This is a daiginjo-shu from the Origin Series, which recreates the flavor of 150 years of Tedorigawa.
I haven't followed Tedorigawa much, so I don't have much of an image of it, but this one had a strong umami and elegant gorgeous flavor.
I guess that means it is a good sake.
I opened a bottle of Tetorigawa, which I had bought online as it has been a while since I have had sake. The aroma is subdued.
It is not gaseous in the mouth, and while it feels fruity, it is dry.

I do remember it being refreshing and easy to drink!
This was my first Tedorigawa and first Ishikawa sake. It has a moderate level of acidity and bitterness, and I felt it was a good match with fatty fish. The bitterness lingers in the aftertaste, but the aftertaste is short and clean. It is what one would call refreshingly dry. The bitterness seems to be influenced by the use of water with a slightly high mineral content. The malted rice is Yamada-Nishiki, the premium rice is Gohyakumangoku, and the rice polishing ratio is 60% even though it is a junmai sake. The concept is a daily junmai sake that bridges meals and conversation like a rainbow in the sky.
This is also the anniversary special menu Tetorigawa.
Hiyoroshi (shipped in October 2000) and Arabashiri (shipped in March 2001).
I would like to start with the hiyaoroshi, but thanks to the passage of almost 25 years, both hiyaoroshi and arabashiri have matured so much that my stupid tongue could not tell the difference 😂.
Anyway, I had it cold 🍶😅.
The first aroma is sweet with a hint of maturity.
It's a fully matured hiyaoroshi & arabashiri with a slight caramel flavor on the palate.
It's all over the place with a great flavor 😊.

It has been a long time since I have seen "Tedorigawa".
I found it at Koyama Shoten and bought it without a second thought.
Refreshing aroma and sweetness,
The smooth and gentle taste is perfect for a mealtime sake,
It is perfect as a food sake.
And at 1,300 yen, it is a very reasonable price.
I would like to drink it again.
The small river that runs beside the brewery is called "Hotarugawa," and countless fireflies fly over it at night due to its clean water. The fantastic sight and the arrival of summer are expressed with a refreshing gasp and freshness.
In order to maintain the freshness of the sake, it is unfiltered, single-bottle fire-fermented. The first sip is refreshing, but from the second sip you can taste the deliciousness of the rice, and the taste lingers on!
The deep aroma may be diluted if it is too cold, so a temperature range of 10-15° is recommended!
