I think the balance with the sweetness is good, but I feel alcohol taste and the aftertaste remains, so I don't feel refreshed (>_<)

After party with my wife's friends after BBQ ✨🍺 with sashimi
I opened a bottle of wine and sake 😛.
I don't remember much about it after drinking a lot of beer and shochu at the BBQ, but I just remember it was delicious with a soft sweetness and sourness. I only remember that it was delicious with soft sweetness and sourness 🤩.

Let's start with the aroma.
It has a fresh sweet aroma like green apple and pear.
When you put it in your mouth, the fresh sweetness spreads all over your mouth just like the aroma.
There is also a slight sourness, and the sweetness doesn't linger, but it quickly evaporates 😀 😀.
When you put some fatty bonito tataki in your mouth and drink it with it, the sweetness fades away and it feels dry.

I went fishing for the first time in a while.
I was aiming for nodoguro (red crucian carp), so I bought a bottle of hikakami sake to go with it as if I were fishing ❕ and I was ready to go.
The result
One bite size salted fish and many big Mackerel!
I was supposed to drink it with seared nodoguro sashimi 😭⤵⤵⤵.
Well, it's a good thing I wasn't a monk.
I'm going to have a drink with a bite of salted fish!
When I opened the bottle and sipped it, I found it to be a crisp, light and dry sake, as is typical of Hidakami, and the nodoguro were small but the fat was great and delicious ❕😋.
The sake rice is my favorite Yamadanishiki, no doubt about it!
Since it is an autumn-aged sake, it has a mellow and mellow flavor, which is my favorite type of great food sake!
The label with an illustration of the process of brewing autumn-aged sake is also interesting!

I bought a local limited sale brand of Kangiku Meikozo at the brewery. 😀
No wonder there was no check-in.
Of course it was my first brand 🤭.
The bottle was opened with a pop!
When poured, the fine bubbles are fresh.
In the mouth, it has an elegant sweetness like that of a pine muscat, and the gasiness is refreshing ❕🥰.
It easily washes away the sticky fat of medium fatty sashimi and eel.

The sake we drank at the turn of the Bon vacation was Kubota Senju.
Kubota is a light and dry sake that is perfect for pairing with the sashimi we bought, and its sharpness makes it a perfect mid-meal drink.
It doesn't have the fruity taste of the modern sakes, but I like that it's just like a Japanese sake 😀.

It is a Junmai Daiginjo, so the sweetness of the rice without any cloying taste stands out in this bottle.
We had it with kabayaki on the day of the ox in the dog days.
I would have preferred a drier taste for the shiroyaki, but it was a perfect match for the rich taste of the kabayaki, and the rich taste of the kabayaki was not overpowered and the deliciousness of the rice stood out ❕🥰.
The sashimi also went well with the fatty medium fatty tuna and yellowtail sashimi.
