June 6, 2024 Today is Shinsei Day! It is impossible not to drink No.6 on such a day 🤔. Recently, I have been trying various kinds of alcoholic beverages without drinking Shinsei. I also started drinking craft beer and wine, and my enjoyment of alcohol has expanded. I've started to enjoy drinking not only gorgeous and fruity sake, but also dry sake that goes well with food. But today is Shinsei day🙂. It's been a while since I've had No. 6, a comparison of three gorgeous bottles! I've been drinking them for a while now...mmmm.... So good 😆. I'm not going to write a ranking because it's Shinsei day this time... I'll just say that they are all delicious in their own way 😁. I'll be posting less frequently in the summer, but please keep in touch 🙂.

I went to a tasting of Sogapère Ephis! The lineup was... 1) Numérosis 2) Numerosis Ikeda (3) Tenjinbara Riasakenaturel (4) Tagayuki Ria Sakenaturel 5) Numeroan ⑥Toroa ⑦Ilya Thornton (8) Le Sacquet Naturel 90 🍷Cepage European I compared 8 sake and extra wine, I would write my impressions of each one but halfway through I couldn't even tell the difference because they all tasted so good😅. I vaguely remember that... I think the "Tenjin Haraia Sake Naturel" and the "Troa" were the best 🙄. The rarest "Lusake Naturel 90" tasted very interesting. The complexity of the flavor was somehow like a new Masa Lapidus 🤔. Finally... Mr. Soga says he feels uneasy and humiliated that when people search for Obuse Winery, sake, which he makes as a hobby, comes up higher than wine. He must not be happy that his wine is being talked about because it is rare, while he is putting his life into his wine. But I'm still posting about it on social networking sites 😅.

The second Nara Sake is... Mimuro Sugi! It is no exaggeration to say that "Kaze no Mori" and "Mimuro- Sugi" are the top two Nara sake 🤔. The second place in the "Sake-no-wa" ranking of Nara was occupied by "Mimuro-sugi", so I decided to post them in that order. Mimuro-sugi is my favorite sake, but there is something I wanted to try once. Among the seasonal sakes, "Yamadanishiki Orikagarami Nama" and "Hana-Kyun" are both famous and very popular as adult ramune. The question is which one tastes better? I want to solve this in my mind 🙂. Yamadanishiki Orikagarami Nama Just the right amount of sweetness and acidity. Creamy, umami, yogurt-like taste is very delicious. It also has a gassy and slightly bitter aftertaste, and is perfectly balanced 😆. Huacun. It's an adult juice with a gorgeous sweetness, acidity, and a strong gassy taste. It is also very delicious 😊. Compared to the "Yamadanishiki Orikagarami Nama," it has a clearly distinct flavor! Which one is my favorite? This time it was the "Yamadanishiki Ogirigarami Nama" by a narrow margin 😌. I guess the deciding factor was the umami. I would like to do it again next year!

In April, we will post a sake from Nara! The first one is "Kaze no Mori". "ALPHA 6" respect to No. 6, "ALPHA 7" a once-in-a-lifetime drinking and "ALPHA 8" the power of the earth. First, "ALPHA 6". The aroma is mild and the mouthfeel is gassy. The sweet, acidic, and umami flavors spread in the mouth. As an aromasist, I was very curious about Kaze no Mori x Shinsei No. 6 yeast. When I drank it, I found out that it is properly Kaze no Mori 🤔 It is an amazing collaboration! ALPHA 7 This is a typical Kaze no Mori sake. Fruity, gassy and delicious 😌 but the charm of this sake is that it has a "sake-fixing medicine" on it. ALPHA 7 is tasty enough on its own, so you don't need the sake-fixing medicine, but if you add a few drops, it changes the taste 😲. I would like to try this "Sake Remover" for the type of sake I don't like 🤔. ALPHA 8 This is an unusual drink. If I were to use a wine analogy... I bought it because I heard the explanation that common sake is white wine and this "ALPHA 8" is red wine 🍷. It tastes like brown rice tea🤣It's so avant-garde that I couldn't follow it for a moment, but as I was drinking it, I realized that this is also possible 🤔It's a taste that I'm going to be addicted to.

Kozou-san, Kaze no Mori is my first sake and it is ranked No.1 in "Sake no Wa" Nara 🤔I am a Nara person so I drink a lot but.... I don't recommend ALPHA8 because of its strong taste... but if you get addicted to it, you will be in trouble because it tastes like nothing else 😁.

