January 4 is the first day of work. I have a feeling that I will be extremely busy until the end of the fiscal year with a lot of tasks, familiarization of updated equipment, and redecoration of the office. The day before, January 3, was the full moon of January. ［I received a "moon charm" and a "red seal" at the Fukui Gokoku Shrine. On the night of the full moon, let's have [moon-viewing sake 🌛🍶 tonight], I opened it here: ✨️ Nabeshima New Moon I was very lucky to get it 🙇. ［The literal translation of "New Moon" is "new moon", but I interpreted it as "New year Full moon". ［The glass is like a clear melon.] The aroma is clear and melon-like, the mouthfeel is slightly gassy with a slight fruity sweetness and soft umami, the finish is sharp and fragrant with lingering bitterness on the nose and a firm bitterness at the end. ［Mokkiri.] A clear melon-like aroma, a slight gassy mouthfeel, a subtle sweetness and juicy umami, a mild finish, and a mineral bitterness that lingers on the palate. Too delicious! The entrée was "Nakatoro Nakadori (medium fatty tuna)" and "Spicy snacks" by "Spatari". ［The spice snacks are not only a good match for the chutoro, but also lose in aroma and aftertaste to the spice snacks, but the marriage of sweet and savory flavors in the mouth is hard to ignore 😋.

Now, every year at the beginning of the year, I drink the sake that I liked the most from the previous year, so I'd like to introduce you to the sake of 2025 that I can reproduce 🎉. So let's open this bottle and start drinking 🍶🍶. Sono Shangiku Jugenmu 50 Hazy Moon Orikagarami Unfiltered Nama-shu. This was a bottle that I wanted to enjoy at home when I brought it to a drinking party with my friends. ［A glass.] The aroma of lactic acid bacteria beverages, the taste of gas, the sweetness and umami that expands after the first sip, and the sweet aftertaste... ［Mokkiri] Refreshing, slightly fruity aroma, a sweet, cool, fruity taste that starts with a gassy mouthfeel, and finishes with a white grape-like aftertaste. I bought a nearly year-old bottle online, but it didn't seem twisted, just the lid was out of control 🍾. By the way, here's one I gave up on for crying out loud due to the difficulty of reproducing it Sanmorosugi Ruyohafu 50 Nabeshima Blosson Moon Kitanokatsu (hot sake) Lion's Village Sake Mirai Orikagarami Hazen Hakubai Yamahai Junmai Genshu I think around 🤔.

On the last day of the year, I participated in the countdown at Shima & Coffee & Sake. As the countdown to the New Year ticks down, I brought my own "moonshine" to finish off the "moon-viewing sake 🌛🍶 tonight 🥰" for the New Year. Amego no Tsuki Daiginjo Tsukimitsu One of the sake that got me immersed in the sake swamp ✨. Aromatic like a mellow melon, juicy sweetness that seems to disappear after a few sips, and a lingering bitter taste that pulls you in. I brought it in and had it tasted by other customers, who gave it high marks. The narrow bitterness lingers for a long time" was one of the expressions we received! After that, we started the New Year with a glass of "Rain Frog" to start fresh 🍶! Thank you very much for your patience with my ramblings over the last year 🙇. For my first post of the new year, I'll be presenting the "2025 Best of Jive" 😂. Yae Sushi" for a year-end party with friends ［After enjoying Shima & Coffee & Sake, we moved to the restaurant we had reserved 🚶. It was the end of the year, and even in the downtown area, some restaurants were open and some were closed, so we had a hard time finding a restaurant that we could make a reservation at, but we managed to get a table at Yae Sushi, a long-established sushi restaurant, so let's have some sushi 🍣. First of all, we toasted with beer, and then we checked the menu and found the restaurant's original sake called "Yae", so we chose this one: ✨️ Yae Ginjo Nama-Stored Sake. The etiquettes of the sake was written by Uno Sake Brewery, which brewed "Ichinotani", and the original sake of "Robatayaki Yakichi" was also brewed by Uno Sake Brewery, so maybe they are doing more than we expected 🤔. The aroma of rice is a little gorgeous, the mouthfeel is smooth, and the taste is slightly sweet with a hint of alcohol, and then it finishes with a clean aftertaste. The soft umami is typical of Ichinotani 😋. The entrée is "Yae-maki" and "Makanai-maki". After this, we also had Yae Honjozo hot sake (🍶). This one has a slightly sour aroma, a mild umami taste on the palate with an underlying sourness, and a pleasant aftertaste with a mild kick and heat. Not bad 🥰.

