Overnight trip by car to Murakami City, Niigata Prefecture After enjoying salmon dishes at Izutsuya Kikkawa, I dropped by Tamura Sake Shop and bought a variety of items, and the owner recommended this one. Hirata Shu, the toji (master brewer) of Taiyo Shuzo, tasted 10 different kinds of sake, from 60% polished junmai ginjo to 40% polished junmai daiginjo, and blended them to perfection. After receiving the explanation, we purchased the bottle. The aroma was not so strong. Slightly sweet, slightly sour Slightly sweet, slightly sour, slightly bitter. I felt that it was a combination of the best of both worlds.

Long overnight trip to Murakami City, Niigata Prefecture in late October On the way, we often stopped at Yoshikawa Touji no Sato Roadside Station in Joetsu City for a rest. which is both a brewery and a roadside station. There were numerous sake in the store and a place on the second floor where sake brewing was explained, which was well worth seeing. Flipping the bottle as the oriki is precipitating. The sweetness of the rice spreads out for a moment, then is accompanied by a refreshing bitterness, and the sharpness is very good! Buy it at the brewery

On the way back from an overnight stay in the car to Hida Furukawa I stopped by Hirano Brewery in Gujo City along Route 156. A small and cozy brewery. The sales office had challenge saké in the fridge, but they were sold out of the fresh, so I bought the fire-roasted version. Well, let's chill it well and open the bottle! Oops! Before that, I flicked the bottle because it was lightly cloudy, and the aroma was muscat, as described in the description! When you put it in your mouth, you can feel the sweetness wafting through the air. with a little bitterness in the back of the throat. Alcohol content 13.7 Sake meter rating +8 Very tasty. 😋

Returning from a car ride in Hida Furukawa I stopped by Hirano Brewery, a sake brewer in Gujo City. Hirano Brewery, which brews sake in Gujo City. It was raining a little and felt chilly. The bottle was opened with a simple crown without a cork. Large bubbles 🫧🫧 with a slight amber color when poured into a wine glass I thought it would be sweet, but it was crisp, carbonated and dry, refreshing and crisp👍. I wanted to drink it after a bath on a hot summer day.

I picked up AKABU for the first time in a long time. The amber label attracted me. The aroma reminds me of pear and muscat. It's an autumn rise, but it's not heavy and the low alcohol content of 13 degrees coupled with the lightness is a pleasure to enjoy. ☺️ It has juiciness, light and elegant flavor, and a very good balance of sweetness and a little bitterness. Driving to Higashiomi with my wife Visited Higashiomi Aito Margaret Station, a roadside station, for lunch As I was rummaging around in the store, this caught my eye. They started a project a few years ago to reproduce sake from 444 years ago, and they are brewing it in cooperation with Kita Sake Brewery. I tried it cold and lukewarm. Cold: Almost no aroma. 　　The mouthfeel is a little sweet, but soon the acidity comes in and it finishes with a tangy, spicy taste. Nukan (lukewarm): Aroma of rice, sweetness, umami, and a good nose.

Long time no post I've been chomping at the bit for homemade plum wine of late. Chose this sake while shopping at the supermarket. Not too sweet for a sake degree of -35 I got the impression that the acidity outweighed the sweetness. It was halfway through at room temperature, so I think it would have been better if it had been chilled. I will not repeat 😱.

On a road trip to Shinshu, we stopped by Houraisen Ginjo Kobo on the way and bought 180ml. As expected, I couldn't buy the 720ml because it is by reservation only 😭. I've been wanting to try it for a long time. Sora It has a fruity and elegant aroma You can taste the elegant sweetness and acidity And it has a nice sharpness It is a beautiful sake. Delicious!
