I was happy to buy a bottle to drink for the first time and to support Noto.
I drank it thinking it was Sentori, but it was a bit different. It was too sour than I expected. After letting it sit for a few days, it finally reached the right level of saltiness.
I saw a notice that Sentori had gone all out for the sake making process. I wondered if they were going to try a difficult way of making sake. I am looking forward to drinking it.
I opened a new bottle of sake and now it's back to summer again, going back and forth between seasons 🎆.
I decided to go through with this one because I was buying too much, but after a while I saw it in the fridge at the liquor store...so I ended up buying this one.
The aroma is slightly citrusy and sour. It's Sentori.
When you sip it, you can feel a little bit of a sourness with a slight lemon-like bitterness, and it lingers on the side of your tongue.
It has a delicious flavor, but there is no sticking point, and you can drink it easily.
It is a delicious sake that can be drunk in large gulps due to its crisp acidity, or rolled around on the tongue to enjoy its gradual umami.

Since I ordered this instead of dessert, there was a lot of liquor in the bottle, so there was a lot of bias. It's slightly carbonated and fruity. Very lactic acid, but I also feel citric acid.
The chestnut flavor of the Sentori we had last time is a bit off.
It is easy to drink on its own and tastes good. It is rather fruity to the point that one wonders how to pair it with food. It is so fruity that it makes you wonder how to pair it with food.

It is a sake for the Noto Peninsula disaster relief.
It starts with a refreshing aroma, followed by the sweet and sour taste characteristic of Sengkyo, and then it finishes.
The sourness remains, but it was refreshing when paired with salted salmon.
It is a delicious drink. It is delicious.

The sake had a clean rice aroma, a soft mouthfeel, and a mild aftertaste from the acidity and sharpness typical of SENKOKU.
The love for Tochigi was also demonstrated at the Kansai Off-line Meeting.

The mouthfeel is sweet and fruity. The aftertaste is clean but a little astringent. Firm and refreshing? It's a strange feeling. Delicious.
I haven't done sparklers in years. I haven't done actual sparklers for years, but I think it's been six or seven years since I did sparklers with sake. I think I drank it at a time when SENKOUGOU had been stripped down and I didn't like its taste very much. I used to like it until a year before that.
The aroma is infused with an acidity that you can imagine the direction of the flavor from the aroma. I would like to know the name of this type of acidity today.
My first impression is "sourness"! And from there, it is refreshing like a spud. There is no imbalance caused by a weak umami, which is common in low-alcohol sakes with this kind of acidity! As the manager said, the umami taste swells up afterwards. No, it was more like "gushing out" than "expanding," and there was a surprising feeling of something that should not have been there!
This juwajuwa feeling is just like a sparkler, and it pops so beautifully...
Just as you can't enjoy the real pleasure of potpourri if you handle it roughly, you can't appreciate its goodness if you drink it gulping it down, or it is an even better sake if you taste its proper development in your mouth.
It is already winter, but I drank it on a day when the lingering summer heat was still intense. I will buy it again next year.
