In Shimane Prefecture (7) Souvenirs for a friend's house This is another sake I chose after consulting with a liquor store! I really wanted to bring Kaze no Mori, but I felt it would not keep the temperature well. I asked him if he had any similar sakes that were fire-aged. It is a sour, carbonated sake with a koji flavor. It said on its website that it was made with lactic acid bacteria. I was not sure what kind of category it was. My friend said it has a low alcohol content but feels strong and tastes of koji! I now understand a little more why the liquor store said it was similar to Kaze no Mori! We drank 4 bottles side by side, Gassan from Shimane, Shichikanma, Nichinichi from Kyoto, and Kido from Wakayama, all different types, so it was a good time to compare 🥰. That's all for my trip to Shimane Prefecture!

Souvenirs for a friend's house in Shimane Prefecture (6) I chose this sake after consulting with a liquor store. I chose Kido Kid for the first bottle! I was also trying it out to see if it was sweet and easy to drink. It is a Junmai Daiginjo-like, fruity! My friend who likes sweetness liked it!

In Shimane Prefecture⑤. Hamayaki Bar Minato, a tavern in Matsue City Comparison of drinks We had some sake from the neighboring prefecture of Tottori. This one was super sweet! My friend who was with me who likes sweet sake liked this one the best. Very good for one of the taste comparisons!

In Shimane Prefecture (3) Hamayaki Bar Minato, a tavern in Matsue City We had a drink comparison! There was another Gassan, so I chose this one! I guess it is drier than the Gassan I had before it, but my memory is a little fuzzy. It tastes of koji and then a pungent sensation! There is definitely a difference! A reminder from here.

In Shimane Prefecture ①. Hamayaki Bar Minato, a Japanese-style bar in Matsue City I requested my friend to take me there to drink Shimane Prefecture's local sake! We were told that Shimane is famous for Gassan. It is very easy to drink, sweet and full. It is clear and I would drink this! The next day I bought some for home at an Aeon in Matsue. There were other labels in different colors to choose from, but I went with the pink Gassan!

Second glass of sake at Tenga-chaya. I wanted a fruity sake, so I chose Akabu. I had always wanted to try Akabu, which is very popular and I have read many of your posts about it, but this was my first time to try it. It has not only sweetness but also depth. It is not only sweet, but also deep, tangy, and umami. It is well-balanced and really delicious sake! I am convinced that this sake will be very popular 〰︎. Gourd with red and white shibazuke (pickles). This was also my first time to try it. It looked like a very good luck charm. It is cute to look at, tastes good to eat, and is a great topic of conversation when people talk about having eaten something like this! The owner is a local and gave us information about stores in Tenga-chaya, so it was fun to interact with him and not just drink with him. The first restaurant we went to was a family-style restaurant serving obanzai and other dishes, run by the proprietress and the young proprietress. When I entered the restaurant, everyone greeted me, and when I left, they all talked to me, asking where I was going home. It was a place where you could tell what they were eating and drinking, and they were so close to each other. It was a shock in many ways, but it was an interesting Tenka-Chaya.

We drank at "Tenga-jaya." Sake was served at the second restaurant. The first drink, a moon ring. This yellowish sake reminded me of a full moon, which must be how it got its name🧐. It was a refreshing yet robust sake, with a slight acidity and a delicious junmai-like flavor. The owner's attention to detail was amazing. The restaurant has about 600 kinds of sake, not only sake, and is more of a place to go to drink than to eat. The appetizer was an eel bone cracker, which had a delicious salty and crunchy taste. 〰︎ They have them specially made and ordered.

I had failed to post this. Drinking with old friends. Second drink. Toyo Bijin! After the spiciness involved in the black dragon, the sweetness stands out! Easy to drink! We finished off with kamameshi, which was delicious 🥰. While we still hadn't had enough to drink, we finished with our last order. We had a lot of fun and a lot of stories that piled up so fast 😊🍶.

