Masamune Instrument Masamune This off-dry is the first time I drink this off-dry. off-dry means slightly dry, between sweet and dry 🤔.... When I drink it, I feel sweetness. I feel a slight chilli on my tongue. It's unfiltered and unpasteurized, but it's still lit, right? But it's still freshness? Since I drank it last Tuesday, I went on a business trip and drank it outside. It seems to have mellowed, the freshness has faded, but the sweetness remains. It doesn't feel very dry-dry, but I guess that's the "slightly dry" part 🤨. But as I drink it, there is a little sourness in the soft sweetness, and the dryness is gradually coming out? It's kind of like off-dry 🥳. It's pretty good 😋. It seems that saury is well harvested this year. We also have saury 🐟🐟.

Yesterday was the annual event, tennis 🎾 ~ hot spring ♨️ ~ drinking 🍻 with my high school classmates in Shonandai. We went to the same restaurant we went to once before. After 3 beers at Onsen and this restaurant, it was time to move on to sake! Because we took her to Noge 😭, she stopped drinking 😭 asked me "Is Otter delicious?" I asked her if she wanted to try some. So we decided to try some Otter Sake. Soft sweetness Slightly lingering on the tongue A little sourness Clear, gentle and fruity Delicious, but something a little off? I don't care though... 😉. I don't remember this place serving a single-batch bottle like this. The next Hakkaisan was also served in a single-bottle! This one is a bit more sour. Izumibashi, Koshinoketora and others were made in tokkuri, I gave up on the picture😅. But we ordered 1 sake bottle at a time several times, and finished yesterday happily! Today, I went to Shonandai again after 8am, this time to meet my college friend and play tennis with his regular tennis team. Maybe I should have stayed the night instead of making the 2 hour round trip 🤣.

With friends in Chigasaki (5) Yesterday, I went to Chigasaki with a friend from college for sake. One last drink, one I've never had before! Kouzuki A rare brand made by a sake brewery in Taishinshu. Soft and sweet! Delicious 😋. Beautiful sake! Anyway, this friend of mine was the one I hung out with the most when we were in college. But I never imagined that in our old age, we would be drinking sake together like this 🍶🥳. We decided to play tennis the following Sunday in Chigasaki 🎾 We had only met occasionally before, but it was like going back to the old days all at once🥰.

With friends in Chigasaki (4) Next, another first-time drink that I've been curious about! Katsukoma I wonder if we don't come across it very often because of its small production. Compared to Shinshu Kame-ling and Arashidou, this is the least sweet of the two. It's very clear and refreshing. It is also delicious. This store has quite a lot of Sake. The owner said he is doing his best to stock up. They also have some Sake from December onwards 🤩.

With friends in Chigasaki (3) Next, the one you've never had or seen before Rando! I checked it out later, and it looks like Sugiyuu's brewery. Omachi sake. A little strong? Sweetness is gentle. Fruity. Do you feel the sense of rice? Oh shoot, I ate half of the nodoguro before I could take a picture 😂.

With friends in Chigasaki (2) We moved to a restaurant my friend knows. I met my friend a year ago, but we didn't talk about sake so much at that time (it was an Italian restaurant at that time 🤣). My friend had a glass of Jigokin or Shinshu Kameiring at this restaurant about a year ago, which was so good that he started drinking Sake! So, why not? Shinshu Kameiring! Yes, it's clear, sweet, and delicious 😋! Beautiful sake! A definite one! But, when I drank it before, it was a little fresher, wasn't it? Well, it's delicious, that's for sure 🥳.

With a friend in Chigasaki Due to work-related reasons, I contacted a friend who was a very good friend of mine in college to learn some things from him, and we decided to meet in Chigasaki. We talked about work and a little bit of sake. Tensei in Chigasaki, my hometown. Gentle and soft Sukkiri. When I drank it before, I thought it was a bit more dry, Well, I can't rely on my own tongue 🤣. My friend was not a big sake drinker, much less a sake drinker! But, she was like, "I've been enjoying sake a lot lately, "Sake is so good these days!" 🤣. So we went to a place where my friend sometimes goes to get a variety of Sake 😆. PS. Mr. Tokumitsu was there, he's from my hometown!

