I went to a liquor store I sometimes go to. I found a sign of "Shisui no Yoake" at the front of the store. ❗️ I asked him about it and he said he had just pressed it the day before yesterday😃. 50% polished domestic rice, 16% alcohol by volume Excitedly, I twisted the aluminum cap I twisted the aluminum cap tightly. Push-push-push with mp! You can already smell the ginjo aroma wafting from the mouth of the bottle! A little after pouring, fine bubbles Fine bubbles are rising to the bottom of the glass. It's fresh, isn't it? The top aroma is melon to honey apple. When you drink it, you can feel the fresh chili flavor and the aromatic sweetness. It is sweet and juicy with aromatic sweetness. ❗️ This aromatic intensity and chili sensation can only be achieved by freshly pressed sake. Hooray for sake nouveau! I've never had Kouko before but this is delicious 😋! A good start for a new sake 👍

Lately, compared to before I think I see Hakutsuru Nishiki sake more often. I've always wondered what it was like🤔 I was curious about it, so I bought some. 30% polished Hakutsuru-Nishiki from Hyogo Prefecture, 13% alcohol by volume Oh, it's been a while since I've had a low alcohol 😲. I'm not sure if the low alcohol content is affecting the sweetness of the sake. I wonder if the low alcohol is affecting it? When the aluminum cap is opened neatly The opening sound is bouju ♫ in mp. The aroma is... surprisingly modest. When you drink it, the aroma is slightly apricot. The taste is... oh, it is indeed sweet ✨. Next to the clear sweetness like cotton candy Next to the distinct sweetness like cotton candy, the acidity is modestly close to it. There is no bitterness. I have the impression that many other breweries' Hakutsuru-nishiki sake I have the impression that many other breweries' sake made with Hakutsuru-nishiki also have a reputation for being sweet. Maybe it is that kind of sake rice. I like sweet sake, so I'm totally fine with it. but for those who like dry sake, it might be a little too sweet 😅.

The first rice wine I ever drank was the cherry blossom label of the One Hundred and Forty-Four. Then I had to try the Momiji label! Aomori Hana Moui 50% polished, 16% alcohol by volume When the aluminum cap is twisted tight, the opening sound is silent! The top aroma is of honey apple 🍎✨. Slight lactic acidity Sweetness and honey apple aroma on the palate Wonderful ✨ A little more acidity would have made it more pineapple like, but it's just on the edge of being apple, which is a pride of Aomori Prefecture 🤣. It has a beautiful mouthfeel like a daiginjo. The aroma is more than just umami, it's the aroma that makes you drink it. The last one is a bit bitter. Tasake is really good after all! I'm very satisfied. Pic 4 shows the autumn leaves of Mt. Shitsubutsu (above) and Hiuchidake (below) over Ozegahara, which we climbed the other day. The leaves of the mountain lilacs and the Japanese rowan trees were as red as the label on the sake 😊.

If it is a new brand of seasonal sake from Akabu, you can't miss it 😤. 60% polished domestic rice, 16% alcohol by volume. Although it is not generally high in alcohol It is the highest alcohol of all the Akabu I've had! When I remove the plastic cover and open the crown The opening sound is a jupo with mp. Uitate aroma is apricot, a little bit rummy. When I drank it, I found it to be very strong. I was under the impression that Akabu's seasonal sake was light. but this one has a rich honey flavor! Sourness is asserted in the front, and sweetness is also strong. It may remind you a little of Yonotori 🤔. The bitterness that follows immediately after is also impressive. I haven't had it recently, but I think it's close to Kouei Kiku no Ikubou. When I looked at it carefully, I saw the description "It can be served on the rocks if you like". I see... I knew it! I couldn't resist the temptation to enjoy the rich honey flavor as it is 🤣.

