Machida Sake Brewery is often seen at Sake no Wa! Not many liquor stores around me sell it, and it took me a long time before I decided to drink it, but I was able to purchase it ✨. It has a muscat-like aroma and a chili gasiness. It has a beautiful mouthfeel and the sweetness is juicy and expansive, and the acidity is soaring through the nose. I've had other sake like this before, but it's refreshing and easy to drink. As others have said, it is certainly a good value for money. It is a common taste, but I think this one is the most refreshing 🤔.

In preparation for the upcoming season, I bought a copy of Nonbei Yokocho, which I also saw at Sake no Wa ✨. We also bought a cup of sake at a nearby liquor store to check the operation and had it hot ✨. Sipped at room temperature, it is a refreshingly spicy sake with a deliciously mellow flavor. Warmed to lukewarm, it has a tingling sensation on the tongue. Hot-warming lightens the taste and makes it refreshing to drink! I have had hot sake before, but I was indifferent to the brand and taste and drank it with the mindset that the alcohol would not linger the next day, so I would like to taste it this year 🥰.

I tried to buy this one at the liquor store, but they explained that the aroma was not to my liking, and I had a bad impression of Miyamanishiki, so I stopped and bought Kinmonniki. I thought it was drinkable, so later I bought the Yamae Nishiki and tried it ✨. I don't want to be rude to Sake Chiteno, but since it's online, I assumed the worst of the word of mouth I saw 😅. It smells like a lactic acid twang. It has a yogurt-like flavor and also smells like honey in yogurt. Yes, depending on how you look at it, you can imagine that unpleasant smell of an over-fermented rainy season 🤣. There is no gas, and the mouthfeel is soft. The sweetness is supported by the light umami, and the acidity is unexpectedly refreshing, but I also felt the sourness 🤔. It was sweet and sour, not gobby, but surprisingly drinkable 😊. Second day The aroma was the same as yesterday's aroma, but the rest of the aroma was juicy and sweet, with a little bitterness 😄. Fourth day The aroma of lactic acidity is the same as the second day, but the sweetness is a little more clear and juicy, and there is a hint of bitterness 👍. Third bottle of Genmai, this one tasted the best. Maybe I have a stupid tongue 🤣🤣.

I was off today, so I was buying sake and eating, but the sky was bright red in the evening, a rare sky. The last time I drank Miyamanishiki, I didn't like the peculiar feeling it had when it moved from umami to sourness, so I bought Kinmonniki to give it another try 😊. The aroma is mild but sweet and the mouthfeel is soft. The taste has a sense of spreading umami, but it is not grounded, and the acidity is dry and sharp, and it passes through the nose. Finally, the bitterness slowly finishes it off. It has a unique sharpness. I paired it with tempura as a mealtime sake, but it also has a mellow sweetness, and I think it is better and easier to drink while eating 🤔. On the 4th day, there is a slight sweetness like honey. When you feel the sweetness, it becomes better to drink the sake alone👍. The sweetness is more pronounced after a few days than when the bottle is opened, and the acidity is soft and rounded, but the sharpness is still there. The balance improves and it is easy to drink. But I think it still has a sharp taste 🤔.

Sake and Fish Shindo Drank at Sake and Fish Shindo I saw it at Sake-no-Wa and wanted to try it, so I ordered it, but the first one that came was the last leftover Secret Hide-No-Nama-Hashiro, so I didn't have enough of it, so I had to add it to this one 😃. I felt like I was getting a good deal because it was a different kind, but I will start my review with the Densetsu Yamahai. I don't know the year of manufacture so I wonder when 🤔. It has an aroma but I couldn't really smell it😅It wasn't fruity. The gas feels tangy on the tip of the tongue. The mouthfeel is gentle, and the soft umami spreads slowly, then a strong acidity comes in, but it is also sweet and sour. When drunk as a mealtime sake, it also has a fruity flavor. The aroma is mild and there is no gas, and it has a gentle mouthfeel with a hint of umami and a light sourness. I was disappointed that the taste was not what I expected 😅.

