Last Sunday, I received a line from the owner of my favorite yakitori restaurant saying, "We just got this sake in stock!" So yesterday, after my wife and I had our usual massage to refresh ourselves, we went to visit the restaurant. So, the first drink at our favorite yakitori restaurant was Nabeshima HarvestMoon by Tomikuchiyo Shuzo. This will be my first hiyayoroshi from Nabeshima. When he uncorks the bottle in front of me, I hear a nice "pop"🎵The tension rises. Then, let's have it right away. First, the aroma. It has a refreshing aroma. When you put it in your mouth, you can feel a little gas. It also has a citrusy and nice sweetness. The bitterness is less, but there is also a nice pungency that spreads in the mouth. It has a full-bodied flavor, and Nabesama is always a really tasty sake. The owner grilled some grilled fish for us, even though this is a yakitori restaurant, and we were able to enjoy the autumn season to the fullest. Thanks to the owner again.

Today was one of those days when my body was more sluggish than ever💧. Maybe it's just a little bit of a bad day at work and maybe it's too much. But that's not the case, so we opened another bottle today. It is Mutsu Hachisen by Hachinohe Shuzo, the same as last time. This time it has a pink label. It is an alcoholic sake. This is a sake we got at parking Kitahama, which we visited the other day. Let's have it right away. First, the aroma. It has a sweet and refreshing aroma. When you put it in your mouth, the sweetness spreads and it feels fruity and delicious. The sweetness is not too sweet, but rather smooth and easy to drink. After swallowing, it has a gentle pungency and lingering bitterness that is well balanced and very tasty. When paired with a meal, the bitterness and spiciness are more pronounced than when served by itself, which is also delicious and goes well with the meal. Mutsu Hachisen is a truly delicious sake.

Today, I went to my wife's parents' home 🚙 with a souvenir from our trip to Toyama. It's been a while since we last saw each other, but both my parents-in-law seemed to be in good health and we talked a lot. Now that our trip to Toyama is over, we are back to our daily lives. I'm feeling a little tired from the trip, so I'm going to have a drink with them again today. Today, I had a sake from a brewery that I had wanted to try for a long time. Mutsu Hachisen by Hachinohe Shuzo. My first drink was an orange label Junmai Ginjo Hiyoroshi. I met this sake at Yamanaka Sake no Honten. This will be the last hiyaoroshi I will drink at home. So, let's drink it right away. First, the aroma. The aroma is somewhat strong, but it is hard to describe, but it is a good aroma. When you put it in your mouth, it starts with a complex taste, then a bitter taste. Then the spiciness spreads in your mouth. After that, there is a gradation of sweet and salty tastes. The aftertaste is again bitter and pungent, and the balance is very good. When the temperature rises a little, the bitterness and pungency subside a little, and a slight sweetness comes to the fore. Of course, this sake is also very tasty with a meal. The more you drink this sake, the more you will feel a different balance of tastes, and you will not be able to stop drinking.

After the after-party, I dropped my parents off at their room and went back to the hotel room. After refreshing, I felt like drinking some more? So, I had a glass of sake for crying out loud. Masuda Sake Brewery's Mansuzumi Junmai Ginjo. I had bought this bottle yesterday on the way back from the sushi restaurant. Let's start with the sake. First, the aroma. The aroma is not so strong. When you put it in your mouth, it has a soft and delicate mouthfeel. Then, sweetness and umami come together in good balance. The subtle, gentle sweetness spreads in the front, and the pungent spiciness lingers in the back of the mouth. It is well-balanced and easy to drink. It is a very tasty sake and a great finish. I will not be able to drink tomorrow as I will be driving all the time, so this is the end of my sake drinking on my trip to Toyama. All of the sakes were really delicious and it was a memorable time for me.

The last sake at the hotel's sake server was Akebono Oyobata. This is also the first sake from this brewery that we have had. So, let's have it right away. First, the aroma. It has a traditional sake aroma. In the mouth, you can feel the complexity of junmai sake, but the mouthfeel is not stimulating. It has a slightly fruity flavor, and contrary to the image of the aroma, it is very easy to drink. The quiet drinking in the hotel was very comfortable. My parents talked with me a lot while drinking whisky, which made our last night together a very memorable one.

The second sake from the hotel's sake server was Ginrei-Tateyama Daiginjo from Tateyama Shuzo. This was also the first sake from the brewery I had ever had. Let's have it right away. First, the aroma. The aroma is not so strong. When you put it in your mouth, it has a full-bodied flavor. The first impression is that it is full-bodied. The sweetness wraps around the mild spiciness and finishes it off. It is a delicious sake that is easy to drink and does not stimulate the palate at all.

After leaving Goshiki, my father wanted to drink some more. He was full, so we went to the restaurant corner on the first floor of the hotel and had a second round of drinks with light snacks. I had been curious about the sake server since we arrived at the hotel. Since we were going to be there, we decided to have sake at the after-party as well. So, my first drink from the hotel's sake server was a limited edition Mansyuusen Daiginjo from the Masuda Sake Brewery. This was also a sake from a brewery I had never tried before, but it was one I had wanted to try, so I was looking forward to it. So, let's get to it. First, the aroma. It has a sweet aroma. When you put it in your mouth, you can feel the sweetness, and the mouthfeel is smooth. The second half is spicy, and the lingering taste is bitter.