Went to a year-end party with friends at Shima & Coffee & Sake's "Small Cuisine" event (4). After enjoying a pre-sake "Hana-yosu", I thought it was time to finish the party, so I chose this dish as the last one 🍶. I chose this as the last sake 🍶 "Amezure Sake Kaiyoshi Namaishu". Aroma of mellow lactobacillus and hidden fruity flavor, weak gasiness, lactobacillus sweetness, and a clean and refreshing aftertaste. I did it! I was able to drink this again this year🤩. It's a marriage made in heaven when paired with the aforementioned [egg roll with seiko crab and kujo leek] 😋. I was able to meet with drunken sake again this year 🥰. Last but not least, Shima-san brewed us a cup of coffee ☕. I wished him a happy new year, and he invited me to join him for a countdown event.

Went to Shima & Coffee & Sake's [small restaurant] event for a year-end party with friends (3) When I looked around the cellar to see what to order next, I found a drunk guy, so here it is 🍶. HANAIYOUKU Junmai Daiginjo Unfiltered Nama Sake. From the unmistakable aroma of pineapple, to the juicy and sweet umami, to the sharp finish, to the clean lingering taste and the bitterness on the tongue.... It's a great Pinappo 🍍 Oh no, it's too good! I want to get it next year 🤔 The entrée is [Dashi-maki (rolled crab and green onion)] 🍳.

This year I am exempted from the New Year's Eve night shift, which I have worked for the past two years in a row, and it has been a while since I have participated in a countdown outside of the workplace to welcome the New Year 🥰. I went downtown for a New Year's Eve party with a friend whose schedule I couldn't quite fit in. First, we went to [Shima & Coffee & Sake], which had announced a [small restaurant event] 🚶. They have a wide selection of drunken drinks, so let's start with this one 🍶! We'll start with this one 🍶 "Takachiyo, Shin Takachiyo, A-TYPE, broken". I've drunk Kanji and Hiragana, but this is my first time to drink Katakana. ✨️ [HinaHanaMama], or [TakachiyoMama], made me want to drink "Takachiyo" 🤩. The aroma is like a mellow pear, the mouthfeel is slightly gassy, and the taste is juicy, sweet, and umami, with a mildly sweet aftertaste. Oh, this is badass, I love this one! The dish was "soaked Chinese cabbage with grated radish and baby sardines" (🍴), which was served to customers who made reservations in advance.

Only 3 days left in this year! I had a lot of drinking last week, so I had no alcohol on Christmas Day. I had hors d'oeuvres at Hama Sushi with the kids, and the whipped cream was not well received by them, so I tried to make Christmas-specific Kami-Nagashi (Japanese sweets) and the response was rather positive 🥰. Maybe [Christmas wagashi] will be good for a while 🤔. Well, my wife and kids went back to my parents-in-law's house from last Friday, so I dared to do something I usually don't do [drinking at noon after night shift]. ✨️ We went back to our usual Soba noodle restaurant [Youkamean Kamenya] at 1:30am because there was a huge line. First, we quenched our thirst with beer and kashiwa tempura, followed by fried tofu, and then chose the standard local sake, thinking that hot sake would be the best to soak up the delicious broth. ［When I had a late dinner at "Kicchin Usagi," I was reunited with a regular who used to come to the restaurant at the same time as me. I can't come to the restaurant as often as I used to, so I guess there must be some kind of connection between us 🤣. I gave him a bottle of "Ding-chan" as a gift, and he gave me one in return. Ippongi Hatsushibori R6 I was surprised to see a one year old bottle of "Ippongi Hatsushibori". I was curious to see how it would taste like! The aroma is calm and mellow, and the mouthfeel is really full, with a slight gassy feeling, followed by a calm and weighty umami, and a calm lingering taste with a shallow bitterness in the back of the throat. The freshness and the gaseous feeling is not so strong, but the weighty umami, which is balanced by the 21% alcohol content, is quite addictive and goes very well with the cold yellowtail sashimi (😋). However, I was surprised that it still has a slight gaseous taste even after a year of aging. For dessert, the proprietress made us a handmade "sea urchin rice ball" (🍙).

