The last Yamae Nishiki light nigori🩷 we received was delicious, so when we found this Yamada Nishiki🧡 we immediately bought it💸.
I was looking forward to opening a bottle of Yamada Nishiki as well, because you can't go wrong with Yamada Nishiki with these specs, and I've realized just how high the level of Yamasan is just by drinking it last time 😆.
So let's have it right away 🥂.
The aroma is slightly sweet.
In the mouth, you can feel the sweetness of the beautiful Yamada Nishiki rice, no gasiness, and the acidity swells up in the second half!
There is no sharpness, and when the acidity passes in the back of the mouth, it leaves a lingering aftertaste that is a combination of sweetness and astringency.

Totally different from the previous light nigori🩷!
It's less sweet, less fruity, more like it's playing with the delicate taste of Yamadanishiki rice.
There is nothing sharp at all about the beautiful rice flavor, and it is very elegant 🥰.
The acidity in the second half has an impact, but the balance is superb 🧡.
This is a great bottle for a food sake that complements a meal. ☝️
Personally, I would have liked a little more sweetness 😅I think the sourness in the second half is orange 🧡 from the label, but the astringency at the end makes me think it's bitter orange 🍊... 💧.
Yamadanishiki🧡 was good, but I like light nigori🩷 🏅.

When you drink it,
First of all, it has a chilli-like acidity and lactic acidity.

Yamada-Nishiki: I expected a gorgeous sweetness, but I was wrong😅.
It was really like Yamazan with a sour taste.

I think that Yamazan, right after opening the bottle, tastes better than Aizan and Yamada Nishiki from Hyogo, Hitokochiki, Kinmon Nishiki and Yamae Nishiki from Nagano.
On the other hand, the other day, Aizan turned out to be better after the second day...

We had the first Yamasan. It is Hitogokochi Junmai Ginjyo Usunigori.
Following Shinshu Kamerei, this sake is from Ueda City, Nagano Prefecture.
Like Ginkame, there was only one bottle left in the refrigerator of a liquor store, so I bought it together with Ginkame. At that time, there was another bottle each of Yamasan Yamae-Nishiki Usu-Nigori, San-do no Kako Shi-no-Kozo, and Yamada-Nishiki Go-no-Kozo in the fridge. I couldn't believe my eyes when I found them because they were all sold out at every liquor store at that point. It might have been a kind of cancellation of reservation or release of reserve stock. I wanted to buy all of them because I had been interested in all of them but had missed the timing, but due to the capacity of my refrigerator, I gave up on Yamasan Yamae Nishiki and gratefully bought four bottles.
The first Yamasan was a delicious sake that lived up to the rumors. It showed a lot of energy from the moment the bottle was opened, and the mouthfeel was crisp and gassy. It has a fresh and juicy peachy flavor, with a graininess of rice that only nigori sake can have, and finishes with a sharp bitterness. I like light nigori sakes to begin with, but this one is right in the middle of my favorites.
This is another sake that I found troubling.

I didn't know it was the Hokuriku series 😲It's easy to switch between Kanazawa and Toyama because they're close to each other 😄.
I went to stock up on "Yamazan" because I've been wanting to drink it for a while, but I was so distracted by other brands that I didn't buy it.
This is the first time I have had Yamada Nishiki from Yamazan.
The aroma is more acidic, muscat, and rice.
A little more classical than usual.
When you drink it, you get a fresh, woody aroma of muscat on the nose, followed by a light sweetness and a gentle umami flavor.
When paired with food, the full-bodied acidity is more perceptible and good!
The next day, it has an apple-like acidity and richness.
On the first day, I thought it was not so much like Yamazan, but I like this mild acidity.
On the third day, the aroma is more citrusy and sour.
No chili when you drink it. The taste is fruity but calm, like muscatel, citrus, and mild apple.
The richness spreads slowly and the acidity tightens up at the end, and there is a slight alcohol sensation down the throat.
It is delicious on its own, but you can enjoy it even more when paired with a meal.

I tried this wine because it was recommended by Sake-no-Wa.