The last sake to be served at Goshiki was San Shoraku Yamahai Junmai Sake from San Shoraku Shuzo. This is also a sake from a brewery that I have never tasted before, but I was interested in it because it is from a brewery in Nanto City that I saw when I went to Gokayama for sightseeing today. First of all, the aroma. It has the aroma of traditional sake. It seems to have a lot of punch. When you put it in your mouth, you first feel the sweetness with a bang. After that, the spiciness is felt, and the sake has a traditional sake feel to it, making it a solid drink. The sake is much easier to drink and tastes better than the aroma suggests. All of the sake from Toyama Prefecture went perfectly with the delicious food and made for a great time.

The second night in Toyama was spent at Gingyogoshiki, an izakaya in town. It was the last night of our trip, but it was a very lively atmosphere, and we had a lot of fun drinking and talking while enjoying the many recommendations on the menu. The first sake at Goshiki was Katsuma Junmai Sake by Seito Shuzo Brewery. It was my first sake from the brewery. Let's start with the sake. First, the aroma. It smells a little sweet. When you put it in your mouth, you feel a good balance of umami and complexity. Then, there is a gentle sweetness. In the latter half, the salty taste accents the flavor nicely, and this is a really delicious sake.

Good evening, ma-ki! I see you are very good at making kurodoki today! It looks so delicious 🥰I know the feeling of the taste disappearing for a moment. I wonder if it's like a switch or a moment when the taste changes. If that's what you're brewing for, it's a great technique. ❣️

Today my wife and I went to my parents' house. My father's health seems to be neither good nor bad since he left the hospital, but there are some difficulties that only he can understand. Even so, he drank a glass of beer for the first time in a while today! He drank a glass of beer and we had a lot of fun talking. The sake I brought to my parents' house on such a day was this one that I bought with Iori when I went to Hanshin Department Store the other day. It will be my first time at the brewery, and it is from Shiwa Shuzo, the long-sought after Shiwa Shuzo Brewery! Junmai Ginjo Momiji Label. I finally found it~ ⤴️ Let's have it right away. First, the aroma. It has a nice, fresh aroma. When you put it in your mouth, it feels thick and smooth. The complex flavor is wrapped in a soft sweetness. The second half also has a soft bitterness, and the aftertaste is refreshingly thin and pungent. The overall taste is gentle and thin, but the balance is very good, and the light and smooth mouthfeel makes it easy to drink and does not interfere with food 🎵. We were able to spend another blissful saké time today.

I am tired again this week. Now, I was wondering what I should have today. At first, I thought it was time for hiyaoroshi. But today I decided on this sake! This is Tsuchiya Sake Brewery's Akanesasu Junmai Ginjo, which I purchased at the PARKING Kitahama Fermentation where I visited the other day. I saw the sparkling Akanesasu on Gyve's post and made a note of it. While comparing sake, I thought I would buy some sake to go home, and then I glanced at the refrigerator and saw this name! I thought I had seen this name somewhere before. I checked my memo and bought it, even though it was not a sparkling sake. I will enjoy it right away. The first thing is the aroma. The aroma is not so strong. When you put it in your mouth, a gentle sweetness spreads. This is my favorite sweetness. After that, the bitterness spreads slowly and slowly, and then the spiciness spreads quickly after a short delay. Finally, there is a lingering bitterness. Although it is described as bitter and pungent, it is not an unpleasant taste, but rather a perfect balance. This is a truly delicious sake. I don't know why sake tastes so good ✨I've been reading everyone's posts on sake-no-wa, and every time I'm too blissful.

Today is "Sake Day," right? If I had not started Sake-no-wa, I would have never known about it. I had no plans to drink today, but since it was a good day that I had just learned about, I decided to have some Kaze no Mori ALPHA1Dry from the Aburacho Sake Brewery that I purchased at the Kaze no Mori Weeks the other day. So, without further ado, let's enjoy it. First, the aroma. It has a nice, fresh aroma. When I poured it into the glass, I could feel the air bubbles - just like Kaze no Mori. In the mouth, you feel the sweetness for a moment, and then, as the name suggests, it becomes a dry taste. The chili feeling is not so strong, but I like it very much. Then, there is a bitter and spicy taste with a citrusy or lemon-like sourness. This is delicious. It tastes even better when paired with a meal. Sake day is wonderful 😊.

The second drink at our favorite yakitori restaurant was KURORYU CRYSTAL DRAGON by KURORYU SHUZOH. The owner likes KURORYU, so we have had it many times, and when it is added to the lineup, we want to drink it. Let's start with the aroma. First, let's take a look at the aroma. The aroma is not so strong. When you put it in your mouth, you feel soft sweetness and bitterness. In the second half, a refreshing spiciness and bitterness spread to the back of the throat, and it is as well-balanced and delicious as ever.
