Drinking in Kyoto in Early Spring Complete We left Yokocho with great satisfaction and headed for Kyoto Station. Thanks to the taxi ride, I had some time to spare, so I slipped into Inaseya, a standing bar in front of Kyoto Station that I had been anxious to visit for the last sake. Tamanomitsu Junmai Ginjo Shukon. A clean rice aroma, a refreshing flavor and sharpness, and a slightly bitter aftertaste. The entrée was "Luxury Seafood Natto" 😲. What's that? Natto goes really well with sake 😋 Put natto on top of chilled tofu and have it as an appetizer during the hot season 😋. First, we ordered an unnamed hot sake and a limited quantity of "roast beef" 🍴. I drank to my heart's content for the first time in a long time 🥰! Now, let's try to close out the fiscal year 💪.

Drinking at YOKOCHO in Kyoto in early spring (3) After opening a bottle of "GANKI," we ordered a sake from the menu that we felt was overwhelmingly powerful. Shinsei Ecru 2024. [I was excitedly waiting to see what was going to be served at Shinsei (900 yen per 1 gou) and was surprised to find it was Ecru 😲, and it was also my first time drinking it. I got a bottle to commemorate my last drink 🤣. The aroma is slightly woody with a hint of wooden vat, the flavor flows smoothly through the mouth with a woody aroma, the acidity is sharp, and the aftertaste is clean and pleasant. The meat is almost rare on the inside and seared on the outside. It is one of the most delicious duck loin I have had in Kyoto. The final dish was homemade mackerel sushi and red miso soup with shijimi clams, which I thought red miso was rare in Kyoto. Negi. I thought red miso was very rare in Kyoto, but I was impressed with the Kyoto-like flavor of nameko mushrooms, leeks, and sansho (Japanese pepper) 😋.

Drinking at YOKOCHO in Kyoto in early spring After we had finished "Marutake Ebisu", the next drink we were going to order was "Tadai", but it was out of stock, so we changed our order to this one and had a drink with it. GANKI Junmai Ginjo Fruity aroma like melon that stimulates the nostrils, melon-like sweetness on the palate, and a clean, crisp, sweet aftertaste. Served with sashimi and teppai. I was rereading the famous book "Drinking Alone in Kyoto" by Mr. Kazuhiko Ota after a long time, and I remembered the introduction of "Yokocho" and the conversation I had with Mr. Ao-chan a while ago, so I decided to make it my destination this time 🥰.

[After leaving Yami, I went on a tour of liquor stores. I found some drunken alcohol, so I stopped to go to "Kitano Tenmangu Shrine", which I had planned to do, and had afternoon tea at Kyoto station ☕. Now that I've had my sugar fix, I'm off to the restaurant I've been waiting for this time 🚃. We went to Yokocho, a little further up from Sanjo station, just in time for the 5am opening ✨. We started off with beer and chilled tofu, and then shifted to drinks 🍶. Marutake Ebisu Junmai Sake. Aroma of fluffy rice, slightly heavy umami, and a bitter aftertaste. The entrée is fried sweet potato 🍟.

Sorry for the wait, everyone! It's time for the "Sake Terrorism" 🕑️, updated in real time as usual 😁. I've been in Kyoto since this morning and paid a little overdue visit to Hatsu-mairi (New Year's visit to Kyoto). It's hot in Kyoto today💦. After walking around, I arrived at a restaurant I wanted to have lunch at, "Yamiami", which is a derivative of "Shomin", and had a drink with them 🍶. Kido Junmai Sake. Clean rice aroma, soft umami with a clean mouthfeel, and a gentle aftertaste with sweetness. The entrée is [striped horse mackerel sashimi] 🐟️ After this, we will have a series of sake tasting in Kyoto in early spring. It was too hot and thirsty, so we started with beer 🍺 and the restaurant's specialty [quiche] 😋.

It's the season when pollen is very much in the air as the temperature rises 😷. In the past few years, I've come to recognize hay fever and get over it with medication, and the symptoms have almost disappeared, but my skin gets worse💦. I hope the pollen season will be over soon 😵. Well, when I visited Nagoya the other day, I went to IMADEYA for the first time 🚶 and I opened this bottle I found there and had a drink 🍶. Urasato Junmai Ginjo Hon Nama. [I finally got to pick up the "Urasato" that Aladdin is promoting 😁I don't want to tell you that I had mistaken it for "Urakasumi" all along 🤣. [Gugumimi.] The aroma of full rice, the taste is clean and refined, and the bitterness on the tip of the tongue gives way to a fresh and gentle aftertaste. [Mokkiri] A clean and calm aroma of rice, a delicious flavor that quickly permeates the mouthfeel, and a pleasantly refreshing aftertaste that is refreshing and clean. Both have in common the image of a gentle, refined, and beautiful sake. The label on the back of the bottle reads "Sake brewing to master Ogawa yeast", which is the same name as the brewer who discovered the yeast, Chikara Urasato. It makes you want to pay attention to the future of sake brewing. The entrée was sashimi of [flatfish from Chiba] and [wild yellowtail from Kochi]. 🐟️

