I've already opened all of the Nagano sake that has been stored for a long time, so now I'm going to open the pre-brewed sake that has been stored for a long time without being opened 🤣. First up is Jikin's Special Junmai Nama 😀. Jikin has a good balance, but this special junmai nama is the one that sticks out to me the most😇. Today's sake comparison is Shinshu Kamerei and Tsukiyoshino, both of which were opened earlier, but since they are all delicious sake, we chose Japanese food such as sushi, bamboo shoots and eel liver so that the food would not interfere with the sake 🤣. All the sakes are definitely delicious 😀. We were able to compare the best of the three sakes: the well-balanced Jikkimasama, which I never get tired of drinking, the 🐢sama, which has great flavor and sharpness, and the Tsukiyoshino, which matches its gorgeousness and gentleness 😇.

For the record Sake with no miscellaneous flavors 🍶. Fills your mouth with flavor 🍶. It is delicious no matter what you eat with it! I don't think you can get it anymore Last but not least Peel off the label Thank you for the food✨

When I ordered the Jishin, I also got this one as a service since there were only a few left! Lucky me! 😋 I think this one is even less sweet than the Sake Mirai, or rather, more tame. The acidity makes it easier to drink, so I have the impression that this one is better suited for moist drinking 😚.

After the toast, a pre-drink, which is only available in the course, is served before the first course item arrives. At first, there was Jikon, so I ordered it without knowing which one of Jikon it was, but it was a sake future that I hadn't tasted yet! 😀 I don't know if Sake Mirai has some kind of image color or what, but they all look cool and blue-ish, don't they? A little tender, maybe? The sweetness that is not too heavy despite its voluptuousness and the acidity that shows up at the right time seem to make it easier to drink overall. I want to sip it every day!

Jikin Junmai Daiginjo Hakutsuru Nishiki Hi-ire" by Kiyamasa Shuzo Very clean aroma reminiscent of green apple, ramune, and citrus. The carbon dioxide gas from the fermentation is dissolved into the wine, and the soft and transparent texture, dense umami, sweetness, crisp acidity and a hint of bitterness are balanced out by the wonderful sense of balance, freshness, colorful luster, acidity and bitterness. After opening the bottle, the umami spreads as the temperature rises. A gem of surprising quality! Hakutsuru-Nishiki is a "little brother" variety of Yamadanishiki, which has the same mother as Yamadanishiki and father as Watabune. Hakutsuru Sake Brewery registered the variety in 2007 after selecting it out of 800 candidates over a nine-year selection process. There are many sake rice varieties with Yamada-Nishiki as a single parent, but none have surpassed Yamada-Nishiki, so the rice was crossbred again to obtain a brother variety. The characteristics are similar to Yamada-Nishiki, but with less amino acids and higher alcohols, resulting in a "softer" taste. Comparison of the genetic sequence showed that Yamada-Nishiki inherited many areas from its mother, Yamadaho, and Hakutsuru-Nishiki from its father, Watabune.
