It's been a long time since I've tasted "Tsuneyama", which has a solid dry image, but this "Araiso" has a mellow sweetness that is delicious with a gap between the two.
I found this restaurant by chance on Instagram, but it's very cozy and I'm sure I'll be a repeat customer 😁.

I think this may be my favorite sake brewed with Sakahomare that I've ever had 🤔.

Dong Junmai Ginjo Orikagarami
This time, we compared a thin sipped sake cup that we bought at the sake booth at the recent Bishu Competition with a thin sipped sake cup from the same kiln that we bought earlier.

The sake has a full ginjo aroma with a hint of rice, a firm, slightly carbonated mouthfeel, a clean and refreshing taste, a slight sweetness, and a lingering bitterness similar to that of cider, and a mineral and bitter taste that lingers on the tip of the tongue.

Aroma of rice with a clean ginjo aroma, a slight carbonation that flows smoothly into the mouth, a slight sweetness and umami that finishes with a refreshing aftertaste, and a bitterness that is felt firmly at the back of the throat.
From the second cup, the taste of orikomi (rice powder) is mixed with a gentle sweetness and umami 😁.
The entrée was swordfish sashimi and oden.
Hot oden on a chilly night with a glass of shwashy sake 😋.
By the way, this "Dou" is a private brand sake made in collaboration with Yamazaki Limited Partnership, which brews "Oku" and a leading sake shop in Nagoya, "Sake Sendo Horiichi" ✨.
The fourth picture is the "daily special set meal" and "boiled fish set meal" that my wife and I ordered when we went to a newly opened restaurant for lunch the other day 🍴.

The freshness of the unpasteurized sake, but with a more robust umami than expected, is intoxicating.
For the entrée, we served "sliced raw fish" and "Miyagi yagara sashimi". When it is hard to predict what kind of fish will go well with the sake, the "sliced raw fish" with plenty of different types of fish is reassuring 😋.

The entrée is a motsu nabe (motsu hot pot) using Tenka Ippin's rich hot pot broth and assorted sashimi.
I had an image that it would be more light and dry since it is a Hokkaido sake, but it has a very mild and gentle flavor that does not interfere with the meal, which is indescribable.
[Hakodate Sake Brewery is the only sake brewery in Hakodate, let alone in southern Hokkaido, that was revived in 2021 after an 84-year absence.
I hope to see more of their attractive flavors in the future 🥰.

A new sake that was on sale 2 days before the meeting.

Since the day of the off-line meeting was the sagittine moon, I was thinking of doing my own "moon-viewing sake tonight" at the off-line meeting.
