We finally opened a bottle of Kiho Tsuru for New Year's. This is the top model of my favorite Kiho Tsuru. I was really looking forward to it. I am very excited. After opening the bottle, I took a sip. This one is a real treat. It's not flashy by any means, but it has a sweetness like biting into a fine dried candy, and acidity and bitterness that wash it down nicely. Perfect balance. Yum! Outrageous. Since it is a bottle, we enjoyed it over a number of days. As the days go by, the bitterness comes out just a little bit more. I liked it best on the first day, but if you want to pair it with a meal, the third or fourth day is best. It can also be served lukewarm. The sweetness increases, and the impact of the first day is felt again. It's the best lukewarm sake I've ever had. It's just so gentle. I'm glad I bought it even though it was expensive. So far, this is the best sake I've had this year.

Hi Maru! I just had my first "Kibotsuru" Junmai Shinshu the other day and it's delicious 😲 and Junmai Daiginjo of it is just as delicious 🤣. I'm glad to see that the sweetness returns when warmed up to lukewarm, and since it's only one bottle, I can try a lot of different things 😁.

SENKOKU "Edogari" is the hottest topic. This is a sparkling sake from the Zero formula (raw sake), the I formula (hi-iru), the Niki formula (oirigarami), and this Sanshiki (sparkling raw sake). I was about to open a bottle of sake for New Year's when my wife asked, "Do you have any sake that I can drink too?" I changed my plan to open the bottle at a moment's notice. I quickly changed my plans and opened a bottle of Sengoku Sanshiki. It was so bubbly that it almost spilled out. The color was white with a hint of haze. The color is a hazy white, with the sweetness and acidity typical of Sentori and a fizzy moi-moi feeling. Very tasty 😋. Goes well with crab casserole (🦀). My wife and I instantly killed it with Tochigi Ai🥰. ✌️

2025, I am completely late to the party. Flu 🧚 since the night of the 1st. Our house was destroyed during the New Year's holiday 🔥. So, a belated Happy New Year 🎍. I'm just in time because Osaka is open until the 15th 😅. The first bottle of the new year is from Midorikawa in Niigata prefecture. It was not prepared by me, but was opened at a family gathering. The aroma is elegant and light. It is light, with a hint of sweetness and bitterness at the end. Not so much dry as light and dry. This is Niigata. We also had it lukewarm. The sweetness increases, and the overall impression is that it opens up gradually, which is a nice touch. After this, I got a fever and went down. ⤵️ This three-day weekend is a New Year's do-over 😄. I bought some sake for New Year's, and I'm going to drink it. Influenza A is very popular and B is coming soon, so please be careful.

White Sake (5) The last sake of this year is from Ishikawa, Hokuriku. The last sake of the year was Shirojusyu from Tetorigawa, which was there for me when I was crying because I couldn't get a bottle of Hirotogawa nigori. The first sip scared me. Sweetness, acidity, and a bitterness that comes out a little bit before. Huh? Wasn't Hirotogawa like this? It was a perfect fit! It is delicious, inexpensive, and the best nigori of the season for me so far. I am glad to have encountered it at the end of this year. I have met wonderful sake and great sake friends this year as well. I wish you a happy sake life next year 🙏. I wish you all a very drunken New Year! I look forward to working with you next year 🍶.

I wondered until the last minute whether I should bring it to the off-line meeting. The bottle was opened at the end of the year! The sweetness slowly sinks into your tired body. It's so good! It becomes a little bitter after about the 4th day. Next time I get it, I will try to finish it by the third day.

Akabu for the sake that we gave to Wakata's family for their BBQ. Hmm? 😅 I received this at a petit off-line party the other day. Thank you Wakata-san and Yuki-san 🙇. I got it as soon as possible👍. Ginga-ga-ga-ga-ga-ga? This is my first time 🥰 to try the NEW BORN of Sasuza Akabu. It has a great balance of sweetness, acidity, and bitterness, and the freshness that is typical of nama-shu is also well apparent. It is a definite taste. I'll have to figure out how to thank you too 🤣.

White sake (4) This is the first time for Masayo a.k.a. Gagakuyo. I will start with white sake without drinking the standard. I like white sake. As the store owner said, it is not that vigorous, so opening the bottle was smooth. It has a melon aroma and a light sweetness. Sourness, little bitterness. When mixed with lees, the acidity increases and the bitterness retracts. There is a slight shuffle. Oh, man, it's so good! I heard that Tenryohaii Sake Brewery was started by a young master brewer named Kato-san, who bought the brewery and started the business. And Kato-san's notebook is easy to read and very interesting. What a genius! That's my impression. Sake brewed by a challenging and hardworking genius. I like sake more and more.

Merry Xmas!!!🧑‍🎄🌲🎉 24th and 25th are weekdays, so we held the party on Sunday the 22nd. This year it's this blue bottle, Houou Mita: 🐦‍🔥 When you drink the second fermentation of sake in the bottle, it's already champagne... I can't go back to drinking such eh or sparkling wine! I can't go back to sparkling wine! It has fine bubbles and a prodigal sweetness, yet it ends up dry and tight 🫧. Goes well with western food. The flashy bottle and the price that makes the average person cry, it's not a joke. Yum 😋. Tochigi love on a holy night 🥰. I told the kids that since dad is friends with Santa, we'd get a special early visit from Santa 🧑‍🎄 on Saturday night. The younger ones were overjoyed while the older ones scowled at the older ones who knew the truth! Thanks to him, the kids had a full Sunday to play with their toys 🙌. And by the way, a father's dignity somewhat 🆙. It's hard to get them off to school on weekday mornings 😓.