The third cup was a rice wine with a label I had never seen before! I heard it was a limited collaboration with IMADEYA! Akita Sake Komachi 55% polished, 15% alc. The aroma is of honey apple. Sweetness is strong and acidity is moderate for a rice wine. Unlike Jikin, it has a mild taste. I drank it smoothly without a hitch with splendid sashimi. We drank it smoothly without a sticking point!

It's a lunchtime drink at a restaurant that has become a familiar place for us. It's been a long time since we've had Jikin. It's been a long time since we've had Senbon-Nishiki! Before this Jikin I had a Jun Dai Ginpu of Hana Yokuyo before this Jikin, Ah! This Jikin may be close to Hanayuyo! It's so delicious 😋. The aroma is pineapple 🍍. Fresh taste with a bit of tanginess only because it's raw. Mineral impression too! The taste of Jijin is rich and impressive but it's skimpy. I need to re-evaluate my evaluation.

Cooler weather is finally here. I'm thinking of drinking hiyayadoroshi to warm up my sake. I thought I'd try some hiyaoroshi. The manager of my home liquor store recommended it to me. I bought this one! 60% polished Yamadanishiki from Hyogo Prefecture, 15% alcohol by volume When the aluminum cover is removed and the crown is opened The opening sound is silent. The top-tasting aroma is a modest Japanese pear. On the palate After a slightly cool tangy sensation at first After the initial cool tangy sensation, the rich flavor comes out.... This, this, this is hiyaoroshi. ☺️ The round and thick flavor spreads. Bitterness comes later. It's autumn! I can feel the season's progress with sake! Sake drinkers are so lucky!

Day 2 Today we have a tin katakuchi and a glass boar's mouth. Louder opening sound when opening the bottle than the first day ♫ Maybe because we used a katakuchi surrounded by ice. The aroma is of Japanese pear with a touch of citrus. The mouthfeel is very refreshing. Oh my god! I'm going to drink more and more!

3rd day Warm to lukewarm in the fullness of time. Put the warmed sake in a tin cup Pour it into a flat sake cup Take a sip It's not a rich type of sake. The acidity and umami expand a little and become gradually delicious.

At the recent Young Dawn (second half of the schedule) The most crowded and the one I had to forgo lining up for was the abe Instead, I bought this silver one at the sale. This silver is my companion for today's dinner! 60% polished Niigata rice, 13% alcohol by volume Stock lot vol.2-3 Remove the aluminum cover. When the crown is opened, the opening sound is a mf and a spott ♫ The top aroma is a little rummy and citrusy. There is also a sweet aroma. I can't describe how good the aroma is 😆. I thought it was sweet at first when I drank it. but it is quite crisp and dry. It has a tangy part and a bitterness There's also a rather pronounced bitterness. I can see why the brewer calls it a food sake. Second day The good aroma is still there. The individual flavors that were strong yesterday The individual flavors, which were strong yesterday, are now well integrated The taste has changed to a nice, calm taste. Today's taste is clearly better 😋. It's also a better food wine. ⤴️ I should have left more for the first day 😭

The last of the last three drinks of the second half was another Jyushiyo! First time I've ever had four different kinds of drinks in one sitting. 40% polished domestic rice, 15% alcohol by volume I believe the rice used for the EXTRA was Yamagata Prefecture's Snow Goddess! Compared to Yamadanishiki and Omachi It is a little less floral than Yamada-Nishiki or Omachi. But of course it is sweet. It has a good balance with the acidity. A little fresher than other Jyushidai wines. This is a good level to compare with Niimasa and Tasake. But when I think about which one is my favorite... I like them all after all 🤩. That was just my drunken opinion 🤣.

Three in a row of fourteen in a row came out unexpectedly. I don't know if you heard the term "jet stream attack" or not, The fifth drink in a row came out of The Red Comet, Zacrabel: ‼️ Comet 50% polished, 16% alcohol Fruity with good acidity. The aroma is gorgeous. The mouthfeel is clean, slightly dry, crisp and delicious. It's something you don't want to admit, I don't like to admit it. I'm a swamp person... I mutter to myself... Next.

