Kanazawa Drinking Frenzy Trip - Fourth Drink 🍶. For a change of pace... the next one I tried was this one: 💁‍♂️ It is a very unique sake... how should I say it? It uses mizu-hashiroshi pure rice sake as part of the brewing water, and is brewed in the same way as so-called kijoshu, but it has a very unique taste. It has a rich sweetness and lactic acidity that is concentrated and a little too much for my taste. I think I should have gone for the regular Hanaboe... 💧. By the way, mizu-hashiroshi means Bodhi yeast yeast, and if you like this unique sourness, this might be the one and only sake for you in a sense. 💁‍♂️

Okay, let's get back on track. The first thing I ordered was a very rare sake from neighboring Toyama Prefecture, Katsikoma ✨. The aroma is very mild, with a hint of fruity melon, but I love it! In the mouth, it has a mild, clear, beautiful sweetness and a mellow mouthfeel. ☺️ There is almost no bitterness or astringency, and it finishes with a gentle acidity✨. The aroma on the nose is also fruity. It is a very beautiful and high quality sake, as it is produced in small quantities with great attention to detail 😋. The first drink of my recent drinking trip to Kanazawa City, Ishikawa Prefecture 🍶. The restaurant was the famous oden izakaya Sanko in Katamachi 🍢☺️ The place was packed from the time it opened (16:00) even though it was a weekday... Are you guys sure you want to be drinking at this time of the night? (You too) It's okay🙆‍♂️ everyone is happy to drink when they want to drink🎊 At first it's beer at first 🍻. I had it in two sips😆. And the first drink of the day ←? I thought it would be a good idea to start with a sake from Ishikawa 😋, so I chose "Sogen" 🍶. It has a mild yet fruity aroma, light mouthfeel, and a full-bodied umami flavor that is followed by a beautiful acidity that finishes off ✨. It's a little dry, but it also goes well with oden 🍢. It's so delicious 😆. I love it when I make love to you! We were there for about an hour, but the line was long enough to get out 💦.

Today we will have "Ryugin Kosho" (龍吟虎しょう) by Eiko Fuji 🍶. First of all, the label and the name have a huge impact ✨. It looks like the name of some kind of special move 😆 (I can't read it though). The meaning is that people who share the same thoughts and minds can communicate with each other like a tiger barks when a dragon cries 🐉. I've never heard of a four-character idiom like this before (I'm learning). The rice used in this brewery is "Ushu Homare" from Yamagata Prefecture, which is suitable for sake brewing along with "Ryu no Otoko" and "Sake Mirai", both of which are grown by Takagi Shuzo, the brewer of "Jyushiyo". The sweet fruity flavor from the aroma is already guaranteed to be delicious ✨. The pleasant sweetness and umami spread in the mouth, and the gentle acidity and sharpness are brilliant 😋. This is so delicious ✨✨. Gorgeous fruity and fine quality sake, perfectly sweet yet clear ☺️ I have no words other than delicious... I love Eiko Fuji, it's really great that they never miss out on anything 🥰.

Today we have "Gonza" from Kita Sake Brewery in Higashiomi City, Shiga Prefecture, whose representative brand is "Kirakucho. By the way, "Gonza" is the name of an enclave of rice paddies in the western part of Lake Biwa, just below the center of the lake. It is only accessible by boat, which is very labor intensive and costly 🌾. I checked Google Maps and sure enough, there is a "Gonza" ✨. Now let's taste it with all our hearts 🍶. What a heartwarming, simple and cute label 😊. According to the owner of the sake store, the illustration on the label was drawn by the wife of the brewer. The brewery's traditional four-stage glutinous rice brewing process, which you don't see very often, is said to have a very mellow and juicy flavor ✨. I have high expectations for this one: ☺️ The aroma is already full of sweet juicy flavor... green apple or ripe melon... at this point I knew it was going to be good ✨. The aroma is like a fresh apple, and there is also a lactic acid aroma ♬. I've seen comments about it being gassy, but I hardly felt it (is this the effect of a year around here?). But it's mellow, juicy and full of flavor and sweetness✨. The roundness is more pronounced after a few days than right after opening the bottle 🍶. Here is the last bottle for the "Tsushimaya" drinking comparison 🍶. I'll say it first... It's so delicious✨✨ And super sweet 😋😋. This brand was highly recommended by the owner of the sake shop (my uncle). This series, named after the toji's age, has continued for 19 years since the former toji started "28 years old spring" as the culmination of one year's work! However, he retired at the end of "Spring of Age 46" and the series came to an end. The current brewer, in response to strong requests from fans of the series to restart it, has relaunched it as "48-Sai no Sakura". Incidentally, this "~'sakura" is a draft sake for spring shipment, but there is also a fire-aged type called "~'sokoro" 🍶. This year, the aged "49 years old heart" should be available in stores from this month... I haven't gotten my hands on it yet, but if I find it, I'll make love to you and buy it. Yes, I know it's a long explanation (actually my uncle's explanation was really long too lol), but let's drink it 🍶. The aroma is rather subdued, but elegant and fruity like muscat ✨. The aroma is a little reserved, but the flavor is elegant and fruity like muscat 🍶. Highly aggressive with 48% Yamada-Nishiki rice polishing ratio. And the gentle acidity makes my mouth happy🥰.