Today is our wedding anniversary, so we have a special drink... Jikin Junmai Ginjo Omachi Nama ✨ The last of the Jikin "Nama" series is Omachi! It's a Jikin, so it's bound to be delicious, but with Omachi, you can expect something a step higher 🙄. When I tried it... It is fresh and slightly gassy and very refreshing. It has just the right amount of sweetness and acidity. There is also a slight bitterness. It has a slight bitterness...hmmm... I thought it was a berry type 🙄 Not as good as Chihon-nishiki, but I dared to say it was a berry type. Naturally, it is still delicious 🙂. I think it's one of the top 2 in the Jikin "raw" series 🤔. The 4th year of Sakegawa started with 5 consecutive pitches of Jikin! Maybe next time I'll introduce some sake from Nara....

Today is not a special day but then again 😁. The label has been changed this year and it looks cool! The label also changed from "unfiltered raw" to "raw". I'm going to drink a lot of Jikin this year 🔥. I've been buying Jikin by collecting points at Sake-No-Ten Morishita. My SAKE CABINET is already full 😅 I'm drinking a lot, but I can't keep up 💦. But my repertoire of entrées for drinking sake is growing 🤔. Today we have "Jikin" Sake Mirai ✨. The aroma is mild. But it has a fine quality. The taste is moderately sweet and sour. There is a slight bitterness at the end 🙄. I'm sure it's delicious... but to be honest I'm not sure anymore😅. If I were to use a fruit analogy... Hachitan-Nishiki is like a pineapple. Senbon-Nishiki is a berry type. Yamada Nishiki is a little pineapple. Sake Mirai is about the same pineapple as Yamadanishiki 🤔 Yamadanishiki is clearer and Sake Mirai is a bit more complex 🙄. Next up is the Omachi Nama!

I drank it and found it to be... Sweet and sour 😌. Bitterness is less 🤔. I think it has more gasiness than Hachitan-Nishiki or Senbon-Nishiki. Slightly less fruity and fuller tasting. It has a characteristic sweetness and flavor but also a little sourness and bitterness. I have drunk Hachitan-Nishiki, Senbon-Nishiki, and Yamada-Nishiki in that order, but Yamada-Nishiki is surprisingly good, too. I used to prefer the fruity ones, but Jikin's Yamada-Nishiki has a good balance...maybe I like it a lot 🤔. Of course, you can't go wrong with Jikin!

Sake-no-wa's 4th year target is decided to be Jikin ！！！！ Jikin has a new label this season, and it looks cooler 😌. The description has changed from "unfiltered raw" to "raw". This time... Senbon Nishiki Nama ↓↓↓↓ Less chili. It has a fruity sweetness! It is slightly sour and a little bitter. I wonder if this is a strawberry with less acidity 🍓. Compared to Hachitan Nishiki, the sweetness is stronger and the acidity is moderate 🤔. It is fresh and delicious! I go 170km one way once every 2 weeks to complete the Jikin raw 🚙. I need points to buy Jikin, so I've been buying a lot of sake lately 😅. I'm spending happy time drinking at a pace of 4 gou per day 🍶✨.

Happy Valentine's Day 🙂. My 101st post is... Jikin Hachikan Nishiki ✨ The target for the 4th year of "Sake-no-wa" is Jikin! Jikin's draft sake is... Nigori Sake, Hachitan-Nishiki, Senbon-Nishiki, Yamada-Nishiki, Sake Mirai, Omachi, and Special Junmai. To become a JIKONist, you need to have a complete collection of Nama Sake 😁. I'm thinking of trying it while accumulating points at "Sake-no-Ten Morishita"! Jikon Hachitan-Nishiki Nama ↓↓↓↓ Slightly gassy but quite calm. Delicious in the mouth 🙂. The sweetness is a little subdued and the sour taste is apple? Hmmm. Feels more like pineapple 🤔. If you think it's sweet and sour, the bitterness is just right. And yet it also has a sharpness like a dry sake! This is a very complex and well-balanced sake 😂. Let's all enjoy Valentine's Day tonight ♡.

