This is a 3 year old bottle that had been quietly sitting in the fridge at the liquor store. I couldn't help but notice it every time I visited the store, so I finally picked it up 🤗.
I remember it was from a series that was particular about rice polishing.
It is light nigori.
It has a chili flavor. It has a citrusy acidity that overlaps with the koji aroma, and a freshness that reminds me of pears.