It's the second half of the game! The fourth cup came out, Huh? What? A bottle of No.6? I looked and it was 2015BY😳 I wonder how long it's been laying there... 40% polished Akita rice, 15% alcohol by volume. I guess the alcohol content is higher these days. Lightly cloudy in the glass. The mouthfeel is light for the alcohol content. The subtle sweetness and acidity from the No.6 yeast and the sake yeast is the same as today's. It is the same as the current one 😋. The freshness is of course reduced, but It has a completely different flavor direction from that of Jyushiyo, and it is delicious!

What a third glass of Jyushiyo 😳! It was a jet stream attack 🤩. 45% polished Yamada-Nishiki from Hyogo Prefecture, special A district, 15% alcohol by volume. Oh, this is clearly different! There is youthfulness in the quality of the sake! Normally, I am a fan of nama-shu. But when it comes to Jyushidai, I prefer "hi-ire" to "nama-zake". I can't get enough of the rich and dense flavor of hi-ire I can't get enough of the rich and dense flavor of fire-aged sake 😉.

The first dish served was KING of SAKE❗️ Jyushidai 45% polished Yamadanishiki from Hyogo prefecture, 15% alc. The ginjo aroma of peach🍑 is unique‼️ Good before drinking, but also good after drinking 😆. What a surprise to find a Jyushidai from the very beginning of the omakase: ‼️ What will happen next? I wonder how it will turn out 😉.

After the stickers were gone I was strolling around the venue I found a warehouse I was told that PayPay would be fine, so I I drank some more! (5 stickers equivalent ❗️) There are two brands, the refreshing Yamae Nishiki and the sweet Kinmon Nishiki. There were two brands of sweet Kinmon Nishiki Try Kinmon-nishiki A brewery in Shiojiri that restarted last fall. Shiojiri is located at an altitude of 1000m above sea level and is a post town along the Nakasendo Highway. They want to play a role as a town revitalization. Kinmon-nishiki from Azumino, 14% alcohol by volume No.7 yeast It has a sweet taste and a full-bodied, mellow mouthfeel. I want to drink this in a wine glass I want to drink it in a wine glass. The third is Hiraizumi. At first I thought FOUR SEASONS. But I was told it was dry. I decided to go with sweet today. I changed to Tobirazumi, which is not seen very often. ❗️ 50% polished Akita Sake Komachi, 13% alcohol by volume. Association Yeast No. 77, Sake Degree -36 ‼️ This one is also sweet, but with more acidity than the previous Wakamusume. It has a strong acidity. It has a deep sake flavor, probably because it is made with Yamahai Junmai (pure rice sake).

Next is a sake brewery I've had a taste of. I looked at it again and saw that it was a sake brewery, but this time it was Wakamusume, a sake brewery that has not yet submitted a post. Hachitan-Nishiki 60% polished, alcohol 15.5 Luckily, it was just a mouthful: ☺️ A lively opening sound with a "spontaneous f" ♫ When you drink it, it is slightly effervescent and has acidity. It has a strong sense of koji (malted rice) and sweetness. The sweetness is on par with Kojo-zake. It's like a juice with little alcohol. I'm enjoying this new encounter.

Here we come! Sake Event Dawn of the Young: ❗️ Arrived at 17:20 and waited 15 minutes for registration. I paid 1,500 yen for 10 stickers. I looked at the map and the first place I visited was Hiran. Actually, it was my first visit to Ji Lan. ‼️ There were 3 kinds of sake. I wanted to try many kinds of sake. I wanted to try a variety of drinks, so I started with this one with 2 stickers. Collaboration sake with TANIZUMI, Noto cheering sake It's not on sale to the general public yet! When you drink it, you'll just taste the acidity: ❗️ After the acidity, sweetness comes slowly. It's been a while since I've had a sake with such a strong acidity! I was a bit surprised, so I thought about trying other brands from Hiran, but I decided to try a different sake brewery first and moved on to the next one: 🏃‍➡️‼️
