Today we celebrated Kaorin's father's birthday at our house, but since he only drinks beer, we weren't planning to drink sake. But after Kaorin's parents came home, we decided we wanted to have a little sake, so we opened a bottle of this sake that we had stocked up on during our Yamaguchi brewery tour 😀 This sake is a limited edition sake from a brewery, but we heard that it is not so much a specimen itself. This sake is a limited edition sake, and while the specs themselves are unheard of, the taste is also extraordinary 😇. The color was a beautiful clear yellow with no signs of aging 😀. The first sip is beautiful and fruity, but then a complex aged taste follows at once 😀. But that taste is not at all unpleasant and leads to a delicious taste 😀. This was a really nice new taste discovery!

Today we had Mikotsuru's Kinmon Nishiki 😀. This may be the last fire-brewed sake before the transition to nama-shu 🤣. I had a Yamadanishiki Miko-chan a while ago, but I still think I might prefer Miko-chan made with Nagano sake rice😇. The taste is much more subdued compared to the raw version, but it was still a delicious sake with a fruity feel 😇.

Today we came to the new sake festival at Tomihisiki's Fukurazan in the morning 😀. Actually, the day we drank Shinmasa last week was the day we took delivery of our new car 😇. Usually when Kaorin and I tour sake breweries, we walk, but today was our first drive in the new car 🤣. Since I was the handle keeper, Kaorin was in charge of tasting today 🤣. Kaorin said the new sake was fruity, sweet and delicious 😀. Kaorin said it was fruity, sweet and tasty 😀 The brewer also said it had more sweetness and umami than usual 😀. I bought 2 bottles of new sake nigori and new sake festival limited edition nigori, so I will enjoy them slowly at home 😇

We had a bottle of Masumi from the Shinshu Secret Sake Hanpukai that I've been posting about for a while now. Masumi is a well-known sake brand, but I have not had much contact with them at home except for a sparkling nigori at this New Year's 😅. This sake is an assemblage of Miyamanishiki and Yamadanishiki, so I was not familiar with the taste 🤣. It was an interesting sake with a gentle fruity image on the palate, followed by a firm acidity and bitterness that changed the impression of dryness at the end 😀. As one would expect from a company with such a long history and tradition, Miyasaka-san produces some great sake 😀.

Today we had another sake from the Shinshu Specs Ichiyo Hanpukai...Tsukiyoshino 😀. The sake rice used is Yamae Nishiki 😀. Well... this sake is really delicious 😀 The aromatic and fruity taste comes with the umami and finishes off nicely. It seems that our family loves sake that is fruity and has a strong umami flavor, but with a clean finish that is not cloying 😀.

This sake arrived from the Shinshu secret sake hanpukai 😀. The only thing we know about the specs is that the rice used is Aizan 😀 But there is a great story behind this sake.... But there is a great story behind this sake... it was actually supposed to be made by Furuya Sake Brewery, which brews Wawa Wawa, but the brewery was destroyed by a fire 😓. However, the Aizan sake that was prepared for this secret sake hanpukai remained, so Mr. Osawa lent his warehouse to the brewery to make this sake in cooperation 😅. Furuya Sake Brewery is currently working towards recovery with the help of other sake breweries around them 😇 The taste was the most robust Nagano sake I've ever tasted 😀 The aroma was gentle and sweet 😀. The aroma had a gentle sweetness to it 😀. I would love to try the revived Furuya Sake Brewery's Wawa Wawa someday 😇.

Today we had some Takaten-san that arrived from the Shinshu secret hanpukai 😀. As promised, the specs other than the sake rice are a secret 🤣. But the sake rice is an assemblage of Yamae Nishiki and Hitogokochi 😀. The aroma is not so high, and the smell of cemedine is quite strong, but the taste is a harmony of umami and acidity with a sense of fruitiness 😀. This is my first time to try Takaten and it is still a delicious sake 😇.