It's been cold and snowy here in Japan for the past week, so it's back to winter. ☃️ This cold weather makes me want to drink heated sake, so let's open this bottle and have a glass of sake 🍶. KITANOKATSU OUMI This is a local sake from Nemuro that was packaged with the "Winter Fireworks" we received the other day from Menshuoh, thank you very much 🙇. We also had a cold sake and a warmed sake to compare ✨. [Gugurami!] Aroma of slight alky aroma, sweetness with a hint of alky sweetness, clean umami and sharpness, and a firm bitterness on the tongue at the end. [Mokkiri] Refreshing aluzoe aroma, a slight aluzoe sweetness and refreshing umami, and a clean finish. [Warmed sake] The sweetness is enhanced by the refreshing umami and sharpness, and the gentle aroma that rises softly and lingers in the mouth is intoxicating! It's quite delicious! I feel it has the potential to be served in an endless loop with slightly salty food items. I tried drinking it while it was warmed up or cooled down, but it lost some of its gorgeousness, so I think it's best to drink it lukewarm or so 🤔. The entrée was Ishikawa flatfish sashimi and a half-size portion of Taniguchiya's famous thick fried fish on a ceramic plate! Cold or room temperature sake goes well with raw fish, and hot sake goes well with the grilled fish.

Since there is still time to spare, let's enjoy "moon-viewing tonight" while watching the full moon of March 🌛🍶. Shinshu Kamerei Junmai Ginjyo Yamae Nishiki Kurage Limited Edition The last bottle I bought on my trip to Shinshu, which I had been putting aside since last summer. I applied for the "Secret Shinshu Sake Hanpukai" this season and received a bottle early this week, so I opened it this time to replace the old with the new 😁. The taste review is not much different from the last one, but the gassiness is a bit weaker and the taste is more rounded 🤔The aftertaste is still pleasantly intoxicating 🥰. The entrée was sashimi of [Echizen Yanagi-Hachime] and [Mikuni Hirame] since the local fish was fried this time. 🐟️ The picture doesn't show it, but it goes well with Yakitori (grilled chicken) 😋. Due to the various factors at the end of the fiscal year, I've been very tired this past week, working early in the morning and overtime until almost midnight. I also had to get up at 5:00 a.m., so I had a hard time resetting with a drink 💦. I had one more day of work left, but I opened a bottle of sake in anticipation that the last day would not be so busy 🍶. Sono Kangiku Occasional Junmai Daiginjo Aizan 50 Red Diamond I saw HinaHanaMama and Aladdin drinking "Kangiku" and I wanted to drink it for a long time, so I bought it at Sake Sento Horiichi in Nagoya the other day 😁. [The sake was so sweet and mellow, like a melon.] It has a mellow melon-like sweet rice aroma, a slight gassy feeling on the tip of the tongue, a mellow sweetness, a deep sweet aftertaste, and a clear sweetness that lingers on the tongue. [Mokkiri.] Aroma of mellow, sweet rice, with a stronger gaseous sensation than that of the gulping sake, followed by a firm sweetness and a deep aftertaste, and finally, a clear sweetness and aroma that lingers on the tongue. It has a firm sweetness and a deep lingering aftertaste, but fades out nicely at the end, so you can't help but reach for the next cup. Since the fish restaurant was closed, we had motsu nabe (hot pot with pork belly). The "Fuyu Hanabi" that we drank a while ago is now on sale, so we begged the Menshu King to send it to us again ✨. We apologize for the inconvenience 🙇. Winter Fireworks Junmai Daiginjo Unfiltered Nama Sake The first day of opening the bottle Gulping down a glass of sake Tranquil, clear and fruity rice aroma, clear and subtle umami sweetness, a little bitterness and sweet aroma through the throat, long and pleasant aftertaste. Mokkiri It also has a clear rice aroma, a moist umami sweetness, a long pleasant aftertaste, and a sweetness that remains on the tongue at the end. Both have a trip time of about 20 seconds. Compared to the hi-ire sake, it is more like the fresh and clear umami sweetness from nama-zake than the characteristic sharpness. 2nd day Gulping down a saké The gorgeousness of the aroma and taste fades and the umami sweetness becomes more robust. Mokkiri The aroma also becomes less gorgeous, but the taste is more robust and especially the umami is stronger. 3rd day Gulping down the sake The umami has settled down and the sweetness has become stronger and mellower. The bitterness at the end is also stronger and fresher. Mokkiri The umami and sweetness have also mellowed, and there is no bitterness at the end, but a mild aftertaste. It may be a little like "Hanayo" 🤔.

