I learned from Jive's post that today is the last new moon of the year, so I'm going to open this one in honor of the new moon 🌑. The origin of the name "Yami Naru Akimizu" is said to be "a limited edition autumn sake that resonates with a mouth full of flavor even with your eyes closed or in the dark 🤔. The calendar says it's already winter, but today was warm and it was like we were back in autumn, so I thought it would be perfect 😁. Now, as for the taste, the top aroma is beautiful like white peaches and bananas. The overtone aroma is like banana and melon, and the fresh and juicy flavor of unfiltered raw sake comes in waves! In addition, the rice is polished at 38%, so the delicate and beautiful sweetness and umami are harmonized with a strong acidity and a slight gassy sensation. After reaching its peak of umami, it finishes cleanly with a refreshing bitterness. This is amazing 😳. What's great is not only the taste, but also the price: ‼️ The rice is polished to the 30% range, tastes great, and costs 2,090 yen including tax for a four-pack. And the label is so cool, everything about this bottle is awesome and impressive 😊.

As work gets busier toward the end of the year, I can't do without alcohol 🤪. I was supposed to have bought this for Christmas, but I opened this bottle because of the capacity problem of the fridge and because I got another bottle of alcohol for Christmas🎄. It's been a while since we've had AKABU's home brew ✨. It's only available this time of year 😍. Last year I couldn't buy it, but this year I was lucky enough to find it 😊. Now, as for the taste, the top aroma is a fresh apple type aroma 🍎. The nose has a refreshing fruity aroma of apples, muscatel, and lemon. It has a strong sourness and gaseousness like a cider 🤔. The sweetness and umami are moderate, and the alcohol content is 13%, so I think it is quite light. The taste is short and lingering, with a crisp and clean finish in the mid to late part of the bottle. As expected from AKABU! This is delicious😍! I paired it with yakitori and cream cheese as a side dish and it went perfectly with it 😊.

At the usual BAR (4) I fell asleep before I posted yesterday, so I forgot to upload this 😅. I finally came across this one because one of the regulars at the bar recommended it to me 👀. I was lucky because it was freshly opened too 😊. There was almost no top notes, with a slight apple-like aroma. The overtone aroma is like green apple or pear, but not as strong and a little more subdued. It has a small to medium sweetness, strong acidity, medium umami, and a strong gassy feeling. It is a little dry, but it is not dry and has a calm and elegant taste 🤔. It's delicious 😋. Of course I like sweet and juicy sake, but this kind of sake with a little bit of calmness also tastes better in this cold season 😊.

At the usual BAR (3) We had this one freshly opened 🍶! Yamagata Masamune is our first brewery! The master opened the bottle with a cheerful "pop! The master opened the bottle with a cheerful sound 😊. There is no heady aroma. The aroma is not fruity, but rather a slightly fragrant and subdued sweet aroma, like coarse lamb. It has a large sweetness, medium acidity, medium umami, and a large gasiness. There is some bitterness at the end, but I like the way it gently fades away like water 👍. This is delicious 😋. I had it cold, but I thought this would be delicious warmed up a few days after opening 👀.

At the usual BAR (2) I was looking for a nigori shuwashu and chose this one that I was curious about 👀. They usually brew with Yume-Ichiken sake rice, but this year they brewed with Shunyo 🤔. The nose has a greenish aroma of muscat and herbs, which is typical of Shunyo. The overt aroma also has a strong muscat aroma. The sweetness is moderate, the acidity, umami, and gasiness are strong. The bitterness at the end was a bit strong and it was a clear dry sake like Mitsui no Kotobuki 😊. I had an image that nigori shuwashu was sweet, but it was a good encounter that made me think dry active nigori is not so bad 👍

At the usual BAR (1) I went to my usual BAR to greet the master for the last time this year. This is the second one of Nabe-sama's moon series, following "blossom moon" in spring 🌝. I couldn't find any specific aroma on the first sip, but the hint of banana, pear, and a little bit of apple. There is a slight aroma of malted rice, and the alcohol is a little strong. It has a large sweetness, a small acidity, a slightly strong umami, and a medium gasiness. It has a clean aftertaste and is a medium to light-bodied modern sake 🤔. I felt the aroma was a little peculiar, but it was easy to drink and delicious 😊.

I was so impressed with this sake that I bought it last year because my favorite liquor store had it in stock 😊. I was really looking forward to it because Miyakanmei has a lot of sakes that I like! I started with the supernatant. The top nose has a gorgeous pineapple-like aroma 🍍. The mouthfeel is also gorgeous, with a sweet and sour pineapple aroma on the nose 😊. It has a strong acidity and umami, with some sweetness, but not as much as expected. The gasiness is not so strong that you can feel it. The bitterness and other tastes are very slight, and it finishes with a crisp and clean aftertaste! After stirring, the flavor and sweetness increase, and you will be impressed that this is the finished product 😍. The acidity has calmed down a bit and is now balanced out, and the hints of pear and melon type of calm aroma has emerged. The weight is a little heavy, but it doesn't make you tired of drinking it at all, and once you drink it, you can't stop ✨. This is impressive 😍. I think last year the rice polishing ratio was 45%, but this year it's 55%, which makes the taste more robust, but it's also very drinkable and great! It was definitely one of the best 5 sakes I've had this year! Thanks for the drink 😋.