Following yesterday's Ash, today we opened a bottle of Flax Cat Sparkling 😀. It's hard to open a bottle of a sake that you can't open often, so you have to be very active to open a bottle 🤣. All I've been able to get lately is regular Flaxcat, and it's been a really long time since I've had a bottle of Flaxcat Sparkling 😀. I guess it depends on your taste, but I personally prefer sparkling 😇. But still, it's a very energetic drink and I haven't had a blowout in a while 😅. I couldn't believe it was made in a wooden vat with the same raw yeast as Ash, I could feel fruits reminiscent of muscat, probably from the acidity derived from the bubbles😇. Personally, Flax Cat Sparkling is one of my top favorite sakes from Shinsei 😀. I also enjoyed today's sake comparison😇

Today was a nice day, so we opened a bottle of KOCHIRA Shinsei 😀. I've had most of the Niimasa Colors, but this is the first time I've had the all-black label Suiboku 😀. I've heard that it tastes better if it's aged for a while, so I aged it in the freezing cellar for more than a year😇. I could not feel any aging at all, in fact, the taste was rather beautiful and I could feel the fresh yeast and wooden vat feeling 😇. I knew that Shinmasa is a great sake 😀.

We had just purchased another bottle of Otters from the Otters' brewery, so we compared Otters 😀. This is BLUE, which Otters started making in the US 😀. I was surprised to see that the taste of BLUE is quite different from that of Toryumon 🤣. It's a delicious sake, but I don't think the name "Ottersai" is quite right 😅. I'd like to ask the brewer next time I talk to him if it's the taste made for American tastes or if it's the difference in water 😀. By the way, I heard when I visited Kido the other day that they are going to start making sake in the US too 😀. Otters make their sake next door in New York, but Kido-san is planning to start on the West Coast😇. But Heiwa Shuzo said they won't ship under the name Kido because the water is still different 😀.

Since we've had two posts in a row of drinking alcohol that is so unlike our family, I'm going to continue with another oddity 🤣. It's Otters' Dragon's Gate 😀. This is also a sake that we bought when we visited the brewery. What's so unusual about it is that Otters have been trying to reproduce the taste of their sake without having a toji (master brewer), but as a challenge, a pair of young brewers went through the whole process of making the sake from washing the rice to the top of the tank and made this sake expressing what they think is Otters' style 😀. The head brewer, who happens to be a good friend of mine, told me that he would not release any sake that did not pass his check 😅. This time Mr. Hori and Mr. Yamaguchi expressed themselves Otters😇. From the attack to the mid-palate, it had the same Otters' nuance as usual, but the usual Otters' sweet and umami taste lasted for a certain length of time and then snapped, whereas this one seemed to fade out gradually 😇. Which one is better is a matter of taste, but that's the only difference I felt 🤣. I thought it was wonderful that young brewers are growing up like this😇.

We recently visited MURASHIGE SHUZO in Iwakuni City. This is Uraginkan Kuromatsu, a limited edition sake from that brewery. When poured into a glass, the color was more golden than yellow, and the aroma was rich with a hint of caramel 😀 It was a matured sake. It was a matured sake, like a so-called "matured sake" 😀. It's not likely that we would ever choose such a sake at home, but this time we took it home because it was a limited edition from the brewery 😀. It tasted rich, thick and sweet 🤣. I compared the taste of the cold sake and the room temperature sake, and while the cold sake tasted a bit angular, the room temperature sake tasted rounder and tastier with a touch of rice 😀.

Today's sake is a very unusual sake recommended by my usual liquor store in Ibaraki City. The label might make you think it is this year's new sake, but in fact, it was freshly squeezed last year, kept refrigerated for a year at the brewery, and bottled recently 😀 So the date of production is recent 😀. So the production date is recent 😀. The initial aroma is of a strong rice aroma 😀. The mouthfeel is full of mild rice flavor 😇. From there, it finishes with a slight sweetness and firm acidity 😇. The store owner said that it is often bought by people who like a strong taste, but even my family who likes sweetness and flavor could enjoy it 😇.

