I went to the first liquor store I went to for a bottle of Toyobai Shiboritate, and I took him to Miyakanbai because I hadn't seen Miyakanbai in a while 😊 (I didn't see Toyobai Shiboritate). Polishing ratio 40 The aroma, sweetness, umami, and acidity are all well-balanced, making it easy to drink and delicious. I had it with oysters in olive oil 😁. The first day it was very irritating to my tongue, but after the second day, the bitterness took over and it became more suitable for a mealtime drink after the second day. The first day was the most delicious, but the third day, when things settled down, was also quite good. ☺️

This is the Golden Chun Chun 🐤 that I had on hand during the summer season. It has a stable pineapple aroma and taste ☺️ light and easy to drink 😊I should have drank it in the summer 😅The sweetness is weaker than the autumn rise and has a sourness that is typical of the raw yeast. The bitterness comes more firmly as the days go by.

Visited on the way home from work. I had not been able to drink since I returned to Edo (Tokyo), so I bought a set of Senkou sake to compare. I had Sentori Modern I, Retro, and Organic Tule in that order. Both Modern and Retro have a sourness that is typical of a sake brewer's yeast yeast. The Modern has the strongest acidity but is clean, while the Retro is a bit easier to drink. Organic was the easiest to drink as it was slightly cloudy and the acidity came later.

This is my second time drinking Genziden at home. It was so good last time that I had to repeat it☺️The first day after opening the bottle, it was too sour for my liking😅I tried different sake cups after the second day, but it wasn't to my liking. 4 days later, the sourness finally calmed down, but it's almost empty now 😂. It's strange that it's so different from the last time I tasted it. Is it an individual difference, my physical condition, or a change in my taste? It's so deep!

I know it's good based on Sake-no-wa's review, but my expectations are high. On the first day, the sweetness comes first, and the sharpness is weak, like an aged raw sake. The aroma is melon-like, with hints of pineapple. It comes on slowly, but has a light sweetness and umami. The sweetness is a little strong. After the second day, it becomes sharp and well-balanced. It is really delicious 😋.

I had some time to kill on a business trip to Osaka, so I wandered around Osaka station 🚶 and finally got a Kata no Sakura Sandesi at the Seven in Osaka station. I love the aroma of rice and the aftertaste 😊It goes down your throat so nicely, perfect for summer 😁. Now I only have one prefecture left to conquer the whole country. I'll wait patiently 😊.

I wanted to drink it last year but couldn't afford it, so I wanted to try it this year. One day in September, before a one-day business trip, I saw it lined up in the morning at Tokyo Station Hasegawa, and decided to buy it on my way home, but when I dropped by in the evening, it was sold out 😣I wished I had bought it in the morning 😭I looked everywhere from there, but could not find it. Well, as for the taste, it has an apple aroma with a fruity light touch. It is designed to be easy to drink without the hiyaoroshi feeling I know. After the sweetness and umami, it finishes with a sharp and slightly bitter aftertaste. It was finished in no time at all. Mimuro cedar is good no matter what you drink😋.

This is probably my first time to visit a sake brewery, including drinking outside. I used to live in Saijo, Hiroshima, but I didn't know there was such a good sake in Akitsu. I didn't know that. It seems that the Hachitan type of sake is a good match. The aroma is apple-like but weak, with little hint of incense. First of all, the mouthfeel is smooth and round, and it gently envelops you. Although it is called hiyaoroshi, the taste is not heavy, but light and refreshing. It has a good amount of sweetness and umami with a sharp finish. It is good both on its own and with food! My favorite hiyaoroshi I've had so far 😊I want to drink it again next year. There is a highly rated autumn sake left after this, but the bar for satisfaction has been raised considerably 😅.

First Chibijin, first Oita Prefecture sake🍶. Finally, my 45th prefecture. I wanted to drink the pink-labeled Junmai-shu, the representative sake, but I rarely come across it, so here it is. It is a raw aged junmai sake. It looks good from the outside ☺️ It has a pronounced umami and acidity, but is also sweet, sharp, and gassy 😋 It's good on its own, but also goes well with fried chicken. Personally, I think it is similar to Nabeshima 🧐. Yesterday my wife and I went to Ueno to visit the Museum of Western Art and Seiyoken. Yesterday we had a good day off, seeing paintings for free and tucking into omelette hash for the first time in a long time☺️🙆

This is the second Kamikawa Taisetsu I drank at home. It has a woody aroma with a hint of banana or nuts, which is unique to Yamahai. As a food sake, it went well with white meat with amazu ankake (sweet and sour sauce). The alcohol content was low for a Yamahai sake and it was easy to drink. Next time, I would like to try Comet Kamikawa Taisetsu 🍶.

