SENKOKU UA 1st 2024 AKA AKA, NAMAHASHIZUKURI".
It has a clear acidic aroma, a rich umami and acidity, and a refreshing aftertaste.
Personally, I think I like it better than "Ao" before "Edogari" 🤔.
Last but not least, the blue cheese pasta with pear and prosciutto ham.
The pasta is quite thin like somen noodles, and the salty flavor of the prosciutto and blue cheese is delicious 😋.
That's the end of the review in a nutshell, but we're back to the aditional time section 🤣.

The eighth and ninth drinks were a rare comparison of the two sakes before and after SENKYO's return to the Edo period.
SENKOKU UA 1st 2024 Ao Hayasozo Hashizukuri
The aroma is soft and mild with a sourness that is typical of Sengoku, and the mouthfeel is moist with sweetness and umami, followed by a crisp acidity and a clean aftertaste.

Sengoku UA 1st 2025ver
It has a fresh acidic aroma, a gassy mouthfeel, a refreshing sourness similar to the woody flavor of "Shinmasa", and a sweetness that finishes with a sour bitterness.
Since I drank it right after the 2023ver, I got the impression that it was quite lively and fresh 😋.
Pairing: Smoked salmon with orange
A dish that matches the delicious flavor of smoked salmon with the acidity of citrus fruits. ✨️

This is a sake party at shima&sake&coffee, where four different types of "UA 1st" sake are compared according to their age.
SENKOKU UA 1st 2023ver
The aroma is a little beetle-like, the mouthfeel is gassy, the acidity is clean, the flavor is mild and lingering, and the finish is refreshingly acidic, just like Sentori.
It is not twisted even though it has been aged for almost 2 years 🤔.

The fifth sake was a nearly one year old sake!
Sentori Yukidaruma.
The aroma is a bit briny, the mouthfeel is gassy, the taste is refreshingly sour, and it finishes with the lingering bitterness of a calorie-free lactobacillus drink.
The gaseous and gaseous sensation is still there after a year 🥰.
This is one that leads to a certain shocking development later on 🤣.

Sentori Akatombo.
The aroma is tinged with a sourness that is typical of Sentori, and the mouthfeel is moist and umami, with a sharp acidity that is typical of Sentori, followed by a refreshing finish and a slight bitterness at the end.
As the temperature rises, it has a slightly fannish sweetness.
Pairing: Apples and prosciutto cream cheese.
The chopped prosciutto ham is also inside the olives, which makes this a difficult dish to pair with.
When paired with "Akatombo", the sweetness of the apple and the flavor of the wooden vat combine to create a pleasant acidity.

Sentori Urasenkohanabi
The first half of the glass has a lactic acid aroma that seems to be dissolving, and the first mouthful has a mild sweetness that fades out to a slightly narrower acidity with a firm sweet aftertaste.
The balance is quite pleasing when drunk on its own, and personally, it is my favorite of all the sake I drank that day.
But I wonder if the "flamboyance" comes out more than the "wabi-sashi" that "sparkler" has 🤔.

The order of the sake served at the event was as shown in the second page of the lineup chart.
The order of the second sake was as follows.
Senkou - Senkohana (sparkling firework)
The aroma is like a soda-laced rumney or a pineapple, and the mouthfeel has a slight gaseous feeling.
It is more like a sparkler flickering faintly in your hand than a gorgeous fireworks display in the summer night sky.
I feel somewhat wistful 🤔
Pairing: Blue Cheese Bucket with Pear and Apple
When eaten by itself, the blue cheese bucket has the saltiness and flavor of blue cheese, but when eaten with pears and apples, the blue cheese loses its peculiarity and the fruity flavor increases, giving it a more dessert-like feel 😋.
A luxurious comparison of Snowman and Sanshiki (lol).
This year's Snowball had a sweet banana aroma and was an adult cream soda with a strong sweetness and a fine acidity to finish it off nicely. The Sanshiki had a gentle pear aroma with a surprisingly strong sizzle, but the robust umami and acidity brought it all together. Both of them were very tasty sake with SENKYO's unique flavor.
I kept opening and closing the cork [fun times] 😄.
It's a schwash. It is a bit more quiet on the palate as you pour it into the glass 😋.
Kouei Kiku Snow Crescent is also on standby in the fridge, so we will compare them in the day after tomorrow 😚.

It seems like I drank this snowman ⛄️ just a few days ago...but it seems so soon 😓.
To be honest, I was going to open a bottle of sake suitable for heating up tonight... but it's warm enough today without the stove on, so I chose to drink it cold 😍.

The aroma is light and lemony, typical of Sentori 😍.
While I was taking pictures to try the top clear liquid, it started fermenting and stirring on its own 😰.

The moment you taste it, you can feel the juwak🫧 of the raw sake, the sourness of the lemon🍋 that is typical of Senkou, and the sweetness and sharpness...exquisite and unstoppable💦.
It feels light like lemon squash juice🍹 (of course, it's sake, so the sweetness is not that strong).
I'm back on track, and this time I stirred it well 🤤 and drank the second glass.
I feel the balance is even better than before👍

Aroma of mellow lactic acid bacteria, a feeling of gaseous gas, sweetness and umami, and a mild aftertaste.
In a sense, it has a strong flavor that is not like SENKYO, and is suitable for the power word "Kijoshu no nigori" (nigorizake).
The pairing of persimmon and bacon with cream cheese was served.
