In Tamba City, Hyogo Prefecture, where I was on a business trip, I went to Liquorland Hikamiya in search of Okutamba. I found it. I was curious about this sake! It is brewed in a wooden cask and aged for 2.5 years in the tunnels of Sanpo Dam, where the temperature is constant throughout the year, and the sake rice used is Hyogo Sake 85, a next generation sake rice produced in Hyogo Prefecture ✨! Pouring it into a glass, I thought, "What's that? It was thicker than the other two. I had the sensation that it was thickening. The color is also yellowish, what a delicious color 🤤. The aroma is not fruity, but has a sense of maturity. And yet the aroma is moist and calm. Is it because of the aging process? The acidity characteristic of the sake's traditional sake yeast yeast is also mild. The overall flavor is unexpectedly refreshing! Slightly dry and crisp, it seems to go well with fish dishes.

The third sake I bought on my trip to Aomori 🍶. This is not Aomori sake, but I found Miyakanbai, which is not available in our neighborhood, so I bought it! The aroma is so fruity that I want to feel it all the time! It smells so good! When you put it in your mouth, you can taste the rice in the mild fruity flavor! The synergy of moderate acidity and bitterness gives it a deep flavor. The finish is not a quick one, but the lingering aftertaste that lingers for a little while is very characteristic. The sweet aroma lingering on the nose and the moist fruit and rice feeling lingering on the tongue. I wonder if this is the skill of hiyaoroshi. This is a wonderful sake. I am very proud of you, Miyakanbai! Hats off to you!

I bought this Rokune-san at Aomori airport on my way back from a trip to Aomori: ✈️ Made with 100% Akita Sake Komachi ✨As a Kansai person, that's all the fresher for me✨. The clear and mild aroma is intoxicating. It's sweet and sour, a little different from fruity. The taste is transparent, yet sweet and rich, with a nice acidity. As the name suggests, the ruby color fits the image perfectly. For all that, the aftertaste is surprisingly refreshing and pleasant. ☺️ Aomori has a great selection of sake!

Traveled to Aomori Prefecture ✈️ Unfortunately, the weather was unfavorable, but we had a good time! We started our shopping at Jizakean Sato in Aomori city. I was disappointed that they didn't have Tasake, but I got Toyobai! I've been longing to visit this brewery! Aromas of sweet and sour citrus and lychee. It has a very fruity aroma. When I put it in my mouth, wow! There is no gassy feeling, but the aroma and sweet-sourness that spreads quickly in the mouth will become addictive. The texture on the tongue is smooth and clean. The finish is also excellent. The end result is an aroma that lingers slightly on the nose. The taste and aroma make it hard to believe that it is made only from rice and koji! Toyobai, I should have bought another bottle 😢.

Suddenly I realized that I haven't had any local sake lately, so I got my favorite Senzuke's Akigari. It's a dry, single-batch, single-hot sake, brewed with Hyogo Yamadanishiki for the koji rice and Hyogo Nishiki for the kake rice✨. Oh, the slightly fruity aroma! A little tangy and gassy! It is crisp, clean, and dry! Aromatic flavor, but not harsh, with a nice sharpness. It is a sake that will make you feel refreshed ✨.

