I went to CRAFT SAKE WEEK 2025.
This is the second time I have attended this event since last year 🤗.
I conquered the packaged sake, so I'm going to the main body too 😉.
Somewhat, Mr. Tanaka, the toji, is ❗️
He is tall and handsome 🥳.
In addition, he is a genius at making sake. Heaven has given him 3 things😇.
Sake 🍶.
You can see the carbonation in the glass, it's a slight schwar🫧.
Thin but elegant sweetness 🍶☺️
Slight lemon🍋 like acidity in the second half.
The aftertaste is bitter and ends there.
I don't have many chances to drink Koshitanrei, but I guess this is how it is 🤔.
I would like to drink other brands to get a better grasp of the characteristics of the sake rice 🤗.
If I can grasp it... 🤣

◾️ Sake Mirai Shizukusyu To-bin Ensoi 🍶.
It's a little bit sweet and a little bit like a sake 😉.
The carbonation is extremely weak and refreshing 😚.
◾️Yoshikawa Yamadanishiki SPARKLING🍶.
This may be the first sparkling sake with a packaged sake 🙄.
You can't see the bubbles but you feel a gentle crackle🫧 on the palate. I guess you could call it a slight gassy sensation 🤔.
It must be secondary fermentation in the bottle 🤓.
The sweetness and umami from the rice🌾 is the base, but the faint crackling🫧 is deceiving🫨.
I felt it was less like a packaged sake, maybe because of the bubbles🫧🤗.
The aroma is sake.
In the mouth, it tastes sour and fruit-like, I don't know how to describe it.
After the sweetness, the spiciness soon overtakes it.
Is it because I ate Szechuan bean curd afterwards?
It's been a long time since I've had a bottle of Shippuda Sake 🍶.
It tastes sweet without bitterness right after opening the bottle, but after a few days, it tastes a little bitter.
As a food sake, it is very tasty 😋.
80% Kame-no-o rice produced in Oogata Village, Akita Prefecture
Polishing ratio 50%.
Alcohol content: 15% (Unpasteurized)
This sake came with me when I visited Hasegawa Sake Shop one day. I had wanted to try it, but the price was too high, so I couldn't afford it.
Now, let's get to it! From the aroma, the fruity flavor is in full swing. The fresh aroma of apples and muscats is very pleasant. The water is soft and a little tight. The fruity sweetness and acidity, like muscat, are wonderful! And this is where it really comes into its own. Not only is it sweet, but there is a pleasant astringency afterwards that really brings it all together nicely. This is the factor that gives the sake its complexity. This is how this fruity, yet astringent, excellent sake is born!

I wandered over to the Hasegawa Sake Shop at Tokyo Station and found Kame-no-o, a packaged sake 😳.
First time I saw it and bought it immediately: ❗️
It's clear and sweet 😚.
The mouthfeel is slightly carbonated but clearly sharply contoured 🧐.
The aftertaste is lightly accented with a touch of bitterness.
I didn't feel much of the packaged sake character, but I wonder if this clear and sharp feeling is a characteristic of the sake rice ❓
It made me want to try more different brands of Kame-no-o 🤗.

Rice polishing ratio 40
Moderately sweet and umami on the palate. The lingering aftertaste is also umami with a slight astringency. Delicious. I prefer Aiyama to Yamadanishiki.
In this series, I prefer Sake Mirai, Aiyama, Yamadanishiki, and Kame-no-o in that order.
