☀️ I hear it's wine yeast brewed, so expect a different Glorious Fuji 😁. When I open the bottle, I smell a light cemedine smell. I think "mmmm 🤨", but then I feel an angular texture on the palate. It tastes like white wine with an astringent aftertaste and a crispness that flows easily 😎. I think it's a bit strong on the palate 🤔. I have a hunch that this is the cue for the "Special Reizen Shuffle🔀" technique I learned with the Liqueur Masamune 🤩. Close the lid and turn it over 3 times to wait for 3 minutes 😌. (See my post on "Liquefied Rice Shochu" for more info) Then the corners are removed and it becomes milder😊. The astringency is now less astringent, less angular, and easier to drink 🤗.

☀️ Here's another one to compare 🤗 This sake is from the year 2008 and seems to be a home-aged sake of the liquor store, with "Aged Sake" on the back label 👀. I wonder if it's a self seal 😆. ⚫︎ room temperature It has a solid amber color 🟡. It has a nice sharpness to it with a dark sweetness that is typical of aged sake, with a hint of sourness, making it easy to drink for a matured sake 😋. ⚫︎ warmed sake The sense of maturity has weakened. The sweetness has lessened and there is a slight hint of hackles. Went perfectly with grilled pork skewers 🐷.

☀️ Comparison of room temperature and warmed sake 🤗. ⚫︎ room temperature It has a faint sweet aroma. It is a thin sweetness level accompanied by a sense of hackles 😚. ⚫︎Hot sake Compared to room temperature, the fragrance is more spread out. The soft sweetness and the sense of hakka remain and the sake is soft to drink even when warmed 😚. The name "Dry Otoko Shu" made me imagine a harsh sake, but it was easy to drink as a warmed sake 🍶.

☀️ Fukushima's pride and joy, Aniki's Sukkiri Special Junmai Sake 🍶. It's well set up with just the right amount of umami and soft sweetness. It ended nicely and left me with nothing but admiration 😌.

☀️ It has a strong core of umami. The sweetness is added to it to give it a robust flavor 😋. The slight bitterness in the aftertaste, combined with a hint of Hakka, makes for a refreshing finish 😙.

☀️ In early October, my father was hospitalized for a checkup and spent three days in the hospital. After that, he was discharged from the hospital and was forced to stay sober for a while🈲. He was ready to start drinking the day after he got out of the hospital, but the doctor told him that he had to stay sober for two weeks ❗️. He was shocked, but he kept his word. When the period of sobriety finally ended, I told him he could drink whatever he wanted, and he chose this one 😆 The reason was "because it looks expensive" 🤣. The reason was "because it looks expensive" 🤣. He's so smart 🤣🤣. So we opened the bottle 🍶. Day 1 A faint sweet aroma. The clear sweetness is a special sweetness right after opening the seal. Soft apple taste combined with elegant acidity 🍎. Not much aroma of wooden vat 🤔... 2nd day. Sweeter and more pronounced sweetness and acidity 🤗. The flavor is getting deeper 🤗 Day 3 ...there was no such thing as leftovers 😑. I don't think I drank much myself, but I guess that's just my imagination 🙄. Well, it's good to know that you were happy with it 😆.

☀️ I bought this 👀 because of the word "assemblage." When you open the bottle, you can smell the sweet aroma wafting through the air. The first sip goes in like water 💧. The sourness from it ❗️ is strong and sour and suppy 😣. As you take the second and third sips, you get used to the sourness, or perhaps a thin, clear sweetness appears 🫣. Mmmm, this is a great change 😲. I was able to enjoy a great sourness 😣 and a beautiful sweetness ☺️ in one bottle 🤗. I looked up "assemblage" and it says it is a blend of liquors. It's interesting to see the different flavors that come out when blended 🤗.

☀️ Snow Goddess is "a sake brewing rice developed by Yamagata Prefecture exclusively for Daiginjyo". It has a lot of sweetness 😚. I think it is quite sweet for a Daisen 🤔. The rich ginjo aroma was clearly perceptible, and it was indeed a rice dedicated to daiginjo 🌾. 🙂‍↕️

☀️ This is a Jyushiyo that has been aged in the store's fridge for about a year. The label is dirty 🙄. In addition, it says "please consume as soon as possible" 😅 because it's freshly bottled. It takes courage to drink it 🤣. First you can smell the sweet aroma. Mild light sweetness drifted in and then slowly faded away 🤗.

☀️ 正宗ハンターは今日もゆく🍶 広島西条酒まつりの帰り道、酒蔵に訪問して購入しました🤗 酒蔵までの道は、古い街並みが保存されていて、レトロな雰囲気を楽しめます😊 そして、この蔵にはあるんです❗️ レトロな正宗が‼️ 酒蔵ショップ限定販売と聞きましたが、オンラインショップにもあるようです🤣 訪問したので酒蔵で購入しました。 開栓🍶 まるでジンジャエールのような琥珀色です🟡 梨のような柔らかく薄い甘味で、胡桃のような甘さ。 喉越しは厚めで、味わいに重量感があります🏋️ 定番のクラッシック・スタイル🤠ですが、アルコール感が無いので飲みやすいです🤗 醸造技術の高さが垣間見えた気がしました🧐 ナイス正宗👍

☀️ On my way back from the Hiroshima Saijo Sake Festival, I visited a sake brewery and bought this. The combination of the harsh appearance and the destructive power💥 of the 20% alcohol content was the deciding factor in my purchase 😆. Now to open the bottle 🍶. It has a round mouthfeel that you wouldn't expect from a 20° alcohol by volume 😙. Smooth sweetness and sourness makes it easy to swallow 😅. The next moment, I feel the alcohol hitting me from the back of my throat to my stomach area 😨. It was the type that comes late 🤣. I wonder what kind of brewing process is used to make this 🤔. It's a badass sake in terms of taste and brewing technique 😇

☀️ Panda is a cute label 🐼. Citrusy aroma like green apple🍏. Thin sweetness mixed with weak acidity, tastes like green apple🍏. When you think the flavor is on the tongue, there is a slight tangy gassy feeling 🫧. The finish is soft and lingers with a soft sweetness with a hint of citrus 😊. I found out after drinking it that it was alcohol added 😳I must change my mind about adding alcohol if I can make it without feeling any alcohol at all 🙄.

☀️ When you open the bottle, it has a mineral? The aroma is reminiscent of minerals 🙄. Thin sweetness, distinct acidity, and ultra-fine carbonation🫧 mix together in a collaboration of balance that is hard to describe ⚖️ The ginjo aroma on the nose has a hint of minerality. The aftertaste of unrefined sake is also typical of Haneya. I would like to drink more of this brand to learn more about its character 🤗.
