization Project by Growing Sake Rice", a crowdfunding project that I participated in last year! In fact, Shinshu Kamerei is doing a lot of things while really thinking about not only the sake but also the local community 😄 Of course, the sake is delicious, but this is also attractive! The aroma is apple and muscat! There's a beautifully polished feel to it, like a top-grade powder. The sweetness is a bit strong at first, and the bitterness is a bit strong. The aftertaste is also moderately delicious but a little rough. After a few days, you can taste the roundness and umami, and the flavor is even better. Sake that can be drunk in a relaxed manner is still delicious!

The second bottle of Yoshida Kurau I got at UTAGE! This time it was Yamahai Kijoshu! This sake is brewed with Ishikawa's newest sake rice "Hyakumangoku no Shiro" and Ishikawa's oldest native rice "Kinshi"! This is the Yamahai Kijoshu! The Yoshida brewery is amazing at making Yamahai kijoshu! The aroma is juicy, citrusy, and peachy. The aroma has a sweetness that is typical of kijo-zake. The sweetness, however, is beautifully followed by a juicy umami flavor! The acidity comes from there and the aftertaste is refreshing. The low alcohol content (11%) makes it easy to drink 😄It is still a very beautiful sake despite being a Yamahai sake. The sweetness is beautiful even though it is a kijo sake. I love Yoshidagura after all!

Today in Miyagi, the cherry blossoms are declared to be in full bloom! The toji brewed this sake with the hope that people would drink it during the cherry blossom viewing season. I've enjoyed this sake ever since I first had it at Tsukiyoshino! I couldn't buy it due to a problem with the number of bottles left in the fridge... but this time I finally got my hands on it 😊. The aroma is peach, apple, and a unique brown sugar-like aroma. I was not able to buy it due to the leftover quantity in the fridge. It smells like flowers or honey 😄It is fruity, but not like the fruity aroma of other alcoholic beverages. When you drink it, the sweet flavor comes through, and then the bitterness is present at first, but it fades away after a while. The acidity is also moderate! The aftertaste is delicious with just the right amount of residual flavor 😄It becomes more beautiful with time 😄This sake is typical of Nagano. The sweetness here is unique and tastes like brown sugar or honey. It's not "sweet" but it's a sweetness with umami... It's definitely delicious but it's hard to describe 😅I hope you all try it!

After the tour and study session, we had a get-together at a beef tongue restaurant with the brewery owner! We were served a bottle of Junmai-shu (Junmai sake) by Takarafune Nani no Oto! According to the master brewer, this sake was made for the master brewer's evening drink 😄It is true that the aroma is different from other sake, and the apple flavor is very calm. The aroma is certainly different from the other ones, with a more subdued apple aroma and a moderate sweetness and tartness. It has a nice sweetness and acidity with a refreshing aftertaste and not too much bitterness. It is a sake that you will not get tired of drinking and you will want to drink it every day. It goes well with beef tongue without interfering with the meal. I have never had an image of sake with beef tongue, but this one is nice! I never had a chance to drink with the brewer, and this was right next to him! It was very valuable, but I was so drunk that I became sleepy at the end and couldn't remember anything... I regret that I was so sorry. But I do remember that I was able to have a valuable conversation with him (laugh).

Yesterday, we went to Sasaki Sake Brewery in Natori City for a brewery tour and study session 😄 organized by an izakaya in Sendai. It is really rare to have a chance to listen to a master brewer talk about his brewery! Sasaki Sake Brewery was damaged by the earthquake and resumed brewing the following year from a warehouse-like space! Then, in 2017, the current building was constructed! Almost the same location as before the earthquake😄. The story of what happened before and after the earthquake was truly heartwarming. Sasaki Sake Brewery uses local rice and water to make sake under the theme of "sake brewing that is closely connected to the local community. Now to the main topic! We tasted a variety of sake. And here is the main sake. This sake was made before the earthquake in March. It is a really precious sake. It looks like gold and smells like blue cheese. When you drink it, you will taste sweetness and a unique sourness. The umami comes from there. The sharpness is surprisingly good and the aftertaste is refreshing. Perhaps it is because it is a junmai sake, or perhaps it has been well preserved. I drank it while thinking about the earthquake disaster! I am glad I went because I really learned a lot!

Today is my parents' wedding anniversary! This is for that celebration! We just received 3 bottles of sake from Tedorigawa that we purchased at UTAGE yesterday (^o^) and this is the most celebratory of them all 😄! This is a Yamahai Kijoshu made from rice and sake rescued from the disaster-stricken Taniizumi and brewed with more Yamahai Kijoshu from the Tedorigawa! The sake is made from the rice and sake rescued from the disaster-stricken Taniizumi! What will it taste like? I opened the bottle, but this time it was corked from a beer bottle, so when I opened it normally, it exploded. The aroma is of apples, pears, muscats, citrus fruits, and rice. Anyway, it smells sweet! When I drank it, I got the expected sweetness and then a fizzy, bubbly sensation. There is also a delicious flavor, and a dry crispness from the acidity. The sweetness at the beginning and the dryness at the end make it very easy to drink. It tastes like a white wine, but the umami and other flavors are similar to sake! I am glad my parents enjoyed it!

今回は飲んでみたかったお酒!雪の茅舎の杜氏が満を持して造る「美酒の設計」を頂く! 香りはマスカットやリンゴや桃など本当にフルーティーで綺麗な香り。お花もスイカズラのような香りもする。飲むととても繊細な甘みからクセもなく旨味もきて後味も程よい!酸味や苦味は感じないが、時間とともに少しでてくる感じではあるが本当に綺麗なお酒!雑味を感じない😊「良い日本酒飲んでるな」って感じで日本酒の良さがこれに詰まってる感じ。ここの杜氏さんは「櫂入れ、加水、濾過をしない」ことで有名らしい。それでこんなに美味しい日本酒を造れるとは本当にレベルの高い!大変美味しくいただきました。 ちなみにあてはアンコウのともあえと!海の方の道の駅でゲット😊よく合う(笑)

A souvenir from my brother's business trip to Nihonmatsu! Daishichi Snow Shibori😄I've had many opportunities to drink Daishichi recently! And it's new sake! This time it was a honjozo (pure sake)! He wanted me to drink it at a temperature range of 8 to 11 degrees Celsius. I would like to warm up the sake, but... The aroma is banana-like, with a hint of blue cheese and rice. However, the aroma is not too heavy for a sake made from a traditional sake yeast yeast yeast yeast yeast. When you drink it, the sweetness comes a little stronger, and then sourness, bitterness, and umami rush in. This one is a mixed yeast of No. 1 and No. 2. I thought they didn't have No. 1 or No. 2 yeast anymore... In any case, I was looking forward to this rare yeast! The aroma is of white grapes like wine, with a hint of sour citrus. There is not much rice aroma. When you drink it, you will taste the sweetness and then the sourness! The space is very small, but there is a wide selection of sake, perfect for an after-party. And here is the first one! Yamae Nishiki from Shinshu Kamerei! I never expected to find Kamerei here. The aroma is apple and muscat. When you drink it, the sweetness spreads as usual for Kamerei, and then the chirichiri-ness starts. The umami and acidity come out moderately and it has a nice sharpness. It is a very beautiful sake! Delicious 😄.
