[When I had a late dinner at "Kicchin Usagi," I was reunited with a regular who used to come to the restaurant at the same time as me. I can't come to the restaurant as often as I used to, so I guess there must be some kind of connection between us 🤣. I gave him a bottle of "Ding-chan" as a gift, and he gave me one in return. Ippongi Hatsushibori R6 I was surprised to see a one year old bottle of "Ippongi Hatsushibori". I was curious to see how it would taste like! The aroma is calm and mellow, and the mouthfeel is really full, with a slight gassy feeling, followed by a calm and weighty umami, and a calm lingering taste with a shallow bitterness in the back of the throat. The freshness and the gaseous feeling is not so strong, but the weighty umami, which is balanced by the 21% alcohol content, is quite addictive and goes very well with the cold yellowtail sashimi (😋). However, I was surprised that it still has a slight gaseous taste even after a year of aging. For dessert, the proprietress made us a handmade "sea urchin rice ball" (🍙).

I brought this ✨️ Ding Special Daiginjo". I got it at a special distributor in Kanazawa. If it's a high spec of "Ding-chan", you can't miss it 🥰. Clear and transparent melon-like aroma, clear and fresh melon-like sweetness on the palate, and a long and pleasant aftertaste! Well, this is delicious 😋. To accompany "Ding-chan" is the proprietress's exquisite cuisine, which on this day included oyster tempura, cold yellowtail sashimi, kombujime sea bream, and Spanish mackerel sauteed in saikyo yaki, all from the sea. Thanks to the proprietress for serving us so many dishes even though it was late 🙇.

Joint Christmas party at my parents' house②🎄 [Let's open the "Seikagami Junmai Sparkling" from Sandesi and take out the main sake and drink it 🥰. Sake: "Sanmorosugi, Miwa Denso Kura Brewery, Rohafu 50." I bought this at the Miwa Denso Kura (Miwa Sake Brewery) of the Imanishi Sake Brewery, which is located on the approach to the Ojinja Shrine on a hot spring trip my friends and I took this month. ✨️ [A glass.] Slightly umami aroma, clear mouthfeel, high umami, banana-like aroma through the nose, and a sweet mineral aftertaste. [Mokkiri] The aroma is clear with a sense of umami, and the mouthfeel is smooth with a high level of penetrating umami, followed by a gentle kick and a lingering finish. Wow! This is it! This is 😋! This is a bottle that has the potential to be included in the lineup of [2025, Bottle of the Year]! The mild, clean flavor that doesn't go all the way to sweetness is what I'm personally into 🤩. The fourth picture is the "egg and pork cutlet bowl" at Menbou Tsurutsuru, which I went to eat for lunch that day. This Katsu-don features sauce mixed in with the egg and soup stock, and is said to have been the centerpiece of a former department store 🤔. Ichiro18 likes Katsudon (pork cutlet bowl), so I'll introduce him to a slightly different type of Katsudon!

[A glass.] The aroma is like a calm lactobacillus drink, the mouthfeel has a firm gassy feeling with a hint of sweetness, a smooth umami taste, a sharp and gentle aftertaste, and finally a bitter taste in the back of the throat. As someone who had an image of "Seikagami" as dry, I was surprised by the unexpected taste. Today, December 20, is the last [new moon🌚] day of the year! And in December, the end of the year, I have to leave my house early in the morning before the dark dawn. In the midst of all this, I found a crescent moon☾ that seemed to climb up in the morning glow, so tonight, I'm going to have a moon-viewing drink🌛🍶 here tonight. Yamashiroya Yukizen Orikagarami Nama [I fell in love with the label when I went to Sake-no-Ten Hayashi to see some sake for New Year's greetings and got it. ✨️ [A glass.] It has a full rice aroma, a soft, rounded, mildly fresh flavor, and a pleasantly fresh aftertaste. [Mokkiri.] A cool, clear rice aroma, a clean, fresh flavor that flows smoothly into the mouth, and a fresh, crisp finish with a pleasantly fresh aftertaste. When mixed with orikomi, the juicy flavor and sweetness increases, while the sharpness and pleasant aftertaste remain unchanged. The image of a very beautiful sake, with a clear outline and a fragile feeling that seems to disappear after it finishes, is suitable for drinking on a night when the moon rises. The entrée is "Aji no tataki" (horse mackerel) and "Beef sinew stew" (beef sinew stew). It would have been drunk even if I had them face off with Fukui's thick fried bean curd, which I later found out is Tochio's sake.

