[When I had a late dinner at "Kicchin Usagi," I was reunited with a regular who used to come to the restaurant at the same time as me.
I can't come to the restaurant as often as I used to, so I guess there must be some kind of connection between us 🤣.
I gave him a bottle of "Ding-chan" as a gift, and he gave me one in return.
Ippongi Hatsushibori R6
I was surprised to see a one year old bottle of "Ippongi Hatsushibori".
I was curious to see how it would taste like!
The aroma is calm and mellow, and the mouthfeel is really full, with a slight gassy feeling, followed by a calm and weighty umami, and a calm lingering taste with a shallow bitterness in the back of the throat.
The freshness and the gaseous feeling is not so strong, but the weighty umami, which is balanced by the 21% alcohol content, is quite addictive and goes very well with the cold yellowtail sashimi (😋).
However, I was surprised that it still has a slight gaseous taste even after a year of aging.
For dessert, the proprietress made us a handmade "sea urchin rice ball" (🍙).