This is the first bottle in October. This is Ding's first time drinking at home. The color is yellow🟡 and the aroma is apple-like. It has a fruity but not sweet astringent and pungent taste like Toyo Bijin, and on the second day the sweetness comes out a little and it becomes softer and easier to drink, but the astringent taste comes and the sharpness comes 🍶I honestly did not like it 😅I do not recommend it to those who like sweet taste 😂. According to Wadaya's information, the direction of the sake quality is different from that of regular Ding. It was certainly different from the Ding I drank at a pub before 😁. Maybe it's a sake after fall but it has some brewed alcohol in it to make it easier to drink. Wadaya's comment below The perfect balance of transparency and mature flavor expresses the true pleasure of sake, which is not found in Shiboritate. Yamadanishiki rice from Hyogo Prefecture is thoroughly polished to 39%. Brewed with Kuroyomizu, the softest water in Japan, the rice is thoroughly polished to enjoy its translucent texture. When tasted, ripe apples and nutty nuances from aging can also be detected. In addition to its clear and clean texture, this wine has a deep umami, sweetness, and richness due to its maturity, and the latter half of the flavor is crisp and clean!

This is my first time to try Wakanami. I was actually thinking of Junmai or Honjozo, but since it is a limited edition Omachi, I decided to go with this one. The sake was highly rated in the reviews, so I opened the bottle with high expectations. The aroma is apple-like. The gasiness is moderate, and the sweetness and umami spread in the mouth, soon followed by the acidity and then the bitterness. The flavors change in an order that is easy to understand 😊It's good 😋It was especially noticeable on the first day. On this day, my daughter and I went to the National Museum of Emerging Science and Innovation to see the special exhibition 🚀I took the 4th picture of Mr. Maezawa's autograph and offerings 🪐I thought I knew it, but the universe is so big 😳.

This is my first time to drink Miyazumi. I opened a bottle of the standard Kochira. I am excited to see what it tastes like 😁It has a fruity taste, but the aroma is subdued. It has a nutty aroma. The color is quite yellow and it has the appearance of a junmai sake 😄. The actual taste is round, with a great balance of sweetness, umami, and acidity 👍I can really taste the umami especially. It has a sharpness that comes afterwards and is full of umami, but it doesn't get dull. There is a slight alcohol taste that bothers me, but other than that, there is nothing else to say. ☺️ Aizuwakamatsu sake is great 👍Finally, it has the same number of check-ins as Nagano Prefecture 😁.

The three-day weekend is coming to an end! We had this one during the three-day weekend. Since the nama-shu was delicious, we also bought this hi-iri. The aroma of apple spreads and it is easy to drink with a reasonable amount of gas. The sweetness and umami are also felt and the sharpness comes afterwards, making it very tasty. This year is good because we can get saury at a low price🙆I drank it with grated saury🍶. I was only concerned about the sliminess of the aftertaste, but other than that, I was very satisfied with this bottle 🍶☺️

Last Friday I received a bottle of Kaze no Mori🌳. These days it is a delicious sake🤤 that relieves the fatigue of the week. The aroma is apple and pear like, with a delicious grapefruit-like bitterness later on. The bitterness, in particular, is very typical of Kaze no Mori. 657 is not very different from it. The gassiness is weaker than usual.

Purchased at Imanaya. Aizu Musume from the first brewery. I had a hard time deciding which rice field to choose from the Jo series, so I chose this one. First of all, the top aroma is melon, and the hints are nutty, which is my favorite type of soft sake with great umami. The bitterness also comes in later, so it is delicious to be immersed in the aftertaste. I can only taste a little sweetness and the acidity is weak.

The last of the summer sakes is Kangiku 😁. When poured into a glass, it has fine little bubbles and is sweet, delicious, pineapple fruity, well balanced, and just right. ☺️ It went better with pork than grilled fish. I prefer this to the Aomi I had last time. Cool and refreshing from the label🧊🧊🧊🧊 (4 points) Drinkability🧊🧊🧊🧊🧊 (perfect score) Taste🧊🧊🧊🧊🧊🧊🧊 (7 points) Overall rating🎐🎐🎐🎐🎐🎐🎐🎐 (8 points) So, by a narrow margin, the best I drank this year was "Yamanokotobuki Good Times Summer Session" 🙆In general, summer sake is easy to drink and good 🙆I will try to refrain from autumn sake as much as possible to prepare for new sake.

It's been a long time since I've seen Tenmei. The overall impression is light due to the low alcohol content. It is refreshingly fruity and the sweetness is weak, but when the lees are mixed, it becomes just right. It has a good flavor, and the acidity is not so strong. The bitterness comes in gradually afterwards. I bought it because of the nice label, but I didn't recognize it because of the black bottle, but I didn't realize it was light nigori until I was about to finish the bottle😅. It was delicious and balanced once the lees were mixed in. I regret that I would have mixed it if I had known from the beginning 😣. I was able to drink it for the third year in a row ☺️ Three changes from last year that you can tell from the look of it. The name Indigo is gone, the back label is gone, and the alcohol content has dropped from 14 to 13 degrees last year, making it even easier to drink.
