When I enthusiastically told an acquaintance that I wanted to conquer sake from all over Japan at Sake-no-Wawa, he told me that he had a classmate who had a friend who had taken over a sake brewery and gave me a bottle of Kikusen. Thanks to him, it was my first time in Shizuoka Prefecture🤣. The taste is refreshing and easy to drink. It is light with a touch of sweetness, and I am sure it is easy to drink for first-timers as well. It's really easy to drink. 〰︎ I loved it 😋.

This is another one I wanted to try! It's the one after Nanbu Bijin today, and it has a refreshing taste that remains after the refreshing sweetness. I thought it was a must-try sake based on your comments, so I bought it! I would like to try the other "Saku" series as well. Today we drank sake at home after the Izakaya! Since there was no sake that caught my eye at the izakaya, I decided to drink beer and highballs, but I had Nanbu Bijin and Saku, both of which I had already purchased 😆 I'm a weekend drinker, so I finally got around to drinking them. I wanted to try Nanbu Bijin after seeing your post! Got it at my local supermarket😄 Easy to drink! The spiciness that comes after the sweetness! Like a weight with a firm thump! I am careful not to drink too much. It is fun to fill up the map of Japan little by little. First time in Iwate Prefecture!

When I went to buy Kaze no Mori at Higashikawa Sake Shop in Gosho City, Nara Prefecture, I was recommended this sake, which is also delicious. The taste of Kaze no Mori changes depending on the temperature! Not as hot as hot sake, but sweeter at 35-40 degrees Celsius! It has an interesting flavor that is typical of Kaze no Mori, but also has a junmai feel that makes it suitable for warming up 🤣. I regularly visit Kaze no Mori's local sake shop in Gosho City, Nara Prefecture, to try their limited edition sake. Ya interesting. They say when the seal turns pink, it's ready to drink.

I had a drink before, Sharaku. I drink it at my favorite restaurant. I thought I hadn't posted this one, so I chose this sake today. It is fruity and easy to drink! The sweetness of the rice is followed by a touch of spiciness. I love this type of sake 😍. When I first started drinking Sharaku, I couldn't read the kanji because it was so difficult, but now I can react to it as a delicious sake 😄.

I chose this sake because it was newly acquired at the izakaya I usually go to. I opened a bottle of sake that I purchased at the Tanzan Sake Brewery during my visit to Kyoto in July, as today was a special occasion! The toji here is a woman, which was quite rare in Japan more than 20 years ago when she became the toji. She aspired to become a toji after seeing her father's work. She dreamed of making sake with her own name someday during her training, and this sake was made possible. He is now the president of the company, following in his father's footsteps. It is interesting to visit a sake brewery and feel the stories and history there! First of all, the rice is home-grown and no pesticides are used. The rice is polished to a 35% ratio to remove impurities, and I feel that they must have been very particular about the various processes. The taste is clear and fruity. The taste is clear and fruity, with a sweetness followed by a spiciness that has a strong presence! It may change from year to year, but I would like to drink this sake again!

A local sake given to me by a friend! It is 10% polished and has a brown rice feel, the opposite of a daiginjo. It has a unique character, which makes it interesting! It made me think that the old sake might be on this side of spiciness, or perhaps a savory taste. This is the first sake that I have felt like that in my limited experience. I realized that this is a good way to enjoy sake that is not famous when you discover it.

Brewer's alcohol 18 degrees. I felt it was either alcoholic or strong. The taste is sweet, carbonation and spiciness followed by sourness! This is my first sake from Niigata Prefecture. It is indeed a rice-producing area!

Day 1 Comparison of limited ALPHA TYPE1 DRY and normal! DRY just got a limited supply 🥰. About the taste DRY has a strong carbonation, pungency and sourness! Normal has a sweeter taste and less carbonation than DRY. It is interesting that there is a difference even though they are the same TYPE1. And when the temperature changes after a little time, DRY seems to be closer to Normal. The depth is very deep. This is the first time for me to compare Kaze no Mori, but if you can get it, please try it. I will continue to report on the taste as it changes over the next few days 😆.

3rd day. DRY is a little less curdled and less acidic. The pungency of the DRY was felt more than on day 1! Normal also seemed to have a deeper sourness in the sweetness. Interesting to see the differences and similarities!
