We finished off our drinking comparison with a bottle of "Ginjokuraudo," which seemed to be the restaurant's original sake.
Ginjokuraudo Tokusen Daiginjo
The aroma is reminiscent of a melon, the mouthfeel is clear with a sweet umami taste, and the finish is clean and fruity!
I like this type quite a bit. When I checked the etiquette on the back of the bottle, I found the name of Takeuchi Shuzo, which had its sake brewing license revoked at the end of last year.
The production date is also around that time, so I thought it must be one of the bottles that we can only drink what we have in stock now 🤔.

I was told that Sakurabar was now open in two parts and would be closed within two hours of entering the bar, so I made a reservation at Honmaguro Ginjo Kurado in front of Kyoto Station until the train left for home 🥰.

The sweetness and umami of "Echizen-misaki" matches the aroma and taste of ume, and is quite delicious.
When I asked the waiter if I could take a picture of the cellar to confirm the details of the sake, he told me that I could take a picture and if there was anything I wanted to drink, he would be happy to bring it to me from the cellar.
After enjoying crab 🦀 for lunch, I headed home from my parents-in-law's house and returned to Fukui Station 🚃.
I took the Echizen Railway and took a bath at a bathing facility.
After cleaning myself up, I went to the Shinsakae area in front of Fukui Station, which has recently undergone remarkable redevelopment 🚶.
There, I took a peek at Maruko, a bar that has quickly become a popular restaurant since it opened this year, and saw that there was one seat available at the counter, so I entered the bar.
I checked the menu and found that they had a brand of sake from Hiroshima, which is only one store in the prefecture that carries it, so I decided to start with that first 🍶.
Karasuwa SORA-iro no Kage Junmai Ginjo Unfiltered Nama-Ginjo
A new brand by the 7th generation who took over the Asahiho Shuzo brewery, which brews "Asahiho" in Hiroshima.
The word "Urin" is said to refer to the sun, and it is said to express the wish that people will drink this sake in the sun.
[The name "Sake-no-wa" has not been registered yet, so please register as a new user.
It has a fruity aroma like plums, a clean and refreshing flavor, and a gentle and soft aftertaste.

I thought this was the best fit with the first one [seikogani] and all three types of sake, so I ordered a Sandesi bottle and sipped it with my father-in-law and brother-in-law 🥰.
My brother-in-law, who is not a big sake drinker, especially raved about how good it was ✨.
My father-in-law also enjoyed the sake in his shell!

And the fourth one I was told to drink because it's interesting.
I didn't know about this one, but it is a whiskey produced by Nishi Shuzo, which brews Tenpyo and Tominohozan shochu.
I had it on the rocks, but it's quite light in body, so I think it would be drunk with a highball!

In a word, very rich 😋.
I'm sure there are people who would like this but it's a very high class drink.

SENKOKU UA 1st 2024 AKA AKA, NAMAHASHIZUKURI".
It has a clear acidic aroma, a rich umami and acidity, and a refreshing aftertaste.
Personally, I think I like it better than "Ao" before "Edogari" 🤔.
Last but not least, the blue cheese pasta with pear and prosciutto ham.
The pasta is quite thin like somen noodles, and the salty flavor of the prosciutto and blue cheese is delicious 😋.
