A gift from my boss's wife whose parents live in Akita: 🙇‍♂ She picked out something that we don't see here 🙏. The aroma is fresh and tart like green apples🍏. Light sweetness to a clean cut. Seems to be easy to pair with meals. As the temperature rises, the sweetness also comes out a little bit, and it also has a grape-like taste 😋. Thanks for discovering this delicious Akita sake!

The bottle was opened together with a bottle of Nanayi's white label that was purchased with Yuma. This one had a classic feel. When I opened it, it was a little hard and austere? Due to my poor health😷 during the year-end and New Year's holidays, I had opened a bottle of sake to drink it carefully at the end of the year, but I left it unopened for about 10 days 😱. Review First of all, "Yuma I bought this on a business trip to Hakata. I opened the bottle on December 26th. At that time... it was easy to drink, a little citrusy? I thought it was like a white wine, so I drank it in a glass instead of a boar cup. It has been quite a few days since the bottle was opened, but when I drank it again, it was still wine-like 🥂. It seems sweeter than my first impression 😋.

Drinking out in the past Year-end party with work colleagues (+ former colleagues) 🍶. After the first meeting at an izakaya with a Showa-era retro interior (highball in a very large mug, photo #1), we went to a Japanese sake bar that I've been frequenting recently. It was a long time ago and my memory is not so clear, so I'll just list the sake we drank for now. Tasake Special Junmai Yamahai Stable taste. Because it is Yamahai, it has more lactic acidity than usual. Aizu Miyazumi Junmai Nigori Sweet and tasty. Sentori Modern Zero I didn't find much acidity like Sengoku so far 🤔Newly brewed, changes the image of Sengoku 😳. Yui Yui Junmai Kitashizuku Sweet but not clingy, easy to drink! Harukasumi Winter Label This is a dry sake with a nice sharp taste. It is a sake that makes you want to have something to drink. Kawanakajima Genmai Special Junmai Hitogokochi I drank it last so I don't remember much 😅. I should have asked for it first! I was fine enough to go to karaoke after that... but it was hell 2 days later 🥵.

First post of the year Sorry for the delay, but Happy New Year 🙇‍♂ I was exposed to the onslaught of influenza during the year-end and New Year's holidays and had a high fever since the end of the year🥵. I was in bed for three gaga days with a fever that wouldn't go down 😭. I made it to the beginning of work... I was so busy and troublesome in January that I didn't see any salmon at all. I'm going to start working on the sake-no-wa soon! I haven't even reviewed the sake I drank at the end of the year. But I don't remember much, so I'm going to write this down as a memo of remembrance. Laughing Four Seasons 620 INTENSE I remember it was very grapey, just like the label says. And it was easy to drink and gone in no time😅.

Sangdo purchased before the summer I had missed the opportunity to drink it, so I opened a bottle at a recent celebration of my thesis acceptance. The gas is weak but the taste is very perceptible 🥰. I'm relieved to know that the taste hasn't been diminished 😁. It's dangerous because it's light and you can drink it very easily!

This is the first nigori of the season. The arrival information came in almost at the same time as the winter arrival in Omine, so I bought this one after much hesitation (because there was no room in the fridge 🥲). Mikotsuru's Active Nigori Nama Sake The bottle was opened without any problems, although it said to be opened with caution! First, the supernatant, not so sweet and characterized by umami and bitterness. The bubbles are fine and nice 🥰. The rice is fresh and juicy, with a nice rice flavor added. Fresh and juicy with the addition of a nice rice flavor. The light bitterness at the end resets the palate so the next cup goes on! It's a weekday and they ran out in two days😅.

