Kouzutsuru, a local sake from Tajima, bought on the way back from a business trip. Hyogo Kitanishiki" sake rice from the Tajima area is said to have a heart white as large as Yamadanishiki. The aroma of lactobacillus fermentation of Yamahai is mild. I tried it at room temperature and cold, and I personally prefer it cold!

It is a pure sake, 70% polished rice, pure rice, raw sake, made with a "nama-hashiroshi" (a traditional sake brewing technique). The specs were completely to my liking, so I had it for the first time, Souhyo. The aroma and taste were different from what I had imagined. From the outside, it looked like a classic, but this preconceived notion was completely overturned. The aroma was mildly fruity. The image changed completely. On the palate, the acidity of the sake yeast and the umami of the rice! This is what makes it so special✨. The potential of Yamadanishiki from the special A district of Yoshikawa, Hyogo Prefecture! It is wonderful! The balance of sweetness, acidity, and umami created by 70% polished rice. This is the brewing technique of the brewery. I was impressed ✨.

I bought a bottle of Koshi, which I had been curious about but had never had a chance to drink! It was a hot day and I was also attracted to the name "Summer Nama" ✨. The aroma is very fruity and ginjo ✨. Muscat-like aroma and taste spreading in the mouth along with a bouncy gassy sensation. Refreshing and suitable for a summer sake! The lingering taste is also refreshing and cool, accented by a slight bitterness ✨. From the aroma before drinking to the lingering aftertaste, it is consistently clear and transparent ✨. If I were to use an analogy, it's like the pleasant sound and aftertaste of wind chimes✨. I must try not to drink too much.

A souvenir from his wife's trip to Kusatsu Onsen with his mother-in-law! (I heard that her mother-in-law paid for it... I'm so sorry. ❗️) I was so excited because it's a sake that we don't get to see very often here ✨. The ginjo aroma you can smell the moment you open the bottle. The aroma is mild like muscat in the mouth and a little tangy and gassy. The sharpness of the sake is like being sucked into your body as you swallow. Since I have been drinking mostly acidic sake recently, I was able to enjoy this sake with a fresh feeling. As expected from Gunma's famous sake✨.

We bought it at Asano Sake Shop. The brewer came to talk to us and we chose mizu-hashiroshi! The brewery's approach of "making sake that opens up the acidity" really hit home with me, as I'm a sucker for acidity✨. When I opened the bottle, the aroma alone was enough to kill me! When I drank it, I found that it has an elegant acidity just like yogurt, but it's not sour, but it's so good with flavor and depth! I would drink it forever. This is the aesthetics of sourness ✨. The other day, I was missing the acidity of the sake made from the sake called "Edogari Retro" by Senkou, and when I went to buy their Edogari Modern, they were out of it. I went looking for a sake with a traditional sake yeast yeast yeast, and came across Dai-Shichi's "Namahashiroshi". When I tasted it, I found its acidity and umami irresistible! I bought it without hesitation. When I opened the bottle, it was not nearly as fruity, but had a good balance of umami, acidity, and richness✨. And as the temperature rose, the acidity became more and more clearly defined, making it more and more to my liking! I look forward to seeing how it changes over time! The brewery's website clearly shows their passion for sake brewing and their commitment to the raw yeast production, and I felt that even the story was top-notch ✨. Last week, I bought it at a local aeon because I was curious about the fact that it looks amazing even though it is a packaged sake. I was told that the unique yeast produces a lot of ethyl caproate and isoamyl acetate, and that it is so fruity that it is hard to believe it is a regular sake. The first day I drank it, I drank it after Kaze no Mori Roufu 807, but the taste of Kaze no Mori overpowered it, and although it had a slight aroma, it had no flavor at all, so I decided to stop drinking it 😂. Yesterday, I drank it first to make up for it! It still has a nice aroma. It's milder than I expected. And light. It is too light and has no rice flavor or acidity.