Walking in Suita's Expo Park with sake for the first time in a while: 🚶‍♀️ Of course, I had been walking at the Expo Park during the summer, but I used to drink only canned chuhai during the hot season, but now that the weather has improved, it's been a long time since I brought my own sake 😀. The sake I brought was TYPE-FY2 from Fukuoka Wakanami Sake Brewery 😀. I've had Wakanami's sake many times, but this is the first time I've had it 😇. The sweetness of the rice spreads on the palate, followed by a fruity sweetness with a hint of apple 😀. It was a very tasty sake, and it sunk into my body that was starting to sweat after walking in the sunny weather. 🙆‍♂️

Today's sake was a Junmai Daiginjo by Yamazan 😀 It is hi-ire, but it was fresh and tasty with a raw feel 😀. It was fire-aged, but it was a delicious sake with a freshness that made me feel it was still raw 😀. I felt it was in the same vein as Velvet from Motomine Tsuru, which we compared and it didn't feel out of place when we drank them side by side 🤣. Well, we are not good with taste, so maybe we just couldn't feel it well 😀. But anyway, this Yamazan Junmai Daiginjo was also a very tasty sake😇. And of course, Velvet from Kibotsu Tsuru 🤣.

We received this in November exactly one year ago from Kiho Velvet in Saga 😀. This year, I was able to enjoy it again with the tax payment from my hometown in Kiyama-cho, Saga Prefecture 😇. The flavor is just amazing and comes to the forefront with full force 😀. The sweetness comes with a citrus-like acidity and finishes off nicely 😀. I was happy to be able to enjoy it for the first time in a year😇.

When I went back to my hometown in Shimonoseki City, Yamaguchi Prefecture, I stopped by Nagayama Sake Brewery in Asa 😀 They make a sake called "Yamazaru". They make a sake called Yamazaru, but I guess it is not so well known outside of the prefecture ❓🤣. We bought two bottles of the brewery's limited edition sake 😇. Here is one of them 😀 I imagined it would be a junmai daiginjo and have a gentle taste, but this drunken monkey was quite a strong man 🤣. The sweetness, umami, spiciness, and acidity are all very pronounced, but the flavors don't fight with each other, it's a great balance 😀. Of course, since all the flavors are present, the overall taste is very strong, but I don't dislike it because I can taste the individual flavors so well 😇. I found a great sake 😀

We had our first sake, Shikishima-san, in hiyaoroshi 😀. It was a very doshy and assertive sake for our family 🤣. The label on the back said it was a classy gorilla 🦍, I kind of thought that's what it meant 🤣. I'm still a little inexperienced in our house, sorry I can't comment too properly 🙇. By the way, the day before, I took advantage of my day off to walk from my house to a spot right on the takeoff/landing course of the new Osaka Airport in Toyonaka City, where you can watch the flight from the side 😀. It was quite impressive to see a jumbo landing 🤣. It was worth the 16km walk 😇.

Today we had a Junmai Daiginjo from Harada-san 😀. Kaorin won this Junmai Daiginjo from Mr. Harada in Yamaguchi, Japan at the recent Yamaguchi Prefecture Sake Restoration Meeting held in Osaka 😀. I've had Harada's junmai ginjo and seasonal sake before, but this is the first time I've had a jun-dai 😀 It has a solid taste 😀. It has a very robust taste 😀. I don't get a very strong aroma from junmai 🤣. But the umami is amazing 😀. It's a very rich umami 😀. Moreover, I don't feel much bitterness or acidity, but it finishes nicely 😀. This sake was also a delicious sake with strong umami 😇

㊗️800 check-in😇 I just found out that I will be celebrating 800 check-ins 😇 Of course, I chose Shinshu Kamerei 🐢. The last time I checked in, the number was always this sake, so I chose 🐢 this time, too😇. This is a limited edition sake that I bought at the brewery during my trip to Ueda this spring 😀. It's a very well-balanced sake, not too sweet and not too sweet and yet not too cloying 😀. I think Shinshu Kamerei is the best sake for me right now. I feel happy just by drinking it 😇. By the way, the Dodgers had a great game today...I'm looking forward to seeing Ohtani in action in the final game tomorrow 😇.