It's the 3rd anniversary of the Sake Wawa x 100 posts ✨ We'll be celebrating our double anniversary with one of the best Shinsei sake breweries, Heresy Guru. Heterodox Gyoji Kabushiki Kaisha 2019." It is a very rare sake with a lot number. Akita Sake Komachi with a rice polishing ratio of 30% and the bottle is a rare 760ml😲. This sake was stored in Mizunara oak barrels, and the most memorable thing about it is its woody aroma. The most impressive feature of this sake is its acidity, which is almost three times higher than that of regular sake. The white malted rice used in Flax Cat also reduces the umami taste, allowing for a fresher, stronger acidity to be expressed. Yet it also has a sweetness, and the slight bitterness that lingers at the end is exquisite 😂. It is indeed one of the "Astral Plateau", the top line of Shinsei's pride and joy 😌. The low alcohol content also made it manachic right away 😅. Today marks the start of the 4th year of "Sake no Wa"! The first year I got into Koei Kiku, the second and third years I got into Shinmasa, I hope to drink more different sake in the fourth year 😌. I'll be posting less frequently in the summer as I'll be mainly posting beer, but please keep up the good work 🙂.

Since yesterday... Ilya Thornton", a mixture of #1 and #2 yeast I have started taking "Lia Sake Naturel", a mixture of #1-6 yeast. Ilya Thornton. Gentle sourness and sweetness. It has a clean and refreshing taste. Ria Sake Naturale. A little lighter than Ilia Thornton, but delicious. Today... Day 5 of Numerosis and Ikedalot Day 4 of numeroens, deux and trois Day 2 of Riasake and Ilia at the same time. I can't tell any difference in taste 😅 after 7 drinks they all seem to taste the same 💦. Final assessment... I think the Do is the best tasting right after opening the bottle. Today, the Do is too sweet and the Trois tastes better. I think Ilia was better on the second day when compared to the other 7 bottles 🙄 Sogapère Ephis changes quickly after opening and is too sweet overall and loses its original taste! I think this is the best way to drink Sogape 🤔. Sogape was good, but I think 2021BY was better than this 2022BY... Next up, finally 100 posts! What shall we drink 😌?

Sequel to Sogape Yesterday, we compared the first yeast "Numeroin", the second yeast "Deux", and the third yeast "Trois". Numeroin." It is the lightest of the three. It seems to be good as a food wine 🙂. Doux. It is easy to drink for those who don't like dry sake 🤔. Trois. It is sweet and delicious. It has less acidity than "Deux", so the sweetness is enhanced, but you can also feel a little bit of spiciness 🤔. And compared to the second day's "numérosis"... I liked the Ikedalot better than the regular Numérosis because it tasted more intense, but today it feels even thinner than the "Numéroin" 😲. At this point, I think "Deux", "Trois", "Numeroin", "Ikedalot", and "Numérosis" are tastier in that order 😲. 2nd day The taste of "Numeroin," "Deux," and "Trois" are becoming similar. Sake made at the Obuse winery. It is a sake that is only made during the winter months when there is less work on the wine farm. The variety is... The sake rice is Miyamanishiki, which is produced in-house without pesticides. The taste varies depending on the yeast. No.1 yeast "Numeroin No.2 yeast "Deux Trois" No. 3 yeast Numérosix" yeast No. 6 Ria Sake Naturel, a mixture of yeast Nos. 1 to 6 Ilya Thornton": A mixture of No. 1 and No. 2 yeasts Today, "Numérosis" and "Numérosis Domaine Ikedalot". Nigori Festival Extravaganza Along with the three major nigori sakes (Jigokin, Yukidaruma, and Hirotogawa), we also drank "Ocean 99" and "Winter Otoshiri! Ocean 99" is... Compared to the three major nigori sakes, it has less gas 🙄 The aroma was less fruity and more sakekasu-like. The taste is sweet and delicious. No gassiness, less sourness and bitterness which makes it sweeter 🤔. I found it sweeter than the snowman UA Dragon, but I think I prefer the fruity and gassy UA Dragon. As for the "Winter's coming..." It has a good balance of sweet, sour and bitter and is the most juice-like. This is easy to drink! It will be gone soon💦. This is the end of the nigori sake series. Next up is that sake 🍾. I think it's time to start comparing 🤔.

