Today, we drink at home😊. Choice is Hiraizumi from ☝️ I'll drink it well chilled first ✨ It's quite rich and has a strong rice flavor 😊. It also has a good acidity like yamahai 😆. The aroma is weak ☝️ Next, I'll try it hot 😁. The richness is still the same, but the rice flavor is softer, the acidity is milder, and the aroma is more spread out...yummy 😆. Sake warmer is now in use 😆.

Next time, I'll have a hot sake 😁. I tried Gunma Izumi ☝️ This sake is labeled Junmai, but looking at the degree of rice polishing, it's Junmai Daiginjo specs...wow😳! The taste has a sense of maturity, but with a gentle sweetness, moderate acidity, and dryness, but all in a gentle and pleasant way 😆. Dusty and delicious...just like that 😁.

This is also a Noto reconstruction support sake😊. This sake has a very "Kaze no Mori" feel to it when you drink it 😁. The petitiveness, the fruity, the bitterness, the spiciness... it's "Kaze no Mori" after all 😅. It's a delicious sake 😆.

Today, I went out for some reason and ended up having a New Year's party with my wife...so we went to a restaurant. We were told that there was a sake to support the recovery of Noto, so we ordered it immediately: ☝️ First up was a reproduction of Okunoto's Shirakiku from the Aburacho Sake Brewery. It's a Junmai Daiginjo, but it has a strong rice flavor, not dry but sweet 😊. It is a delicious sake 😆.

This is a cup of sake I got as a gift 😁. I got it at the end of the year and finally opened the bottle✨ I thought it would be room temperature, but I tried heating it up: ☝️ It's smooth and easy to drink, with a bit of spiciness, but you can easily enjoy it without feeling too much alcohol ✨. Surprisingly delicious sake 😁.

Last but not least is La Jomon😁. It's a rare sake with three times more koji 😊. The aroma is fruity, fresh, rich and deliciously sweet✨. But it also has a strong acidity that makes it quite an interesting sake 😁. I'll be working tomorrow. I have to switch 👊.

Next up is the rainfall 😁. It is a 2 years aged Junmai Daiginjo 😊. Although it is aged for 2 years, the mouthfeel is clean and smooth without any spikes, with a good amount of sweetness, juiciness, and acidity, it is a delicious sake 😁.
