I was aiming for nodoguro (red crucian carp), so I bought a bottle of hikakami sake to go with it as if I were fishing ❕ and I was ready to go.

I was supposed to drink it with seared nodoguro sashimi 😭⤵⤵⤵.
Well, it's a good thing I wasn't a monk.

When I opened the bottle and sipped it, I found it to be a crisp, light and dry sake, as is typical of Hidakami, and the nodoguro were small but the fat was great and delicious ❕😋.
The sake rice is my favorite Yamadanishiki, no doubt about it!

The sake we drank at the turn of the Bon vacation was Kubota Senju.
Kubota is a light and dry sake that is perfect for pairing with the sashimi we bought, and its sharpness makes it a perfect mid-meal drink.
It doesn't have the fruity taste of the modern sakes, but I like that it's just like a Japanese sake 😀.

We had it with kabayaki on the day of the ox in the dog days.