This is the second bottle of Eiheiji Hakuryu, which I fell in love with for its commitment to sake, its approach, and its taste! Sweet and fruity aroma. It has a sweet and fruity aroma, which gives a lovely impression right from the start. There is no indication of the rice variety, but in the mouth it is clear and transparent with a sweet fruitiness! There is almost no bitterness or other unpleasant tastes, and the moderate acidity is a perfect accent. It goes down the throat and is very refreshing. The alcohol content of 15.5 is also exquisite. The Eiheiji Hakuryu Fair in Fukui Prefecture was held at Asano Sake Shop. To be honest, I had never heard of this brand, so I googled it. Recently, I have seen some breweries making sake with their own rice, but Eiheiji Hakuryu has been doing it for 30 years! They put a lot of effort into it, starting from the soil preparation of the rice paddies. They have been working on this project for 30 years! They have been putting a lot of effort into it, starting from the soil cultivation in the rice paddies. This time, we obtained a bottle of "Rice Tekiteki! What a commitment.... This story alone must be delicious. And then, the bottle was opened. Fruity and gorgeous aroma. It is like muscat or lychee. But the aroma is not too strong, and it is pleasant and heartwarming. Now, let's enjoy it! The fruity taste comes with a faint gassy sensation. The introduction is similar to Omine-san's 3-grain Yamadanishiki, but without the bitterness and stimulation that we felt in Omine-san's case, and it is really clear. The umami of the rice and moderate acidity. What a delicious sake 😭 I'll have to try the mizuitekiteki and dohitekiteki next time I find them.

Stopped by Sake Sendo Fujimori after a long time. I finally got my first bottle of Omine-san, which I had been wanting to drink for a long time! It is said to be Omine-san's standard sake. It was my first time visiting Ehime sake at a liquor store. Ishizuchi is one of the most popular sake breweries in Ehime. This sake is brewed with Matsuyama Mitsui produced in Ehime Prefecture. It has a mild aroma, slightly fruity. I had an image of a rich, mellow sake, but the taste is unexpectedly refreshing, and I can sense the umami of the rice. There is no gassiness, and there is no cloying taste. It has a nice sharpness, and it disappears quickly after swallowing. It made me want to explore more of Ehime ✨.

Hanaboe's Yamahai Autumn Agari✨ I finally found it! The aroma is pleasant with a hint of acidity typical of Hanaboe. In the mouth, you can tell it's Hanaboe even with your eyes closed. It is delicious! It is my favorite! Hanaboe is known for its delicious acidity, but this Aki-agari has a different expression with its mellow, angular acidity! The first wave of acidity is typical of Hanaboe-san, and in the second wave, the mellow acidity shows its face. Hanaboe's acid technique is amazing. This change occurs when the sake is stored in the fire-extinguished fresh cellar for the entire summer. Sake is truly mysterious and interesting! A wonderful gem, along with a great costa✨.

While rummaging around the sake shop, I found Soyojo's Namahyorashi Hiyayogoshi ✨. I bought it because I like Soyojo's Namahashiro sake. I chilled it in the fridge and opened the bottle! The aroma is not so much fruity as it is mildly acidic. It is my favorite aroma. Compared to Souhyo's previous sake, Nama Hashimoto Junmai Nama Hashimoto 70, it has a lighter and cleaner taste, probably due to the difference in polish and the alcohol content. However, the lingering taste is pleasant ✨. There is no bitterness, and the delicious aftertaste is wonderful. After a while, when the temperature rises a little! A full-bodied flavor emerges. This is my favorite sake yeast flavor 😊. It is a nice sake that you can enjoy the changes.

After tasting the sake, I bought Sogen's hiyaoroshi Ishikawa-mon (hiya-oshi sake)! After comparing it with Sogen's Miyamanishiki, I decided to go with Ishikawa-mon because it was more robust. Ishikawa-mon is Ishikawa Prefecture's original rice for sake brewing! It is said to have a large heart white. Thinking back, this is the first sake from Ishikawa Prefecture. The aroma is not fruity, but it is very typical of Japanese sake. The taste is mellow, with pleasant acidity and bitterness. And the flavor of rice is impressive! The alcohol content is also a punchy 18 degrees ❗️ It may not be to everyone's taste, but it's a great sake ✨. I could feel the strength of the recovery from the earthquake ✨.

The second sake I bought at Morishita Sake Shop Okage Yokocho during my visit to Ise Jingu Shrine was Mimuro Sugi ✨! I was really looking forward to it! Mild fruity aroma! Slightly tingling in the mouth after opening the bottle. And gentle acidity Luxurious flavor with sweetness, sourness, and richness. Is this richness a wooden vat feeling? Well, this balance is the best. Low al 13 degrees, it is gentle to the body, and it feels like it soaks in. This sensation is the result of a good lingering taste. So this is Mimuro Sugi Sama ✨. Ha, drinking it heals my heart.