It's spring-like high temperatures in March. The snow in the garden, which at one time was more than 50 cm thick, has melted to about half of its original size, and we can feel the end of winter 😁. Last night, February 28th, was the new moon 🌚. Let's open a bottle of wine on this moonless, slightly warmer night 🍶. Hitakami Junmai Ginjyo Usunigori Nama Shu (light nigori sake) First time to drink "Hikkami" ✨ despite having chosen a lot of fish for the entrée! The ooze was going down nicely, so we mixed the top clear liquid with the light nigori and compared the two by switching sake cups 😋! [Gugumi-nomi] The supernatant The aroma of mellow and sweet rice, the umami that flows smoothly into the mouth, the sweetness and sharpness, the clean and sweet aftertaste similar to that of rum, and the light bitterness that lingers on the tongue. When the oriki (oriental herb) is mixed in, it adds impact to the umami, but the impression of freshness remains the same. [Mokkiri] ◯The top clear layer of rice. The aroma is cool and sweet with a hint of rice, and the mouthfeel is reminiscent of soda or cider, with a refreshing and crisp umami and sweetness that finishes with a refreshing and pleasant aftertaste. When the orikomi is mixed, the umami also increases, but the refreshing sweet and clean aftertaste remains the same, and you can't stop yourself from having another cup. I wanted to pair it with fish, so I served it with Ehime kanpachi sashimi and Shizuoka bonito tataki. 🐟️

Invited by my in-laws to Ashihara Onsen [Grandeur Hosen], there are two types of sake available for dinner, so let's have a glass of this one after the "proprietress". Onisakuza Junmai Sake Junmai Kanzake. The sake has a clean rice aroma, a clear and clear flavor, a smooth finish, and a shallow and pleasant aftertaste. It was delicious cold, but as the label on the back says, the brewery recommends heating the sake 🤔. I feel like the all-you-can-eat all-you-can-drink policy has the disadvantage of not having a wide variety of sake 💦. This is the main brand of Kubota Shuzo, the brewer of the previous "Onna" sake, and the lineup also includes Maruoka Castle, a honjozo named after the old Maruoka town where the brewery is located, and Junmai Ginjo "Isshu Keijo" (Junmai Ginjo) ✨. The food is of excellent quality, with dishes such as Wakasa beef steak, which belongs to the same A5 grade as Matsusaka beef, and sashimi and sushi using the freshest local fish, and rare parts are served without announcement, so it is fun to visit the buffet corner often 🥰. I brought my own sake because I thought it would be lacking, but after returning to my room and lying down, I fell asleep until morning 🤣. I must have been exhausted😅.

Last weekend was a three-day weekend when the cold wave had abated. On Saturday and Sunday, I worked onsite at events from early morning until late at night, returning home shivering from the cold and exhausted 😵. The week before that, I had also worked on site in the cold, so my accumulated fatigue reached its limit. On the last day of the three-day weekend, my in-laws had invited me to a hot spring, so the whole family went to Ashihara Onsen, a hot spring in the backcountry of Hokuriku. ♨️ The hotel we stayed at this time, Grandeur Hosen, is an all-inclusive hotel that includes accommodation and all-you-can-eat breakfast and dinner, and has been gaining popularity lately, especially through word of mouth for its delicious dinners✨. Now, let's have a taste of the sake that was served with the all-inclusive dinner 🍶. The sake is called "Onnajo Dry Junmai Ginjyo Nama Storage." The aroma of the rice is full and delicious, the taste is smooth and smooth, the aftertaste is clean and gentle, and the bitterness is felt on the tongue at the end. This bottle is made by the "Proprietress's Association" made up of the proprietresses of the inns in Ashihara Onsen, who participate in rice cultivation and sake brewing, and serve and sell this bottle at each inn. [All the proprietresses participating in the proprietresses' association are certified sake tasters, and are playing a role in promoting local tourism, which is on the rise with the opening of the Shinkansen bullet train 😁. Brewed by Kubota Sake Brewery in Sakai City, which is adjacent to Awara City.

February 20 was our wedding anniversary and also the day of our biannual health checkup this year✨. My wife and I will go out to dinner again, but first we celebrated the day with a bouquet of flowers and her favorite Japanese sweets 🎁! I can't believe that it's already been a year 😁Let's have a drink to commemorate the occasion 🍶. Shiratakesen Junmai Sharikuchi Shinkoku Nama I got hooked on Hakugakusen from the old "Hakugakusen Limited Edition", but it was this "Shinkoku Nama" that got me even further into the swamp. [The gulping cup.] The aroma of rice with a hint of sourness, the feeling of gas on the tip of the tongue, the fresh and soft umami, and the soft and gentle aftertaste, and the aroma of rice that rises softly. [Mokkiri.] A cool, full rice aroma, a slight gassy feeling on the palate, and a fresh, soft, gentle umami and acidity that finishes with a refreshingly soft and gentle aftertaste. A perfect fusion of the softness of nama-shu, the umami of junmai dry sake, and the acidity typical of "Hakugakusen"! I knew this was going to be good! As we didn't have any fish to get drunk on, we had grilled beef ribs on a ceramic plate! The sweet fat of the beef, the soft umami mouthfeel, and the sharpness and lingering acidity go well together 🥰.
