The rice is called Sake Mirai, which is produced by the Takagi Brewery of Jyushiyo.
The first sip had a refreshing fizziness and light umami, as if it were light. I thought it was light, but as I drank more, I could taste the umami.

It is the sake future of packaged sake. It only looks good, but it is still good. The aroma is fresh, and in the mouth it has the perfect balance of sweetness, acidity, and richness, with a hint of gas. The taste of freshly squeezed sake is evident. The aftertaste is neither too light nor too sweet. Muscat Kibi Dango with this sake. Muscat Kibi Dango by itself is delicious, but when combined with sake, the sweetness is reduced and the acidity and fruity aroma are enhanced, making it a high-class sweet.

First of all, Sake Mirai from Kafuda Sake! I've been drinking a lot of Sake Mirai sake lately, but this was so good! ♡♡♡♡
The nose is gorgeous and fruity.
The mouthfeel is sweet, but soon after, one senses a soft pungency, acidity, and a sense of effervescence. The aftertaste is light with a hint of sweetness.

This wine is both watery and fruity. As it quickly enters the mouth and warms up in the mouth, the umami of rice and grape-like fruity taste spreads. Finally, along with the umami of the rice, there is a slight astringency and bitterness, and the whole thing finishes off nicely. You can drink as much as you want. (The low 13% alcohol content may also be appropriate.)

Purchased at Nagaoka station during a business trip to Niigata.
It is a Kamo Nishiki sake sold only in Niigata Prefecture.
When served in a glass, it has fine bubbles. It has a slight gaseous sensation, with a noticeable acidity that makes the tip of the tongue churn.
It is a beautiful dry sake with a fruity yet bitter aftertaste.
I had it with sukiyaki, but it went better with rice with bamboo shoots.