Sentori for the first time in a long time, attracted by the beautiful label 😆 Sparkler, my first drink 🎆. I thought it would be during August because of fireworks, but this is the right time! It's still hot, so OK 😝. The name evokes the fleeting nature of the end. It says on the back "Do you have any unfinished business in the summer?", I have a lot 😝 Maybe. First of all, I still feel the acidity. At first, I thought it would be very sour, but it's a gentle kind of sourness? It's soft. But on the second day, the sourness became even more pronounced? Is this taste unique? Sparklers at the end of summer, a slightly sour summer memory, I mean 🤣🤣thanks for the treat 😋. Refreshingly sour, crisp and refreshing in the mouth! I saw online that it is an assemblage of Modern Sentori Mukashi and Classic Sentori Mukashi (I've never had either of them)! (I've never had either of them 🤣)

Izakaya Shinkansen Tohoku This time, 2 days business trip to Sendai Yesterday we went for a drink, but it wasn't sake 😭 So it's different from my usual trip from Yamaguchi (lol) and much shorter time, but I started Izakaya Shinkansen! 🚄. Sake, I got from my country, a liquor store near the station! I didn't recognize it, of course I've never had it before! But later I found out it's a Yamawa 🤨. It's a bit dark. Modern, isn't it? Sake! I like the way it feels. At room temperature, with a hint of rice. I like it this way, too. I like it a lot. Today's menu Ginga Kogen Beer String Beer Flounder and eggplant with grated radish Anago (conger eel) One person at a table for three (lucky me!). Good for a drink! But I think they stocked a little low. Utsunomiya, closing store 🤣.

It's been so hot every day that I haven't been able to get my hands on any of the fall sake that's still on the shelves, but it's about time 🍁. I mean, I've never had AKABU Amber before. I wanted to drink it and bought it 😁. It's fresh when you drink it! It's fresh! (Not so fresh, but fresh...). And the image of sweetness and acidity is soft? Is it mild for an Akabu sake? Is it because it is an autumn sake? But as you drink it, the sweetness and acidity become stronger and stronger? Maybe it's because it was chilled at first, but as I drank it, it was getting to room temperature? For a so-called "autumn sake" (although I'm not sure if that's a good way to put it), it's gorgeous 🥳. Yeah, this balance of sweetness and sourness is delicious 😋. It's 13 degrees and easy to drink.

A pop up that says "due to product replacement"! They're lowering the price 😳 Is there such a thing 😆. Brewery is a bit 2023, but the production (maybe bottling) is 24.12, so I bought it a little over 6 months ago for a little over 1000 yen (I think) because it's not that old and I like natural liquors 🥳! When I drank it, it was more sour than I expected? I don't feel much sweetness? It's sweet and sour, but the sourness prevails? I remember I drank it 2 times before, it was a very strong sake with strong sweetness and sourness, this time it has sourness but less sweetness? I think so 🤔. Maybe, almost certainly just my imagination 🤣. Maybe it was room temperature before? This time it was cold sake. Well, either way, I think it was a good deal 😝.

Izakaya Shinkansen (2) The second glass was Toyo Bijin Goddess Shizuku Namaishu This is a standard 😆 of Izakaya Shinkansen from Yamaguchi. A different pattern for each season! This one is a fresh, fresh sake! Clear, crisp, a little sweet, and mmmm, delicious 😋 Toyo Bijin is a steady seller! At Shin-Kobe, the snacks are over 😭 The last dessert, today, I don't know about you, but "Howari", was sold frozen. When I said I would eat it on the shinkansen on the way home, they put dry ice on it. But shoot! I ate it without taking a picture 🤣. All that was left was to drink up the remaining oriental beauty 😋 A little sweet, but delicious! Today's dish Salad roll Fried horse mackerel wrapped in shiso leaves Duck loin pastrami rice Large rice ball Ume plum and shiso chirimen Burdock Root Tempura Kirin Autumn Flavor Kahori Yamagata Honten Toyo Bijin Sumikawa Sake Brewery Cheese Souffle Today's study There are not many snacks for how hungry I am 🧐. Izakaya Shinkansen ①. Izakaya Shinkansen opens! What a one-day business trip to Yamaguchi today! I left early in the morning and spent more time on the Shinkansen than I did working in Yamaguchi😭. In order to make the most of my time, I decided to work on the bullet train on the way to Yamaguchi and have fun and drink on the way back 🤣🤣. Sake as well as beer 🍺 is autumn, so we drink autumn flavors! And the first sake was "Kahori" which I didn't know so I bought it, it seems to be from the Hochozuru brewery! When I drank it, it was sweet, but not too sweet! The alcohol content is 14.5 degrees, but it's a bit firm. Maybe because I drink it at room temperature? The duck I bought at the Co-op is pretty good too 😋 The pepperiness makes it a little hard to pair with sake, but that's beer 😜. But I don't feel the sweetness of the sake anymore, it's not dry, but I feel it lingers on my tongue, and I also feel a little sourness. It's not a slurpy type, but rolls around in your mouth? 🤣 What the hell is that 🤯? I've been on the bullet train quite a bit in Hiroshima and still no neighbors, safe 😝.