We are back to our favorite, Kaze no Mori. I opened a colander of Dew leaves wind 807. The gasiness that is typical of Kaze no Mori is irresistible. The fruity taste, which is hard to believe with 80% polished rice, and the complex taste of rice mixed with umami, acidity, and bitterness, are wonderful and very three-dimensional. The alcohol content of 16% enhances this sake's character. The fruity flavor is a result of the colander harvesting process. It is too good.

Come to think of it, I had never had a 100% Omachi sake, so I made my debut with Nabeshima-san! My personal impression is that it has a mildly fruity aroma both on the nose and in the mouth. I personally feel the mild fruity aroma and mouthfeel, along with the tight, gaseous texture. This may be a characteristic of Omachi! I was impressed once again by the depth of this sake, which has a different expression from the modernity of the Yamada-Nishiki I had previously tasted!

This time, we are aiming for Senkou. I got "Retro" out of the Edo-style trilogy. The label also overflows with a retro feel. The first thing you will notice when you drink it is the unique sourness of the sake's raw yeast yeast ✨. I can't describe it well, but it's not just sweet and sour, but also umami sourness, which is different from modern or classic sakes. It seems to be addictive. The rice polishing ratio is not disclosed, so I asked the liquor store and they said it was around 90%, but the clarity is so clear that you can't feel the low polishing at all. It's amazing, SENKYO!

My first AKABU✨. I opened the bottle with great anticipation. When I carefully opened it, it opened quietly with almost no gas. The characteristic aroma was a fruity top note, reminiscent of muscat and white peaches! Aromas reminiscent of muscat and white peaches overflowed from the bottle and rose with each swirl in the glass. Even before you drink it, you can sense the depth of this sake. The aroma and pleasant acidity spread quickly in the mouth. And yet, it has a nice sharpness. I couldn't help but look up to the heavens. This is the standard line, and I felt the unfathomable potential of AKABU✨.

I bought Tsururei Junmai-shu Yamadanishiki for a change of pace from the Kaze no Mori that I have been enjoying for a while. It is not a light sake, but rather a robust sake with a good taste of rice! Still, it's not a robust classic, but a gentle and easy-drinking sake on the palate✨. It is delicious! The only ingredients are rice, water, and koji. But even so, no two sakes taste the same, and that's what makes sake so interesting.

Sawaya Matsumoto by Matsumoto Shuzo, a famous brewery in Fushimi, Kyoto. First of all, I'm attracted by the label design✨. And it's Yamadanishiki from Tojo district! I can't help but buy it. The acidity and bitterness are not too strong and disappear as soon as you swallow. It is an elegant yet deeply flavored sake! Too good!

This sake can be found everywhere in supermarkets and convenience stores. I bought it because the price was less than 1,000 yen without tax even though it is Daigin. The fruity and smoothness when drinking it is as expected from Hakutsuru! I didn't feel much of a lingering aftertaste after swallowing, but the cosmetics are excellent. I felt the technical skill of a major brewery!

The first Ganki✨ I was looking forward to. The first bottle of Junmai Unfiltered Nama Sake by Yaoshin Shuzo, who is trying to revive the Ganki brand, was Junmai Unfiltered Nama Sake. I will have that junmai unfiltered nama sake. The slight gasiness and aroma in the mouth is irresistible. Personally, I was impressed by the return aroma ✨. I felt that the aroma had a different expression than when it was in the mouth. This lingering flavor is wonderful.

This is the familiar Maru that I procured with Hakkaisan! I've been a fan of this sake for a long time and sometimes I want to drink it irresistibly🤤. The fluffy flavor and sweetness are addictive. As expected of Hakutsuru, they are very particular about the yeast and koji preparation. This sake is sold everywhere, but it is a great sake that has won a silver medal in 2023 and a bronze medal in 2024, two years in a row, at the IWC. It's a bottle you should always have on hand at home 🍶.