Wow! This is it! This is 😋! This is a bottle that has the potential to be included in the lineup of [2025, Bottle of the Year]! The mild, clean flavor that doesn't go all the way to sweetness is what I'm personally into 🤩. The fourth picture is the "egg and pork cutlet bowl" at Menbou Tsurutsuru, which I went to eat for lunch that day. This Katsu-don features sauce mixed in with the egg and soup stock, and is said to have been the centerpiece of a former department store 🤔. Yamashiroya Yukizen Orikagarami Nama ［I fell in love with the label when I went to Sake-no-Ten Hayashi to see some sake for New Year's greetings and got it. ✨️ ［A glass.] It has a full rice aroma, a soft, rounded, mildly fresh flavor, and a pleasantly fresh aftertaste. ［Mokkiri.] A cool, clear rice aroma, a clean, fresh flavor that flows smoothly into the mouth, and a fresh, crisp finish with a pleasantly fresh aftertaste. When mixed with orikomi, the juicy flavor and sweetness increases, while the sharpness and pleasant aftertaste remain unchanged. The image of a very beautiful sake, with a clear outline and a fragile feeling that seems to disappear after it finishes, is suitable for drinking on a night when the moon rises. The entrée is "Aji no tataki" (horse mackerel) and "Beef sinew stew" (beef sinew stew). It would have been drunk even if I had them face off with Fukui's thick fried bean curd, which I later found out is Tochio's sake.

Again, I got it as an option in the Shinshu Secret Sake Hanpukai (✨️) ［Glass.] It has a calm and subtle fruity aroma, a mild umami flavor on the palate, a subtle smoky aroma on the nose, a long and pleasant finish, and a mineral bitterness at the end. ［Mokkiri] Aroma: Calm aroma, smooth mouthfeel, cool and pungent bitterness like grated daikon (grated radish), and a lingering mineral and subtle bitterness that lingers on the palate. The taste of bitterness is quite strange, and if we compare it to local gourmet food, it gives us an image of "spicy grated buckwheat noodles". The entrées are simmered pork cutlet and chopped tuna. ［The sweetness that has been hidden in the pork cutlet stew soup and mirin (Japanese sweet sake) will blossom when combined with the tuna, and the umami and bitterness that accompanies the sweetness of the sticky fat will be a perfect match when combined with the tuna 😋.

Hot spring trip among friends: ♨️② The "Tobiroki" was so good that it was easily consumed, so let's open the other bottle we brought as a spare 🥰. Shishi-no-Sato Junmai-Ginjo Sake Mirai. Full aroma, a soft mouthfeel, beautiful umami, mild sharpness, and a mild aftertaste. The "Oorigarami" I drank before had a beautiful sweetness, but this one fits the dry image of "Shishi no sato" that I had originally felt, but with a clear taste 😋. I brought a sake with a rather solid difference, so I received comments from my friends [that they could tell the difference in taste]. ✨️ The lively party closed after the after-party in our room🔚. The next day, after leaving the inn, we went to the Ojinja Shrine. We also got some sake at "Imanishi Sake Brewery Miwa Densetsu Kura" on the approach to the shrine, and headed home via Kyoto 🚙. Onsen trip with friends ♨️ We entered the inn, soaked in the bath slowly, rehydrated with beer because we were sweating, and then it was time for dinner 🍴. Tobiroki Junmai Ginjo Namaizume I had used one of the pre-sake tickets from Hayashi Sake Shop that was about to expire a while ago and got it: ✨️ Fruity, melon-like aroma, juicy sweetness on the palate with a mildly sharp, refreshing yet firm bitter finish. I'm going on my annual trip to the hot springs with my friends on Sunday and Monday 🚙. This time, we stayed at Eigenji Onsen in Shiga and went around Lake Biwa from Fukui. First of all, we had "eel" for lunch at "Yamashige" in "Seta". I have been coming here to eat "Unagi" whenever I pass by since I had this "Unagi" before. ✨️ I'll drive first and let someone else take over from noon, so let's enjoy lunchtime sake 🥰. Kusatsu Oiwake. I picked this sake from the list of restaurants but im not sure if it's a private brand or not 🤔. Mild aroma, clean mouthfeel with rich umami and soft alky sweetness, and a clean finish. Whoa! Quite tasty, I'd like to try heating this up 🍶. After this, we drove towards the inn and strolled around Eigenji Temple, then went to the Eigenji Onsen Happu Annex and enjoyed the hot spring.

Well, let's celebrate my recovery with [moon-viewing sake tonight🌛🍶]. ✨️ Masumi Shinshu Secret Sake Hanpukai 2025 Gold Course Is it just me or does this logo look like the moon? 🤣 I looked it up and found that the image of the leaves of the Miyasaka Brewery's family crest [ivy] floating on the surface of the water is expressed in the shape of a circle, which is the harmony of the brewer's motto, "Wa (harmony) brewing good sake". ［Glass] The aroma is like a soft rummy, and the mouthfeel is soft and floral with a sweet umami flavor that finishes gently with a refreshing sweet aftertaste like a rummy. ［Mokkiri] A clear pear-like aroma, a refreshing fruity sweetness and umami that flows easily into the mouth, and a fruity sweet aftertaste that finishes quickly. Wow, this is delicious!
