Purchased after being allowed to taste it. The aroma is subdued and light on the palate, with a spreading umami flavor and little acidity. The finish is gentle and crisp, and the lingering aroma is rich and unique to Omachi. Speaking of Omachi, the aroma, umami and complex flavor spread from the moment it enters the mouth, giving it a different taste.

I was curious about this sake in addition to the one I was looking for, so I purchased it through a mail order from a liquor store. From the sweet fruity aroma, it has a pleasant sweetness and a hint of gas in the mouth. After the sweetness, there is also a sourness, and it goes down the throat gently and smoothly. There is little aftertaste. With a slightly low alcohol content of 14%, it is a delicious sake that is easy to drink and makes you want to drink it. Overall, it is a gentle sake, so we served it with hot pot, and it went well with it without getting in the way.

Half interest in Ni-Rabbit, half buying the label. The theme is different every year, and this year's is a low-polished, 80% Aizan rice. The aroma is slightly sweet, and on the palate, there is an initial sweetness, followed quickly by a rather firm acidity and a slight bitterness. It has a sharp taste and lingering aftertaste. The 80% milled rice ratio may be one of the reasons for the overall flavor, but it is delicious in its own way. I drank it with a meal, and it matched well with miso soup, which is a little thicker. It seems to go well with darker foods.

I knew it was the ultimate food sake, and since I was looking for a food sake, I did not hesitate to buy it. There is not much aroma, but a subtle sake-like aroma. It is the ultimate food sake, making you want to eat and drink again.

I thought I would try something other than sake for a change, so I went with Hououmida's Umeshu (plum wine). When drunk without shaking, the sake aroma comes in a flurry, followed by the sourness of the plums and a lingering aftertaste. After shaking it a little, the freshness of the plums and the firm acidity spread in the mouth, and the sake finishes it off nicely with a lingering aftertaste. It is delicious and you can drink more and more. I have not yet had a sake Hououmida, so my expectations for sake Hououmida have increased.

I visited Imanishi Sake Brewery and was fascinated by the explanation given by the clerk. The aroma was not so noticeable before drinking, but when I sipped it, I was surprised by the taste, which was a harmony of subtle gasiness, fruity flavor, and bitterness derived from the wooden vat. It goes down the throat refreshingly, and the lingering aroma is irresistible. I felt it tasted even better when drunk before or after a meal.
