It is aged for about a year at low temperature. 😄 Soft, like pear or apple. Great balance of sweetness and sharpness 🤩. Bought yakitori, from the Depa. with a salad. I had a garlic and a bowl of suta-don. I love it 🤭. My favorite shimofuri from the Loman series. Loman. 😍Like the spring hazy lomang. The pizzazz has calmed down and become shittier and It has become more attractive. 😋 With a beautiful gentle mellow sweetness, The aftertaste disappears nicely. 😚. I like it best when it's warmed to human body temperature rather than cold. I really wanted to match it with bonito tataki. but this year, bonito is hard to find. I really wanted to pair it with bonito tataki, but they don't sell bonito this year 😭. 😭 I'll have a glass of it cold, just like at Naraman, I enjoyed the rest of the sake from lukewarm to hot 🍶. I enjoyed it cold. The taste was very good. It has a subtle sweetness of ripe melon, The bitterness and pungency are more subdued than that of Naraman.
