The three-day weekend is just around the corner Today we have a brewery we haven't had for a long time Aihara Shuzo's Amego no Tsuki This time it is Okayama Asahi Junmai Daiginjo! I haven't tasted this since I first started working at Sake no Wa when I was a little red! So, without further ado, let's have it! The first day First, the aroma. It has a fresh and fruity aroma. When you put it in your mouth, you can feel the fruity citrus flavor from the gentle sweetness that is not too sweet. It is delicious! The gradation of the aftertaste is also irresistible, with a little spiciness and bitterness combining from the weak sweetness aftertaste! All the flavors are not too strong, so I thought it was a very beautiful and well-balanced sake with a sweeter flavor. Day 2 Today's sake also has a refreshing sweetness and a complex flavor, with a refreshingly gentle pungency in the aftertaste. I also feel a slight sweetness combined with bitterness. I like the feeling of the gentle sweetness seeping through. Day 3 The overall impression is very mild. The lingering taste from the soft sweetness is faintly a little citrusy? There's also a bit of bitterness and spiciness. There is also a bit of bitterness to spiciness, which is refreshing and sharp. It has been a long time since I have had a "moon after rain" sake, but it was consistently delicious for 3 days!

After staying at my favorite yakitori restaurant for some reason, I had my second sake, and the last one was Fuji Shuzo's Eiko-Fuji! This time, it's the old sake brewer's own pleasure! My first impression was that it had an interesting name. The owner told me immediately after my visit that he had something like this, even though it was not on the menu. I would have chilled it if you had made a reservation. He served it to me just as I was about to leave! I'll have it right away! First, the aroma. Not much of an aroma. When you put it in your mouth, you will feel a beautiful sweetness and it finishes softly. It is just like the Eiko-Fuji in my memory, smooth and clean. The lingering aftertaste is alcoholic and pungent, making it very satisfying to drink. It is also delicious! We were supposed to leave right away, but we were served a variety of drinks and food, and spent a blissful time drinking in a comfortable space!

This week we have our first sake from the brewery! This is the one we got last week! Takachiyo Kasumi by Takachiyo Shuzo! I had a hard time deciding between Sunrise and this one, so I chose this one as my debut sake! Let's have it right away! The first day (supernatant). First, the aroma. It smells fresh. Sweet, but not as sweet as I imagined. A little more citrusy than peachy? Soft bitterness What's that? A little peachy as it passes down the throat? There is also a little bit of a chili sensation. (nigori) It becomes a little juicy, with a slight sweetness and a lingering bitterness. It has a more robust bitterness than the clear sake, so it is not as sweet as I had imagined, but it has a good balance. It is delicious with a meal. The lingering taste is peachy, isn't it? Fourth day (supernatant). The fruity sweetness is mashed up - the bitterness weakens and soaks through to my sweet tooth. The aftertaste is smooth and refreshing. Is it a pungent taste? So it's good to be able to drink it refreshingly. (nigori). The juicy sweetness is also very refreshing. The lingering taste at the top of the throat is more peachy than the top clearings. There is a sense of gas and it is very satisfying to drink. It was my first Takachiyo, and although it was not as sweet as I imagined, it was delicious!

So, after dropping my wife off, I went to the local supermarket to buy a few things and had a quick bite to eat. So I started drinking at home from noon today! Today's sake was opened on Friday, but I chose it because I wanted to drink a sweet sake! Miyoshi by Abunotsuru Sake Brewery, which is our first brewery! This time it's HANA '20-'24! This one is based on the 2020 sake, and is blended with the sake made in that year every year. Last year, Yamanaka Sake Brewery recommended this sweet sake to us! Let's have it right away! The first day First, the aroma. It has a sweet aroma. When I put it in my mouth, it is sweet~ delicious~! It soaks into my tired brain! It is very beautifully sweet and delicious! The saltiness lingers in the aftertaste, while the sweetness is felt all the way through. However, it is not at all sweet. There is a slight bitterness at the end of the aftertaste. This is delicious! 3rd day It has a beautiful sweetness today as well. Because the mouthfeel is beautiful, it is not too sweet and can be drunk easily. From the middle part of the bottle, there is a slight saltiness and a weak bitterness. It's so good! We are having a blissful drinking time today!

The fourth and last drink at our favorite yakitori restaurant was Houou Mita by Kobayashi Shuzo! This time it was the Arashigiri Oshikiri merger. This is the first time for me to drink this label too! So, let's have it right away! First, the aroma. It's hard to describe, or maybe I'm just too drunk (lol), but at any rate, it smells great! When I put it in my mouth, it is soooo good! I got the impression that the balance of flavors is very good! The sweetness was also very strong, which stuck with me and I enjoyed it very much! It had been a while since my wife and I had been to a yakitori restaurant, but tonight, too, we enjoyed delicious food and sake in a comfortable space.

