I thought it might be modern and unfiltered, but it was the first sake brewed with Yamae-Nishiki, so I gulped it down with a curious look on my face.
This... A sense of minerality!
If you want to call it modern, it is modern, but if you want to cite it, it is a type of sake like Kaze no Mori or something like that, which is characterized by that kind of complexity.
It is quite an interesting and delicious sake.
I would like to try other Yamazan and also sake brewed with Yamae Nishiki.

Hatsuyuki Light Nigori 2 years aged from Yamazan, my favorite.
This is my first brand.
It was a sake that I found irresistibly delicious, with a firm pear-like sweetness that greatly exceeded the sweetness associated with the gentle ginjo aroma, a slight gassy feeling, and a slight bitterness that left a gentle aftertaste before disappearing.

Well, as for the taste, the top aroma is calm and sweet, like banana.
To be honest, I couldn't really tell what the overtone was, but I would say it was a slightly fruity sweet aroma 🤔.
There was a slightly medium gasiness, with a strong sourness and bitterness.
The sweetness is not as much as I expected, and the flavor seems to increase slightly from the mid-palate.
Overall, I had the impression that it was a little heavy, and I thought that the acidity and bitterness were its characteristics!
Well, there is no doubt that it is delicious, but if you ask me if it is my favorite, I don't think so...(ω・ω・`)

I felt it was in the same vein as Velvet from Motomine Tsuru, which we compared and it didn't feel out of place when we drank them side by side 🤣.
