We are very happy to have Jikin again this year.
It has the umami of Gohyakumangoku, melon, juicy but not too sweet, and a hint of gas.
It's still outstandingly delicious this year, Jikin-san 😫👍!

The taste is not flashy. Although it is hiyaizu (fire-roasted), you can feel a tangy and fizzy sensation on your tongue. Sourness and bitterness support the sweetness typical of Aizan. Total balance is outstanding.