It's a limited edition version from the nearest liquor store. I just clicked the pre-order button and bought it 😅. The sake is made with Gohyakumangoku from the Mita area and is bottled as a raw sake ✨. It smells like green apples. Strong fizziness (not quite the MicroBubble of Tasake, but strong). Refreshing sweetness and flavor, with a hint of The aroma is also apple-like. No bitterness. On the second day, it is quite juicy and sweet, with the same fizziness, but with a little bitterness. On the third day, the fizziness, juiciness, and bitterness were the same, but I noticed some cloudyness towards the end 😅It also has a silky feel. Overall, it's a very tasty sake and I'm glad I made the reservation 👍I felt the complexity was unexpected due to the strong fizz, so I wonder if I'll be able to taste it better once it's out 🤔.

I also drank Jyushiyo at Sake and Fish Shindo for the first time in a long time! I chose Junmai Ginjo and what came out was Akaban Omachi... I've never had Omachi from Jyushidai and I like Omachi, so it was a winner😍. But when I looked online, I saw that it was sold out in R4BY. And the production year photo shows it off😅. It has a fruity aroma like green apples. It has a very beautiful sweetness and a gradation that starts with the sweetness ✨ and ends with the acidity that naturally fades away. No cloying taste, the hint of pear aroma was a fruit with no cloying taste.... The photo is of cream cheese with sake. To be continued tomorrow

Sake and Fish Shindo is an izakaya (Japanese style bar) with a relatively large selection of pre-prepared sake and an extensive menu of 3 different kinds of drinks. The problem with this place is that they have a brand name, but it's just Junmai Ginjo and you order it with a QR code. You have to ask for the details 😅and I think most of them are a bit old when you look at the production year. This time, I ordered several brands, and when I saw the word "Kitajima-san", I clicked on it! What came out was an odd one, which I didn't expect 🤣🤣🤣. This time the rice is from Shiga Asahi, an established Omi rice brand, which once disappeared due to difficulties in cultivation and early maturing 😳. Let's eat ✨ I couldn't smell it. There is no gas. The mouthfeel is smooth and clean. It has a classical feel, a gentle umami, a refreshing acidity, a little sharpness, and a beautiful aftertaste. I bought a sake at Kushiro Airport 😉 I was thinking of decorating a ceramic piece of sake rather than a carved wooden bear after drinking it 😉. Pon-epele means bear cub in Ainu language! Fitting? Deep fried oysters from a nearby liquor store, Kissho😍The oysters are fried using the vacuum fry method and are crispy and have a delicious oyster flavor 😆. You can't smell them. They have a mellow taste. Sake with plump flavor and clean acidity. It is slightly spicy but light, so you can drink it easily. I enjoyed it with fried oysters as a snack. It's just a sandesi, so it was gone in no time😅.

IMADEYA's last is Takashi no Tsukasa! I had wanted to drink it because I had enjoyed it at a yakitori restaurant in Tama Plaza before, and happened to see Hina Hana Mama's post about it, and since it was on the menu, I decided to order it 😉. It has a mild fruity aroma. It has a soft mouthfeel and a moderate sweet/umami taste, but the hint of aroma is slightly melon. The acidity is also mild, and a sweet-tart aftertaste lingers. I found out later that it was dry, but I have notes from when I drank it, but there is no mention of dryness, and I don't know if it's because it's super soft water, but I didn't feel much of a dryness 🤔. Here is IMADEYA's menu for this time. Shinsei was listed on another POP ✨.

The second drink of IMADEYA's Kaku-uchi, I did not come here for Shinsei, but I could drink Shinsei Ecru and Nirvana Kame this time 😁. Unfortunately, the Shinsei bento that Hiro-san introduced was sold out 🤣. I will have Wakasagi fritters as a side dish... Mild aroma. No gas, and the mouthfeel was crystal clear. We went to IMADEYA Sumida for a corner bar. One of the three types was sold out, so I got the ecru ✨. It has a green apple-like aroma with a hint of bubbles. The mouthfeel is refreshing...the moment I drank it, I felt the sourness of the acidity. I also sense a gentle flavor, but it's light and lemony😃. It was an easy drinking ecru that you can drink with ease 😃.