The third drink at my favorite yakitori restaurant is Hirakou Shuzo's Hidakami. This time it was a light nigori sake. It's been a year since I've had this label. The lees of Kido's nigori was a huge amount, but this one is called "light nigori" and there was only a little lees, so we only drank the nigori. So, let's have it right away! First, the aroma. Not much of an aroma. When you put it in your mouth, the first impression is that it is delicious with a predominant umami flavor! The mouthfeel is clean. The aftertaste is sweet, spicy, and bitter. This is delicious! Hidakami is a great match for delicious chicken dishes!

Leisurely today! Oh yeah, there's a little bit of jishimayase left that I brought home from my favorite yakitori restaurant. Since such a rare opportunity doesn't come along very often, we decided to do a drinking comparison of the same brewery! So, today we had Takasago by Kiyamasa Shuzo! So, let's have it right away! The first day First, the aroma. It smells fresh. When you put it in your mouth, you can feel the fruity flavor. The mouthfeel is very clean and smooth. After the salty taste, there is a gradation of bitterness and sweetness. The aftertaste is refreshingly spicy. It has a different taste from Jikin, but it is really delicious and I like it a lot! My wife seemed to be more comfortable drinking this one than the Yanase. The 2nd day The mouthfeel is as clean as ever! The complexity of the taste is a bit like old-fashioned sake, with a slight sweetness and bitterness gradation. The overall impression is more mature than yesterday. The lingering aftertaste is also dry and slightly sweet. However, when served with a meal, the beautiful sweetness and bitterness became more apparent, and I felt again that this sake is delicious as a mealtime sake. Tonight's sake also healed me well!

The ingredients were oysters and albacore! He must have remembered that I told him I liked albacore last time! Thanks to the owner! And here is my accompaniment for such a wonderful evening! Jikin by Kiyamasa Sake Brewery! This time it's Yanase! The proprietor prepared it for us tonight: ⤴️ Since it was a special occasion, we all enjoyed it together! First of all, let's take a look at the aroma. It has a soft and gentle aroma. When you put it in your mouth, it starts from sweetness. Then, a soft aroma wafts through the nose. It has a slight bitterness and a sharpness that is different from the Jikin that we are used to drinking, but it is delicious! Even though it is al-douched, it is not sharp and clean from start to finish. The aftertaste is a gradation of spiciness, bitterness, and a hint of sweetness. As you continue drinking, the whole flavor becomes richer and richer. It is too good! The image I had of this sake was that it was gorgeous and delicious! When I saw a post about Risshun Asa Shibori on Sake-no-Wawa, I wanted to try it myself! I was so excited that I dropped by the liquor store on my way home from work! Today's sake is Gobashi Tachiharu Asashibori from Sakai Shuzo! This is the first Risshun Asashibori! And it's been a while since I've had Gobashi! So, let's have it right away! First, the aroma. It has a refreshing aroma. I love the aroma of sake! In the mouth, it's chirpy~ It's so energetic~! And what's more, it's fresh and lush! It is heavy with a hint of sweetness, but the mouthfeel is beautiful. From the middle to the latter half, the taste gradually changes from bitter to spicy with a lingering aftertaste. It is also a delicious sake. It is a delicious sake with a good balance of sweetness, bitterness, and spiciness, even when paired with a meal. I am so thankful that I have never heard of Risshun Asa Shibori if I had not started sake-no-wa!

This is the first time for me to drink Nabeshima's Yamadanishiki, and the first time for me to drink it at home, but I got this sake at Komenohana, which I visited last year! Today, the last day of January, I had my annual physical exam with my seniors! I went in with only 4 days sobriety, but the result was, well, you know....... After the checkup, we had the usual unhealthy lunch! This year, I ate a lot of beef cutlets! And for the first drink of the day after my abstinence from alcohol, I just wanted to drink this one! Hana-no-Kou Sake Brewery's San-do! This time it was a 2023 Yamadanishiki Ninonosai! I thought it would be absolutely delicious, so I immediately started to drink it! First, the aroma. It has a refreshing aroma. When pouring it into the glus, there are air bubbles - it's a quintessential Sansho-san! In the mouth, the sweetness and chili are exquisite. It also has a slight sake flavor, which is also good! The bitterness and pungency are only slightly felt in the second half. The freshness that spreads in the mouth is also blissful! It is really delicious too! My wife also gave it her seal of approval! It is a little sweeter than the Rokunozo we drank at New Year's, and I have the impression that it is even easier to drink! I haven't been doing much to quit drinking, but Sanndo-san was definitely delicious and made me spend a blissful time drinking after my abstinence from alcohol! This time it was Shiwari-Gobun Hyakuden, a 1 gou can sake! I happened to find it at a liquor store in Minami last year and brought it home! I appreciate 1 gou cans when I want to drink a little! So, let's have it right away! First, the aroma. It has a refreshing citrus aroma. When you put it in your mouth, it is sweet, delicious, and fruity! Already delicious! After that, a slight bitterness and spiciness, which may or may not be present, come on top. In the aftertaste, a sweetness different from the one you felt at the beginning comes out. It is easy to drink and delicious! I have the impression that this delicious sake in a can is quintessential Tasake! My wife also said it was delicious! Good sake really makes me feel blissful!