Nearby? There is a supermarket nearby that has a good selection of sake for a supermarket. It's a local supermarket (I don't shop there) with a slightly particular selection. I stopped by for a while and bought a bottle of sake. My first drink, Chiyoroku R5. R5 is the name of the yeast. (I really want to compare them, don't I?) Fruity on the palate: ⁉️ Sweetness and sourness come in. A little sweetness? Quite tasty 😋. The label on the back of the bottle says, "A food wine with a sense of gentleness and serenity", but it has a sense of gentleness and softness. It's delicious even if you drink it as it is. I think it's not so called "dry" sake, but rather "spicy" sake. It's not what you would call dry sake, but spicy? It's not what you call dry sake, it's spicy 🤔.

I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Beautiful and tasty, but maybe it's my imagination, a bit subtly different from so called sake? (Can't describe it 🤣) Well, it's good because it tastes good 😆. It's the kind of thing that goes down smoothly.

The only raw sake (sort of) at Tsuchida Sake Brewery. When you think of Tsuchida, do you think of a sake that has not been polished or mixed with anything? Image of drinking it as it is at room temperature? 😆 😆 It's not so much polished as it is thick! Rather than that, it's more like a thicker, mellow? Like tasting a strong sweetness and acidity? What is that Tsuchida's fresh sake like? No way it's fresh! And 🤔I bought it out of curiosity😅 I was wondering about the hops one, but decided to go with this one to taste the "fresh" taste! Opened the bottle! I was caught off guard 😣! I was caught off guard 😣. I spilled a lot 💦. Later, I looked on the internet and saw that the cap had no holes in it this year, instead of the perforated cap of last year, so I could feel the gas 😱 I'm screwed! When I drank it, it wasn't the Tsuchida I'm familiar with 🤔. This is nigori sake! And it's a dark type! Fresh and sour taste on the nose. It's not too strong, but it's not too strong either. Somewhat makgeolli-like? The next day, it's a little calmer, even easier to drink 😋. But, do you want a little more of that Tsuchida feeling? Maybe 🤣

Echigo-Tsurukame's Koshiichi, which I had never heard of before, but when I found out it was Star Wars, I bought it at a liquor store near there on my way home from a client's office 😆. They had two bottles for sale, Vader (Darth Vader) and A New Hope (Episode 4) and maybe the opposite. I wanted both, but it was tough to carry two bottles home from work, so I went with Vader this time 😬. (Vader is deep, heavy and majestic, while A New Hope is fresh and crisp.) It looks like Darth Vader? I'm not sure 🌑. Pouring it out of the jet black bottle and drinking it, it's surprisingly fresh💦? A little fruity? A little sour, a little acidic? Low alcohol, maybe easy to drink? On the second day, though, it tastes even better 😋 A little more sweet? Tastes good with just the right amount of acidity 😋. I thought it would be more like the dark side 👿? I thought it would be more dark side 👿, but I guess it's still more Anakin? (Sorry if you don't know Star Wars) But still, I want to explore the world of this series a little more 😜. I was wondering if you have any Darth Vader stuff at home? I looked for one, but all I could find was a cap for the airing place on my bike!

Noge (4) At the fourth restaurant in Noge, we had our last sake of the day, We decided to finish with a refreshing sake, didn't we? Senzuke Super Dry Sake Naturally, it's refreshing and dry! I can also taste the acidity! This is 17 degrees! Is it crisp and dry? This is the last sake, but it's still late in the evening.., We went to one more Chinese izakaya and had some spicy mapo doufu (hot bean curd) with a choice of spiciness, and then split up! As usual, we had a lot of fun and drank too much 🤣.

Noge ③. After Sushi Izakaya, we went to the fourth restaurant of the day after Hormone and Yakitori restaurants. My friend had been there before, but this was my first time. Here we had sake again 🍶. Hananobun, a sake I had never had before. Soft sweetness Slightly sour Slightly sour Summer sake-like With a treacherous nibble named Gouty Carpaccio, which seems bad for uric acid levels 🤣.

Noge (2) The second sake at this restaurant (I've already had beer and sours because it's so hot) is Kido Summer Gale! I drank it at home last year or the year before, but didn't buy it this year. I chose to drink it here because it was just right! Sourness, feel, refreshing 💦. Refreshing! Summery? It goes down easy! The snacks here are cheap and tasty 😋.