This is a regional limited edition sake purchased at the Kamikawa Taisetsu Shuzo Hekiun Brewery. It is a sake developed in collaboration with students from Obihiro University of Agriculture and Veterinary Medicine, and it looks like they are currently working on their fifth effort. Since last year, it has been available at Hekiunkura and University Co-op as well as at liquor stores in the Tokachi area✨. Now for my impressions, On the first day, it smells like green apples. I also feel some pungent aroma of cemedine 🤔. The mouthfeel is beautiful. The sweet-amami taste is clean, and the sharp acidity stands out, and the bitterness finishes it off with a nice balance, but a little sharp 😊. But it is similar to the sake I drank 🤔I looked at the logs and realized my lack of vocabulary 🤣🤣. On the 5th day, I had to take a break due to company and a day off from drinking, but the stimulating aroma is gone and the sweet-amaiji flavor is quite juicy. The acidity has rounded out, but I have the impression that the bitterness has become stronger. However, I can't remember a similar brand 😅. Can everyone register a new brand normally? The only brewery we stopped by during our trip to Hokkaido was Hekiun Brewery in Obihiro by Kamikawa Taisetsu. This brewery is located on the grounds of the new Obihiro University of Agriculture and Veterinary Medicine ✨. I was attracted by the shop's limited edition sake and bought a bottle of the draft. I was in the middle of a trip, so it arrived yesterday via courier😍. The aroma is subtle and banana-like. It has a beautiful mouthfeel, with a clean sweet and sour taste that spreads in the mouth. The finish is dry and refreshing. The minerality is also very refreshing and you can gobble it up 👍. On the second day, the nose has a dense sweetness (like Murayu) with a hint of sourness, but it is not too sweet because of the sourness ✨. It's easy to drink and I can see why it's so popular!

The second drink at Hotaru was a 🍶 made with Taisetsu no Kura, Hokkaido's Ginpu, produced at Godo Shusei's Asahikawa plant. The aroma is mild. It has a clean mouthfeel with a clear sweet umami flavor. From there, it is a delicious sake with a crisp acidity and a good balance ✨ This is easy to drink ✨. The next day we leave early in the morning, so after this, when I think of Obihiro, I think of Indian curry (not Osaka's Indian curry!). ) and back to the hotel by 9pm😅. The next morning we were lucky enough to see the sea of clouds in Tomamu on a clear day 😆.

On the second day of our trip, we stopped by Hotaru in front of Obihiro Station and had a sake that we had not yet had. I've seen the Kunimare brand name at sake breweries, so I wondered what it tasted like 🤔. I couldn't taste the aroma when I drank it without eating anything. It has a gentle taste with a clean and pungent flavor. I had fresh lamb chops, Tokachi steak, cheese, etc. and the umami was fruity 🍶. We rode horses on the beach on the way to the first day, then went to Nemuro and visited Cape Nosappu, where we could see Kunashiri Island and the Himai Islands in the distance✨. On the way, we bought a bottle of Nemuro's local sake, Kitanokatsu🍶, at the tourist information center at Nemuro station. I carried it with me until the last day and enjoyed it at room temperature 😊. The aroma has a hint of alcohol. Mellow mouthfeel! Soft and full flavor, mild acidity, easy to drink and delicious! Slightly spicy, but this umami would go well with any dish👍. It was a good sake with excellent cost performance 😆.

The second bowl at Kushiro's Kushiro Aburiya is made with Fukuji's Hanamasu flower yeast 🍶. It has a gorgeous aroma and is gentle on the palate. This sake has a full flavor and a refreshing acidity. Fukushi-san has been selling PB and various types of the inn since then in Kushiro city 🤔. The photo shows Kushiro Ramen, which is one of the four best ramen in Hokkaido. It was a soy sauce ramen with an oily coating, just like in Hokkaido. Also, for breakfast, we had salmon and salmon roe on top of oyako-don at Salmon Banya, and grilled harasu on the Robata (fire pit). I will post this on the food log later ✨. I will be back home tomorrow for the last day, but today was a great birthday, seeing the sea of clouds in the morning and marimo in the evening at Lake Akan👍.

I have been in Hokkaido since the 16th. I am still traveling, but I had Robata-yaki in Kushiro. The photo shows grilled willow flounder and grilled black hamo (Japanese conger eel), and we had a drink at Fukushi restaurant in Kushiro 😊. The sake was clean, light and dry, but when paired with a meal, it became fruity and tasted delicious👍.