Year-end party at work on this day. This year, we changed the venue to a casual Italian restaurant 🥂. The food was delicious and we kept drinking sparring wine! We went to the after-party to thank the newcomer who was the host of the party. The place was my new favorite, Japanese Sake Bar SQUEEZE! I hadn't been there since my last visit with Mr. Yoohee, but he remembered the owner! We had "Kachikoma" recommended by the waitress! It was the first time to see Kachikoma in hiragana 🔰. This is a draft sake. It doesn't have any gassy feeling, but it has a good umami flavor and a clean aftertaste, making it easy to drink 🥰. I can see why it's so popular! After that we drank a lot (Haneya, Eikoufuji, etc.) but I didn't take any pictures 😅. We ended up drinking a lot of shochu (flamingo orange, cool mint green, and other stylish labels) and went home drunk. There was also a wide variety of fruit liqueur nigori (Umenoyado's or something like that), which was very popular among my female colleagues. With a wide variety of drinks and a single price, this is a good place for after-parties for drinkers!

I like dark tasting sake. Here's a sake that's going into my favorites 😍. Hanaboe's Mizu-Hashiroshi O Mizu-Hashiroshi It's a kind of kijoshu because it uses mizu-hashiroshi sake for brewing. It has a very rich sweetness, with a slight caramelized taste, a hint of sourness, and a long sweet aftertaste. It was a great sake to enjoy by itself! It is fire-brewed and has a strong flavor, so I didn't notice any change in taste even after a week!

Hououmida's happoshu 🍾. Great gas on the first day. The gasiness makes it not so sweet but juicy and has a nice rice taste 😊. Very easy to drink 🥰. The second day is still gassy but sweeter than the first day😍. By the third day, the gassy feeling is almost gone and the sweetness is in full swing 😁I think it might be a bit persistent if you keep drinking it. It's the third day so there's almost no gas left and it's gone before I feel that 🤣.

The third drink of the second round of the offline meeting - the After the Kido, we had another robust Furozumi! This is Kame-no-o Yamahai Junmai Ginjo! Kame-no-o, in my opinion, is a sake with a lot of acidity! This one has a pleasant acidity, I don't know if it's because it's Kame-no-o or Yamahai! The umami that spreads after the acidity is nice 😋. After this, Yamazan Yamae Nishiki Junmai Daiginjo After this, they had a bottle of Yamasan Yamae Nishiki Junmai Daiginjo with a Sugitama label! (I also had a Flamingo Orange on the rocks in the middle of the bottle. It was my first time to drink Murasakiu and I don't remember what it tasted like 😭. We broke up after drinking well past 3am😱. Second round of drinks at the Fukuoka off-line meeting I asked the manager if I could have a heated, rich sake, and he brought out Kido's matured sake 😳! And it was low milled 😳! Low milled rice, but no weird tang 😊. The rice taste is robust and the mellow flavor spreads to the palate, yummy 🥰.

After Party of Fukuoka Off-line Meeting The place was Sake Bar Nomokka! I heard that the restaurant is open until 12:00, but when Mr. Gura called, the restaurant was open and waiting for us. 🙇‍♂ At the after-party, everyone is drinking what they like. My first drink of the after-party: Dragonfly Red Dragonfly I've been wanting to try this one😍. It's another brand of Wakanami and it's seasonal! It's the autumn version of Dragonfly. It had a strong umami flavor and a bit of bitterness 🤔. I don't remember the details but I remember it was good 😁.

Off-line meeting ninth cup, packaged sake, Banshu Yamadanishiki This is probably the last sake at the first meeting (Last in my memory and in the picture) This one is also sweet and tasty, but I remember it was very easy to drink with a refreshing sweetness (I'm not sure though 😅 because I was drunk). The 8th cup of the Fukuoka Off-line meeting was Omine 3 grains Yamadanishiki This is my favorite Omine 😍. Definitely a sweet and tasty one 😋. Yamada Nishiki is standard and easy to drink in Omine 🥰. I remember one of the people we talked to said he didn't like Aizan much because it was too sweet 🤔. Was it Mr. Gura? Mr. Gura was working the next day! I was sorry to have to go with him on such a day... but we were talking about going to the second one 🤣.

Fukuoka Off-line meeting 5th cup - Dobu, a sake brewer's yeast yeast yeast Here is my request🎉! I asked for a warmed up bottle of the traditional sake, "Dobu" from the traditional sake brewery. This sake is a dry sake with no direct sweetness, but when heated up, the spiciness becomes milder and the rice flavor spreads, and it is a food sake that cleanses the palate at the end!