Mikotsuru Special Limited Edition Miyamanishiki Orikagarami Nama-nihonshu. This is one of the last two bottles of this year's Shinshu Secret Sake Hanpukai! [A glass.] The aroma is sweet with a hint of strawberry, and the mouthfeel has a tangy gassy sensation on the tongue, followed by a strawberry-like acidity and a refreshing sweetness. The depth of the sweetness increases as the orikomi mixes with the sake, giving it a light "Takachiyo" image. I've been working on the year-end temporary work as well as overseeing the facility renewal work 😅. I'm still working on the project, but it's a little too much 🤔. Well, we are in a rush, but let's drink when we can 🥰, so we had a drink last weekend! Here is what I opened this time 🍶. NEW ENGI Yamae-Nishiki (5) Junmai-shu, unfiltered and fired. Again, I got it as an option in the Shinshu Secret Sake Hanpukai (✨️) [Glass.] It has a calm and subtle fruity aroma, a mild umami flavor on the palate, a subtle smoky aroma on the nose, a long and pleasant finish, and a mineral bitterness at the end. [Mokkiri] Aroma: Calm aroma, smooth mouthfeel, cool and pungent bitterness like grated daikon (grated radish), and a lingering mineral and subtle bitterness that lingers on the palate. The taste of bitterness is quite strange, and if we compare it to local gourmet food, it gives us an image of "spicy grated buckwheat noodles". The entrées are simmered pork cutlet and chopped tuna. [The sweetness that has been hidden in the pork cutlet stew soup and mirin (Japanese sweet sake) will blossom when combined with the tuna, and the umami and bitterness that accompanies the sweetness of the sticky fat will be a perfect match when combined with the tuna 😋.

I have drunk a lot of Shinshu sake, but I had never heard of "Iyari". ✨️ The dish was the restaurant's recommended sashimi of tuna (tamatebako).

Flatten Kyoto de [Sakurabar] [After enjoying the hot sake at Sakura Bar, I wanted some cold sake next, so I ordered some 🥰. Kinshi Masamune Winter Yurikamome Nama Sake. This is the only place in Kyoto that sells this sake! It has a fresh mouthfeel, a moist flavor, a gentle finish, a gentle aftertaste, and a strong aftertaste. Mackerel kizushi (sushi rice with mackerel) as an entrée It goes well with "Kizushi" which has a sour taste with the fatty flavor of mackerel. It's just the best! But if you start at 4:00 p.m., it's not a jive if you're not thinking of going to the second restaurant! So we'll stop by one more 🍶.

[From Nanzenji Temple, I walked to Shijo Kawaramachi. I stopped by [Kyoto Takashimaya] where I could get a limited edition Pikmin Bloom character, which I usually activate while walking, and walked along the Takasegawa River, which I had never walked before, seeing traditional Japanese restaurants, which was a fresh feeling since I had not walked around this area much ✨. We had a reservation at an izakaya that opens at 4pm, so let's take our time and have a drink 🍶. [Sakura Bar near Kiyomizu Gojo Station 🥰. It's called a bar, but it's really an izakaya (Japanese style bar) 😋. If you want to have a drink here, start with this! Kinshi Masamune Ginkaku (hot sake) The aroma is mellow and heated, the taste is rich and rich with a little spiciness, and the sweetness of the sake is mild and lingering. [The Sakura Bar features a bottle of heated sake, which is served by dipping the single-bottle bottle directly into hot water and heating it up. The entrée is always ordered when you come here [deep-fried sweet potato with starchy sauce]. The taste is unparalleled when you combine the broth with the hot sake 😆.

I came to Kyoto on a whim 🍁. [Due to the "Allegedly", there were fewer foreign tourists than usual, so I was able to take my time and enjoy the autumn foliage ✨. First of all, we went to Soba & Sushi Nananoya, which just opened last week on the 21st 🚶. We had to wait in line for about 30 minutes because it had just opened! I was curious about this place because a popular soba restaurant in Fukui, Kyoya, was following us on Insta ✨. [I had the Hot Kamo Negi-Tsuke Soba with Nigiri-Sushi Set 🍴! Let's match with Sake too 🍶. Honke Matsuura Tsuchigumo Aroma of calm rice, a soft and delicious taste at the first sip, then it finishes gently, with a calm aftertaste and a bitter taste on the tongue and throat. It goes well with the strong flavors of tsuke-soba. From here, we walked to Nanzenji Temple, where ma-ki-san had been the other day. The last time I was here was about 10 years ago 🍁. Now that I've got my Kyoto limited edition Pikmin, I'm off to go drink at the restaurant I reserved ✨.
