Yamazan Shuzo has made a great comeback after a hiatus from brewing. Yuki Kurihara, who used to work at Hakurei in Kyoto, has taken over as toji (chief brewer) and brews excellent sake.

We had it cold.
When poured into a glass, countless bubbles adhered to the bottom of the glass.
The color is clear and almost colorless.
The nose is gentle and gentle, with hints of honey, cotton candy, and grapes.
The mouthfeel is juicy and slightly effervescent.
In the mouth, the complex, rich, and full-bodied sweet aroma quickly passes through to the nose.

This is an unfiltered, unfiltered, unadulterated, unblended sake of Yamae Nishiki and Hitogokochi from Yamazan, whose popularity is on the rise. ☺️
The aroma is a mature apple 🍎 The taste is juicy, sweet and acidic, with a rich brown sugar flavor with a little bit of maturity. The finish is quite dry and bitter, which is typical of sake 😋😋😋😋 It suits this season, which is becoming a bit like autumn, but personally I would have liked a little more acidity 😊.
