This is a new sake made from new rice from a new brewery.
It is easy to drink because it is made of "Gohyakumangoku" (five hundred million stone), but the lingering taste is not my favorite 😅I think it is a dry type that you can feel the umami after the temperature gets higher. Since it's a nama-shu, it has a chiri-chiri-ness to it, so it went well with sashimi. ☺️
It's almost cloudy, almost like a clear sake, but there is also this kind of orikarami.
Last week I went on a business trip to Hiroshima airport and had Onomichi Ramen for the first time in a long time 🍜 delicious 😋 and I also drank milk coffee because of a movie I watched because I'm a fan of milk coffee 🤭 the coffee was super sweet 😆.

The aroma is apple. Especially the fragrance is beautifully fragrant😊It is characterized by sweetness and a little bitterness. It is a fresh chili sake that is lighter and easier to drink than its alcohol content, and it is very cost-effective 😄.
I met my good friends and colleagues in Nagoya for the first time in a long time and had an after-party at a famous kishimen restaurant called Kishiya. We drank Jikin Junmai sake. Both the kishimen and the jikin were great 😊After all, it's important to have a peer with whom you shared hardships when you were young. It has a fruity aroma, smooth texture, and a good balance of sweetness, umami, and acidity. It has a nice sharpness, so it's good without being dull. I preferred it at room temperature. We certainly enjoyed the ultimate gem.

I got a representative sake of Chiebijin 😁I brought it to the store and opened a bottle with my colleagues. I was the only one drinking it because no one else likes sake, but everyone was surprised at the chiri-chiri-ness they could feel on their tongues. It's fire-roasted, but it's definitely chili, and you can really taste the umami (flavor). ☺️
On the weekend, I went to the racetrack and saw the Royal Family exhibit.

This is the first time I've had Akabu in a year😄I think this is the first time I've had new sake. It's sweet and fruity, but the aroma doesn't seem to come to the forefront, making it a really stylish sake. The freshness and chirichiri gasiness, combined with the soft mouthfeel, makes the cup go down 😅I was impressed with the umami and sharpness. It was delicious. ☺️

Since I am not likely to return home for the New Year's holiday, I am taking advantage of the three-day weekend to go back to my parents' house to show a little filial piety. I opened a bottle of Sandesi Oh Suk nigori, which I bought at Takashimaya in Yonago this GW and had it lying in the refrigerator at my parents' house. It is a struggle as it tries to blow out energetically. It was the longest battle since Shinkame Sweet Squash.
It is characterized by rice flavor, sweetness, and intense gasiness, and the bitterness and sharpness that comes later makes it perfect for carpaccio👌It was delicious and gone quickly. The alcohol content alone makes it heavy, but the orikara (rice cakes) in the mix covers the heaviness. I also recognized once again the goodness of orikara.
During the consecutive holidays, the weather was so beautiful that I went to a spot with a great view of Mt. Daisen and saw the ridges of the mountain. ⛰️

Visited on the way home from work. I had not been able to drink since I returned to Edo (Tokyo), so I bought a set of Senkou sake to compare.
I had Sentori Modern I, Retro, and Organic Tule in that order.
Both Modern and Retro have a sourness that is typical of a sake brewer's yeast yeast. The Modern has the strongest acidity but is clean, while the Retro is a bit easier to drink. Organic was the easiest to drink as it was slightly cloudy and the acidity came later.

It was so good last time that I had to repeat it☺️The first day after opening the bottle, it was too sour for my liking😅I tried different sake cups after the second day, but it wasn't to my liking. 4 days later, the sourness finally calmed down, but it's almost empty now 😂.

I know it's good based on Sake-no-wa's review, but my expectations are high. On the first day, the sweetness comes first, and the sharpness is weak, like an aged raw sake. The aroma is melon-like, with hints of pineapple. It comes on slowly, but has a light sweetness and umami. The sweetness is a little strong. After the second day, it becomes sharp and well-balanced. Well, as for the taste, it has an apple aroma with a fruity light touch. It is designed to be easy to drink without the hiyaoroshi feeling I know.
After the sweetness and umami, it finishes with a sharp and slightly bitter aftertaste. It was finished in no time at all. Mimuro cedar is good no matter what you drink😋.
