This is the one we drank a while ago.
Winner of the first prize in the Junmai Ginjo category of a sake competition.
The aroma is gorgeous and fresh. It also has sweetness. Quintessence.
It has a wonderful balance of juicy sweetness and acidity typical of Yamada-Nishiki. It is a beautifully arranged sake with a sense of freshness.
Serve with oden (Japanese stew).

Kankoubai Junmai Ginjo AKI Owl Label 2025BY✨
This is a hiyaoroshi from a sake brewery in Mie that brews sake and plum wine, and is probably one of their autumn-aged products.
The aroma was somewhat plum-like, which may have been my own illusion, but it had a refreshing acidity.
The first sip of the dish is a tart and sour taste, followed by the sweet and juicy taste of apples, Japanese pears, green plums, and cherries. Delicious 😋😋😋.
The back palate is sweet and umami with a dry sharpness, so it is a bottle that can be drunk without getting dull. ☺️

We had this one a little while ago 🤗I thought it was a little too sweet the first day, but the next day it calmed down and was even better! But the next day, it was more delicious! I want to win the animal series!

After opening the bottle, the gaseous and fruity taste is so refreshing that you can drink as many glasses as you like.
Very fruity. The ultimate in fruity. When you take it to this extreme, the only word that comes to mind is "delicious. It is fire-roasted but has a gaseous, clean, and refreshing taste that is very delicious. Perfect with sashimi.