Year-end party of the Sakai-kai of the Kansai Branch of SAKEWA 🎉. Under Umaisan's order, Lutemi-mama, Wakata and his wife, and I gathered. The place was Kurami, a famous restaurant in Sakai. Delicious food as always. This was the 2,000 yen per person course (4th picture). We started with a toast of Tobiroki's Kasumi sake, Romain. We spent about 3 hours in a blink of an eye, talking about our recent situation and personal stories that we were hearing for the first time. It was a lot of fun 😊. One of the most memorable bottles was this one. Mature Kuranomori. Brewing year: 2000. 24 years ago. How old were you guys back then? I was 😁. I had it hot. It is not as peculiar as I expected and tastes soft with a caramelized taste. The slightly pointing stimulation characteristic of aged sake was also pleasant and flowed down my throat. Drunken sake with good friends. Bliss at its finest. A wonderful year-end party that I could not have imagined a few years ago. We are grateful for the sake connection.

It is said that all sake is brewed with a special emphasis on Kyoto products. First, the supernatant. The balance of sweetness, acidity, and bitterness is wonderful. When mixed with the lees, the bitterness is a little more noticeable, but it is dry and can be drunk easily as a mealtime sake. It's good, Jyuseki.

Suitama by Ryoseki Shuzo, the brewery where I started. It is a bottle from the hanpukai, but the moment the store owner brought it to me, I grinned 😏. It's so good that they want to offer it in the hanpukai, right? My expectations are skyrocketing. As usual, it is elegant and refreshing, yet deeply sweet. As the temperature rises in the mouth, the sweetness spreads. The bitterness is just a little. Almost no acidity. The taste does not betray expectations.

Activated nigori draft purchased at the Asahi Sake Brewery in Izumo City. The bottle was lukewarm by the time I got home as a result of being left in the car for about 6 hours, including a stopover there. But that's no problem. I will drink it well chilled. The sound of a light puffing sound. There is no sign of blowing. Silky texture, acidic and not too sweet. Sake level -23😳It's quite a weird specs 🫶.

This Izumo Dayori is one of the drier Ten Asahi Sake. It has a sake level of 3.5, which is sweeter than the 12.5 hiyaoroshi and 8.0 junmai ginjo that we recently drank. When the bottle is opened, it has a fruity aroma. Is it sweet? No, it was spicy. It was dry 😅. But it was sweeter than the other Ten Asahi, so I enjoyed it.

White sake (2) Not Takachiyo or Takachiyo by Takachiyo Sake Brewery, but Takagun. It is read as "Koryu. It has an apple aroma. If you drink only the supernatant, the bitterness seems a little stronger. When mixed with the lees, the sweetness increases and the bitterness becomes weaker. The acidity is low. It does not have a shwashy taste. It is slightly dry and sweet, so it is a perfect match for my type of wine. The price is also high-cost, about 1,500 yen for a No. 4 bottle.

We went to Izumo-taisha Shrine, then to Yakumo-san for Izumo soba noodles, and then to the Asahi Sake Brewery. The proprietress of the Asahinichi Sake Brewery was very charming and friendly, and we were able to hear many stories about the local area. I bought a bottle of hiyaoroshi, which I was told was only available here. I was told that the flavor deepens as the days go by. This is the first solid dry sake I have had in a long time. Smoky aroma and taste, with a touch of sweetness 😅. Hot. Day 2. I thought it would be more sweet on its own, but it's not sweet at all. It's hot. 3rd day. Spicy. I found out that spicy is spicy 🤣.

I went to Okuizumo. I received an unfamiliar sake at the inn. It's so corky. Anyway, a cork. It tastes like that taste you get when you mistakenly open a bottle of red wine and the cork crumbs end up in the bottle. Is it the aroma of the wooden vat? It's been a long time since I've had a major aversion😣. The third picture is in front of the inn the next morning. The moment I woke up and opened the curtains, "No way!" I said. There should have been no snow when we came here.... I had normal tires. I thought November would still be fine... The kids were so excited😅. When we talked to the innkeeper, he said it was only in the morning and by the time we checked out, it had all melted and we were able to leave safely 🚙. Normally we would have had a snow viewing party, but this was a different kind of sake and snow memory 😆.

Family trip to Sanyo and San-in area. On the first day, we stayed overnight in Hiruzen. We had a bottle of Mimasaka sake at the inn. It was delicious, with a dense sweetness. The higher the temperature, the sweeter it became. Perhaps it tasted better because I drank it without any expectations.

It is a noble sake. I am not good at it. I was not good at it, but this is delicious. The acidity, which is typical of Senkou, rounds out the sweetness nicely and makes it very easy to drink. That said, I don't think I've become able to drink kijoshu, so I think this is a good match for me. It is worth a try even if you are not a fan of kijoshu!