2024 starts with three major nigori sakes 😌. The sake we drink today is... Hirotogawa Junmai Nigori Nama Sake✨ It didn't take long to open the bottle, but I had to open and close it several times, being careful not to spill it. Taste... The gasiness is not that strong, and the sweetness is a bit subdued 🙄 I have a feeling that the sweetness will be just right the next day 🤔. It's delicious with just the right amount of bitterness... Since New Year's, I drank the 3 major nigori sakes, Jigokin, 3 types of snowballs, and Hirotogawa. They are all delicious 🙂. It's hard to rank them because they are so close. But I dare say... Today we have a snowball drinking contest! First, the Snowman. It has the most oli of the three and takes the longest to stir. Taste... Compared to last year's, the sweetness and umami are less pronounced. Unlike its appearance, it is not heavy and can be drunk as much as you want. Next up was the "UA Snowman." Oh, it's good! It is delicious! It has more sweetness than the "Snowman" and is more carbonated. I like this one better 🤔. Last but not least, "UA Dragon." This one might be even tastier 😲. It has the sweetest and deepest flavor. The aroma is also melon-like 🍈. I think I'd have to go with "UA Dragon" by a nose 🙄 I also like "UA Snowman". If you like dry and dry, "Snowman" is for you. UA Snowman" for those who like carbonated, shuwashuwashi type UA Dragon" for those who like sweet and tasty 🤔.

Happy New Year 🎍. I just came back from Yonaguni Island and will drink the best sake today! I want to drink good sake from the first day of the year, after all! The first sake of 2024 will be... Jikin Junmai Ginjo Nigori Sake Nama✨. I enjoyed it last year and couldn't forget the taste so I saved up my points to buy it! I was expecting it to be tight, and when I was about to turn the cork slowly, it was easy to open. The aroma gave me an impression of sweetness, but when I drank it, it was not so sweet 🙄. The image I had was of a sour and bitter taste like Koei Chrysanthemum Snoclette. The piquancy is quite tame compared to last year 🤔. I have no doubt that it is the best tasting, but as a lover of pizzazz, I might prefer last year's 🙄. I'm looking forward to drinking many different kinds of sake this year. *After 2 days, the tingling feeling is gone and the taste is sweeter. I think it tasted better on the first day 🤔.

We will be drinking a lot of Shinmasa in December 🙂 The 6th edition is this sake! The sixth sake is this one! Earth." Every year I come to Yonaguni Island on New Year's Eve. There are few places to eat on Yonaguni Island🙄 and not many lodgings. There is not much accommodation either, so we decided to stay in the car again this year! We brought Shinsei Earth sake from home! Earth is delicious even when drunk in a tropical country 😆. Sweet and sour and the aroma of the wooden vat is a definite 🤔 no matter where you drink it 🤔. In 2023 I only posted Shinmasa sake brewery so I hope to post lots of different sake in 2024 😌. I wonder what kind of sake I will get into next year 🙄... Thank you for your support this year. Happy Christmas🎄 We will drink a lot of Shinmasa in December 🙂! This is the 5th one! No.6 Xmas-type This is the only sake I can think of for Christmas 😆. It's a limited time edition of the "No.6" series 🎅It's bottled just in time to be ready to drink at Christmas time. Sparling and very festive like Christmas ✨. The bottle is now green, but I daresay the design is the same as last year's. I'm glad I managed to get it again this year. Last year's No.6 X-mas-type was definitely one of the tops 3 tastiest sakes I had in 2022. Not sure about this year... The bottle is open! It didn't take that long to open the bottle for a sparkling Niimasa. It smells elegant 😌 It tastes apple-like with a tangy gasiness that is typical of sparkling. A little less sweet but well balanced with acidity and a slight bitterness at the end. Maybe more acidic than last year's 🙄 I forget 😅. I had a delicious Xmas-type again this year! Maybe the best I've tasted all year 😆.

In December, we drink a lot of Shinsei 🙂. The fourth sake is this one! Ten Frog 10th Anniversary Sake. Today is my birthday, so I will open a bottle of good sake 😆😆. Tenkaeru is the most hard to find sake in the "PRIVATE LAB" series. Moreover, it is a limited edition sake that Shinsei sold as a set with a "Tenkaeru glass" to commemorate its 10th anniversary. The serial number was 731/2342. It comes with a glass designed by sommelier Eiji Wakabayashi and made by Kimura Glass Shop exclusively for Tenkaeru. I got it last year, but I was too lazy to drink it and put it aside. I let it sit a little too long, but I wonder what it tastes like🙄 ? It's like apple... but not so sweet... it's more acidic but not like vinegar, it's citrusy and sour like lemon. The aftertaste is a little bitter, like grapefruit🙂. Not many people would think it's sake after drinking it. It's really insanely delicious! I like it the best in the Private Lab series and maybe even better than No.6 🤔. Tenfrog is too good 😂.
