I thought I had paid attention to the label warning against foaming, but when I opened the bottle, I still gushed. The first taste on the palate was sweet, followed by a refreshing bitterness. It is truly a grapefruit.
Unexpectedly, Sentori ⛄️ continued to be available, so I visited Yodogawa Sake Shop for the first time in a while and bought a bottle of Sentori. I noticed that I haven't had any Aomori 🍶...and I noticed the "back" label 😁.
When I poured it into the sake cup, it was light and refreshing. The color is clear, but has a slight yellowish tinge.
The rice used is Aomori's "Hanasoui," a rice suitable for sake brewing.
Polishing ratio is 50%.
The alcohol content is 16%.
Specifications: unfiltered, unpasteurized sake.
When the bottle is opened, the aroma is gorgeous and mellow, with a hint of apple.
The first sip reveals a smooth mouthfeel with a juicy flavor and fruity sweetness that spreads in the mouth. There is no cloying taste, and the taste is accentuated by the clear acidity that spreads along with the spreading sweetness.
After the acidity quickly recedes, a gorgeous umami flavor lingers in the aftertaste.
The taste does not make you aware of the 16% alcohol content, so you can easily drink more sake...but you will be drunk well. Mutsu Hachisen is delicious. This time it was a limited edition sake, but it made me want to try others.

Slightly gassy. The aroma is mild and does not have the apple aroma of the brand image.
From room temperature. There is a fair amount of acidity, followed by a delayed expansion of the bitterness of the alcohol and the umami of the rice. The way the umami comes out is pleasant. After that, it slowly becomes sharp.
The second day, it is served cold. It has a strong sweet and sour acidity with a hint of green apple. The umami is not so strong.
The gasiness distinguishes it from other junmai. It is a modern classic junmai with umami, although I prefer a slightly bitter taste and a bit more sharpness.
Rice used is something from Aomori Prefecture
It is not flashy, but it is refreshing and drinkable.
The bitter taste that comes in a big gulp finishes it off.

At an inn in Misawa, Aomori. Cold sake after dinner. It was the first Hakusen with a pink label, which I had been curious about for a long time. I had heard that it was "fruity and easy to drink," but it really is smooth and easy to drink! It also feels a little thick. The initial aroma of rice is short and shallow, replaced by a light melon aroma. But that aroma is also faint. It was a sake with a gentle taste that helped to adjust my tongue, which had become too sweet from the after-dinner dessert.