Now, before I forget the taste of the UA Snowman I drank the day before yesterday, let's open this one too 🍾. After my second attempt, I was able to get the regular version of Yukidaruma at my favorite liquor store: ⛄️ So far, all the SENKYO soaps after the return to Edo have been a hit and to my liking, but what about this one 🤔? I opened the bottle easily thanks to the fact that it was well chilled in the fridge👍. The initial aroma is gentle, like white peaches. The overtone aroma is a gentle aroma of white peach and a little bit of banana 🤔. It is characterized by a vigorous gaseous sensation due to the active nigori, and when you take a sip, fine bubbles pop 🫧. The sweetness is a little stronger than UA Snowball? The clear acidity like a lactic acid bacteria drink and the firm flavor derived from nigori are balanced in harmony with the sweetness mentioned above 👍. The second half of the bottle has a slight bitterness that is crisp and clean and more refreshing than I expected ✨. Delicious 😋. I knew it! Also, compared to UA Snowball, I think the regular version is sweeter but a bit drier 🤔. It was a beautiful sake with a firm, fruity and catchy Sentori character, thanks for the treat 😋.

Here's the fourth and final one. We have a regular edition Snowman waiting in our fridge, but I didn't expect to find a UA Snowman: ⛄️ I was told to be careful about opening the bottle, but since it was chilled, I didn't have that much trouble opening it👍. It had a fresh fruity ginjo aroma of white peaches and citrus fruits, and a slightly stronger gasiness that was more subdued than I expected, but again, the beautifully integrated sweetness, acidity, and umami matched perfectly, and it was empty in an instant🤣. I must open a bottle of the regular Snowman before I forget the taste 🍾.

It's a little on the dry side, but the freshness of the sake makes it a delicious food sake that goes down easy ✨. It was a great match for the sashimi that I served with it and I think it would probably be great warmed up 🍶.

The second one is here. This is my first time to try Isojumo ✨. It's alky, but without any of the unpleasant smell of brewer's alcohol, and it too has a refreshing sweetness that makes it easy to drink 😊. It had a slightly fruity ginjo aroma, cohesive umami and acidity, and the sweetness and balance of the above was delicious 🍶.

I went to a nearby liquor store to see if they had any of the nigori nigori sake from Hirotogawa, which is one of the three most famous nigori sake in Japan. I was so excited to buy it and couldn't wait to open the bottle 😁. First of all, the top aroma smells like white peaches 🤔. The aroma of white peach is also strong, and there is a little pear-like aroma. It has a strong sense of gas, and the moment you take a sip, fine bubbles pop 🫧. It has a strong umami and acidity. There is also sweetness, but compared to the acidity and umami, it is a little subdued and only faintly perceptible. Huayouyasan was unexpectedly sold in the online store of Yajima Sake Shop 🌸. It's one of the rare ones you can't find at liquor stores in Kyushu, and there's only one distributor in Hiroshima nearby 🤔. As a resident of Kyushu, I thought it was a rare sake, but now that I can drink it at home, I'm grateful to have it 😋. Now, as for the taste, the top aroma is a gorgeous pineapple aroma as rumored 🍍. The overtone is pineapple, with a hint of pear 🤔. I thought it would be juicy... but it's not as juicy as I thought, it's more like clean and sharp 🤔. It has a dry impression, maybe because it's made with Gohyakumangoku, and it has sweetness, but it's not a sticky sweetness, it's a refreshing sweetness, and then the acidity and umami follow it ✨. The gasiness is small to medium, and it complements the acidity and umami 👍. The bitterness comes out strongly in the latter half of the bottle and finishes it off quickly. Wow, so this is Huayouyasan! I had heard that it was a pineapple juice for adults, and you are right, it was a bottle that I never got tired of drinking with its changing flavors 🍶. I bought it from Yajima Sake Shop's online store and my fingers were shaking until I made my decision 😅. This is the prestigious sake that was chosen as the champion saké at this year's IWC, so we took good care of it ☺️ As for the taste, the top aroma is calm, like melon or banana. The overtone aroma is a refined ginjo aroma of pears and Japanese pears, while maintaining the banana sensation felt in the overtone aroma ✨. The gasiness is very slight and slightly tingling on the tongue. It has a good balance of sweetness, acidity, and umami, and I personally found the umami to be distinctive and rich, like a lactic acid bacteria drink. ☺️ Although it has the above-mentioned umami, it is polished down to 27%, so it has a clean finish and is not tiring to drink at all! It finishes cleanly with a bitter taste that is not too assertive, so the change in flavor was clear ✨. It was delicious 😋! This was one of those bottles that you can tell is world-class deliciousness 🍶. We gratefully enjoyed it slowly over the course of 3 days 🍶.

However, I was able to secure a bottle of Ginkai, so that's good! Now, as for the taste, it has a fresh and invigorating aroma like pineapple on the nose and in the nose ✨. When you put it in your mouth, the umami and sourness burst out, and the sweetness is just right without being too strong! It is the most refreshing and fresh sake I have ever had from Kangiku, and I feel it is easy to drink👍. I've just finished work and opened a bottle of this one as a reward after 3 days of rest 🍾. I was told that if you let it sit for a little longer, the gassiness will improve, but I couldn't wait a month to open the bottle 😅. The bottle I drank last year was green and had 13% alcohol by volume, but this year the bottle is clear and has 14% alcohol by volume 🤔. Now, as for the taste, there was a calm sweet aroma like banana on the top and in the nose 🍌. I don't need to tell you how gassy it is when you take a sip, and you can feel the fine gases popping in your mouth 🫧. The sweetness and acidity are less than expected 🤔. The cloudiness is not like a cloudiness, it is more like a light cloudiness 🤔. The umami is strong and there is a slight aroma of koji mold ✨. I felt a strong bitterness at the end and the aftertaste was clean and crisp!
