Yukimo, the only nigori sake of Izumo Fuji, was recommended to me on my first visit to a sake store in a while 🤗. It has an exquisite flavor that is not too sweet, with a combination of aromas reminiscent of pears and green apples, and the umami of rice 😚.

It is a souvenir from East Hokkaido, No.2 It starts with a slight sweetness, followed by a milky aroma peculiar to Yamahai. There are also subtle woody and apricot nuances. It is a little far from being modern, but the acidity is high and the aftertaste is clean and refreshing 😌.

While on a business trip...I visited by shared bike 🚲. I decided not to buy a bottle of sake with a hole in the bottle because I would have to carry it around for a long time. The owner told us that this was the last of the tanks before the new sake is released 😙. It was sweet and mellow, with a subtle chilli and milkiness that was very deep and rich 😚. Another wonderful sake store 🤗!

Souvenirs from East Hokkaido, No.1 Sake rice is Ginpu or something like that. Light malted rice aroma. It has a smooth and smooth texture, with a nice rich and chili flavor. The aftertaste is a good acidity and umami, and it is a medium-high slightly dry umazake 😚.

As the days went by, the aroma that bothered me faded, did it volatilize with the alcohol? As it got acclimated, the richness and umami could be felt more. This is a 3 year old bottle that had been quietly sitting in the fridge at the liquor store. I couldn't help but notice it every time I visited the store, so I finally picked it up 🤗. I remember it was from a series that was particular about rice polishing. It is light nigori. It has a chili flavor. It has a citrusy acidity that overlaps with the koji aroma, and a freshness that reminds me of pears.

📍 Ito-Yokado Utsunomiya I was curious about this because when I searched for Sogape in Sake no Wa, it came up as a brand with a similar flavor 👀 I found it at a supermarket I stopped by on a whim! I was wondering if there is a demand for it because they even had a bottle of Sandesi - a bottle. The aroma of cork and oak aroma is faintly wafting through the bottle. It had a sweet and sour taste reminiscent of white wine 😚.
