Opened the bottle❗️Oh 💦I'm not feeling very energetic⤵️ like I was last week 😂.
I took a sip after getting the aroma...
It has a nice tartness and sweetness, and the mouth feels like it's being shaken, so it's no wonder the bottle didn't have any oomph when it was first opened 😍.
It's so good 😋.
I can't stop loving the Yamasan💛
I'm glad I had the heart color 🤪.
Now for the Yamada Nishiki 39% polished!

Quintessential, great sweetness, acidity and a bit of chili - = no complaints ‼️
In comparison, the highly polished Kinmon Nishiki 🤎 has a stronger sweetness and a surprisingly koji-like flavor.
In contrast, Yamadanishiki💛 is elegant and sofisticated
I noticed that the Kinmon-Nishiki was a bit more peculiar, so I decided to pair it with Parmigiano-Reggiano, which is a very good marriage 😉.

It has a great balance with the acidity that is typical of Yamazan, not quite sweet and delicious👍.

This is also my first Yamazan! We had the light nigori, which is a 55% polished Hitogokochi!
It is sweet and sour and juicy, with a hint of bitterness, but it is also slightly sweet and greeful. The last taste is slightly spicy and bitter, refreshing and suitable for summer 👍.