Today, once a year, I have a drink with a classmate from when I first worked there! Even though we have both grown up quite a bit, some things have not changed, and we are still friends who get along well. It was difficult to find a restaurant at the end of the year, but we managed to make a reservation and go. First drink I had a black dragon. It has a sweetness followed by a spiciness that makes it easy to drink! Freshly squeezed Nama-shu! Second glass of Morishima! We had sake from the same brewery. This one was also served right after opening the bottle! It feels special 😆. It felt spicy and then bitter or bitter. I had it after Fuji Taikan from the same brewery, but after the sweetness, so I felt more bitter. The proprietor always introduces us to the sake he stocks 😆. This time, he couldn't get the sake he wanted and said, "We don't have much this time. I was so relieved that he was thinking of preparing it for us 🥰. Today, I talked with a regular customer who was sitting next to me, and he said, "We have met many times, haven't we?" We didn't exchange much, but we had a relaxed and friendly time 🍻.

At my usual favorite restaurant First cup of Fuji Taikan. I had a freshly opened bottle! There is something special about having the bottle right after opening 🥰. The taste is sharp and dry! Perfect for a meal! At a restaurant serving Satsuma's local cuisine! The lady of the restaurant has recently started mountain climbing and since we share the same hobby, we had a lot of fun talking about which mountains are good. ⛰️🥰 We spent a pleasant time drinking and talking about our hobbies!

Yamanaka Sake Shop at Ekimarche Osaka the third drink I wanted a dry sake, so I chose this one! As described in the description, it is "dry with a touch of dryness and a touch of sweetness cut off." The first sip is refreshingly crisp and spicy! The sashimi went well with the entrée 😆. I like the dry taste. 〰︎ I'm sure I'll get addicted to this one too.

Yamanaka Sake Shop at Ekimarche Osaka Second Cup I have been wanting to drink this Mimuro Cedar for sometime. The store's introduction described it as "clean drinking, umami and fruitiness" and it was just as described! I was impressed. I like Nara Prefecture's sake in general so much that I want to be able to talk about it, and Mimurosugi is a must-try 😆.

On my way home from running errands, I went to Yamanaka Sake Shop at Eki Marché Osaka. I really wanted to buy some sake, but there was already no space in the fridge for other sake, so I didn't buy any this time and had some on the spot. ☺️ The first drink We started with a sparkling sake. The carbonation and acidity were the most noticeable, but there was also a bitterness in the sweetness, making it a well-balanced saké!

This sake was purchased last week at Kochi Prefecture's "Tosatosa" product store in KITTEOSAKA. It is a small size, but I bought it for a taste. It has a mild sweetness, followed by a light and crisp spiciness! The aftertaste is refreshing 😊. This spiciness is good because we tend to have sweet sake at home! I like to enjoy a variety of flavors when drinking at home, so I would like to have not only sweet sake, but also moderately spicy, refreshing sake, acidic sake, and several other kinds of sake on hand 😄.

On my way back from KITTEOSAKA, I went to the food section of Hanshin Department Store. There was a corner where one could stand and drink at what appeared to be a sake bar, and since it was a Mie Prefecture fair, I was served a new sake from Saku. It had a freshness that was typical of new sake! It had a freshness to it, and with the muscat flavor of Saku, I was glad I stopped by and had a drink. The timeline of my post is a bit strange, but I went to a sake bar afterwards. A day where I drank quite a bit in one day. I gave the same post 3 times 😅 I was so drunk. But it was a fun day!

KITTEOSAKA ③. B1 Umeyoko Standing bars and izakayas stand side by side, where many people can casually have a drink from noon! After the Emon Nippon Meguri on the 6th floor, I was getting hungry, so I moved on. I usually start with beer🍻, but since I was already enjoying sake, I had sake here as well! Yamahane (Sawae), which I had often seen at the supermarket. The sake was served in a generous portion and was a great value for the money. The taste was perfect for a meal, with sweetness followed by spiciness, and a solid, stable flavor. I thoroughly enjoyed KITTEOSAKA.