This is one of the two bottles I bought at Morishita Sake Shop Okage Yokocho when I stopped by the other day to pay a visit to Ise Jingu Shrine. I like the appearance of the bottle ✨. The gentle ginjo aroma is relaxing just from the scent alone! In the mouth, it is indeed delicate and clear. It is just as it says on the label! What can I say, it has a sense of profundity. The quality of the sake is similar to my current drink, Jinzo Nanayo, but my personal impression is that this one is much more gentle ✨. I'm looking forward to drinking it tonight 😊.

Finally, I was able to drink it, Kamizo! This Nanayo seems to be distributed only at restaurants, but I was lucky enough to buy it✨. When the bottle is opened, there is a pleasant light popping sound. The aroma is mildly fruity, like lychee or lime. It smells so good. When you put it in your mouth, wow! A slight gasiness and a slight tingle on the tip of the tongue. It is very pleasant! The sweetness is refreshing. It has a very clear taste and is easy to drink! After drinking, there is no unpleasant taste, and the lingering good aroma is pleasant. It may be the best sake I've ever had with no lingering tastelessness. The taste is elegant and dignified, reminiscent of the streets of the ancient capital of Kyoto ✨. Drink it carefully and savor it 😁.

Nice to meet you, Mr. Okura. I bought it because of the pop-up label that said "apricot" on it! I really like the label design! The color of the liquid is a little yellowish. The aroma is sweet and sour with a hint of lactic acidity. The taste is like apricot. Like the aroma, the sweet and sourness of the lactic acidity and the apricot flavor go well together, making it very easy to drink! It goes down your throat smoothly and has a nice sharpness, with a slight bitterness that is perfect for this hot season! It's really good!

We recently opened a bottle of Takashima Yumachi, which we purchased along with the W Yamadanishiki we received! First of all, the label design is camouflaged and cool! The aroma is gentle but gorgeous and fruity. It is enchanting. While the flavor and mild acidity of the Omachi grapes are still present, it is the fruity muscat-like flavor of the W that comes to the fore. The aftertaste is also refreshing. However, the lingering aroma in the nose is soothing. The balance is wonderful! W is a great sake for both the uninitiated and the expert ✨.

When I purchased Sasu Masamune, I bought it because my favorite store was having a W fair! I'm drawn to this visual ✨. There were several varieties lined up, but I started with the royal road Yamadanishiki! The specs are Junmai Daiginjo, but the fact that they don't call themselves that is very cool ✨. First of all, the aroma is wonderful. What a gorgeous aroma! It draws you in! When you put it in your mouth, it is fruity and mellow, and the aroma spreads, and the freshness is not half bad! Oh, is this fire-roasted? It is so delicious! After drinking, you will be soothed by the lingering aftertaste that lingers faintly rather than being sharp. This is also good! A gem beyond my imagination. If I find it next time, I will repeat for sure. ☺️

I stumbled across this sake at the store✨. The Obata Sake Brewery, which brews Manotsuru, used to use the brand name "Sashu Masamune" until shortly after the war. And the only specs revealed were alcohol content and 100% Sado rice. I bought it because I was attracted by the story and the concept of telling a story through taste, not specs! Gentle muscat-like aroma A clean sweetness with no cloying taste. The mouthfeel is wonderful, and the flavor is worthy of the Green Label name. It has a nice sharpness and a bitterness that appears later. It is refreshing and pleasant to drink!

It's been a long time since I've seen Kido! Maybe it's been half a year or so. The ginjo aroma is clean and fruity. What a good sake! It is soft and refreshing on the palate! The sweetness is moderate and not unpleasant, with a nice sharpness and a slight bitterness that lingers at the end and disappears quickly! It is a taste that is worthy of the name "summer gale"! Hats off to you, Kido!
