The Sentori re-brand, Edogari, is highly rated by everyone. I would have liked to compare various kinds, but my refrigerator, liver, and pocketbook didn't allow me to do so. I bought it in February and drank it in March.
The rice polishing ratio is undisclosed, but the aroma is better than that of a ginjo. It is fruity. It is sweet with a slight fizziness. And there is a hint of acidity that you can feel as you drink. It is a fusion of Edo and 2025 Japanese techniques. The addition of Domaine Yamadanishiki makes it the best.

I just saw this sake on YouTube and wanted to drink it. I had bought it because I felt I had never had sparkling sake before, but I had missed the opportunity to drink it.
So, without further ado, let's get to the sake!
It smells very sweet, like pears or muscats. It seems light. The carbonation was amazing, so much so that I was relieved that it didn't overflow. It's a perfect example of secondary fermentation in the bottle. The water has a very tight, slightly viscous mouthfeel, and the carbonation is sweet and strong! However, this is without nigori. When the nigori is included, the sweetness becomes milder, and the dryness and sweet-sourness marry like a white wine, and the bubbles quench the throat. The aftertaste is dry and crisp. If the wine is cloudy, it can be drunk as a strong white wine. If you want to drink it with cheese, strong flavored food or spicy food, it would be a good match. Sentori is delicious. Sentori Classic Fired 🫧 I underestimated it, it blew me away 🫧 It's an Orihara made in January, so it's fermented and healthy 😀 Milky aroma. The first impression my tongue got was shuwashuwa. Gentle sweetness, moderate sourness, and lingering bitterness. It also has a sports drink-like taste. I'll just taste it today and enjoy it on the second day!
Purchased in Utsunomiya, Tochigi. Surprised that it was still in circulation, I bought it immediately.
It has a clear melon-like aroma with an orikarami-like acidity that makes it very easy to drink. I can see why this sake is so popular.
