Off topic, but I recently bought a Lemacom freezer checker, and I guess it was a defective one, because my sake froze even though the setting was at its lowest 😭 (I didn't touch the quick-freeze button).
I came to Starbucks🍶 in Kawagoe to drink some Katsuma to ease my heartbreak, and to my surprise, there was only one bottle of Katsuma Junmai Ginjo!
I had no choice but to buy it!

It was exceptional!
It has a clear, clear flavor with no cloying taste and a smooth mouthfeel.
It's not too flashy, but elegant and well-balanced, a beautiful sake that I could drink every day and never get tired of it ✨.
When served cold, the taste of the rice is tight and balanced.

I was curious about the label because it was so oceanic, so I bought it!
I found out that the label was designed by Kyoto Women's University 🤔.
It is made with Association 77 yeast, which is a high malic acid producing yeast, and has a sweet aroma of apples and lychee-like flavor.
When you take a sip, the sweetness spreads in your mouth, not as much as the flavor, and then the sourness passes 😋.
It is truly "sweet and sour", but the freshness combined with the slight effervescence makes it a delicious sake that is not sake in the good sense of the word!
Even my wife, who is not a fan of sake, praised sake for the first time, saying "this is delicious" 🥳.
I would recommend this sake to those who are new to sake and to those who don't drink much.

I use a Burgundy glass for mellow sweet wine because I think it tastes best in a Burgundy glass.

The juicy sweetness and refreshing acidity spread to the fresh gas feeling, and the rich but clean sharpness makes the aftertaste light and easy to drink. ☺️
I paired it with sea bream carpaccio and it went perfectly with it, and when I realized it, two thirds of the Hoshikai was gone 😭.
