We brought this from Shimizuya in the summer. Last year's bottle was a crown, but this year it is a screw cap. I was worried about opening the bottle, but it was just a light push. It was a little disappointing. I was worried about whether it would be a bit shrieky, but when I poured it into the glass, it was very fine.
I can only say that it is not too dry and has a lingering taste.
I had it with the second day of NEW ENGI.
Well, today I am off to Takada in Joetsu City to participate in the Echigo-Kenshin SAKE Festival 🍶.

It was a day when we wanted to drink it with a meal, but the already-opened Omine was too sweet, so we decided to open another bottle of Yamasan.
It seems that our usual liquor store has recently started to carry it, and I was delighted when I found this one in the store.
It has a chili sensation on the tip of the tongue, a soft sweetness, and a slight citrus peel-like bitterness in the aftertaste. The overall impression is cohesive and refined. Despite its elegant flavor, it is light and easy to drink, making it a good toast.
I had put it on my shopping list for Novy after reading your review 😁 but it was sold out at a few liquor stores 😢 I was about to give up for this season 😩 when I was looking at the fridge at a liquor store a little further away....

I was going to drink it 😅at first, but then I saw on Sakewa that it was Sake Day, so I decided to open a bottle of Yamasan Spark that I had been keeping in the fridge 🤗! I've been in sakewa for 5 years now.
I've been drinking sake for 5 years now and every year I forget about "Sake Day" 😓.

The aroma is fresh and citrusy 😌.
The first sip of this wine is a bit of a surprise, and the flavor spreads to a fresh acidity! The bitter taste is then released 😋.
In the Sake-no-wa report, Ymdaz said that the balance was improved by letting it sit for a day, and Kotaro also said that he felt a Mori🧐-like flavor.
We too were like, "Should we stop and put a lid on it now?"
"Hmm? I'm drinking it now, so it's the last one. ⁉️"

I was so happy to beat Brazil that I also opened a bottle of Yamazan!
Yamazan has a light, fruity image, but this one made with Kinmon-nishiki is quite robust.
I was a bit surprised by its low center of gravity and dense atmosphere.
Nevertheless, the fact that this sake does not tire one's palate is a true testament to its quality.
It is a dangerous one that can be enjoyed with strong-flavored snacks for a long time!

After a night of drinking, the fruity atmosphere that is typical of Yamazan came out!
I'm the type of person who likes to eat my favorite foods in the second half of the year, so I left the Yamae Nishiki🌾 out of the two Yamasan 2-year aged varieties.
If I have fun, I'll open it.
The aroma is rummy, grapefruit, and softly sweet malted rice?
Chilli shuwa when you include it! The rice is sweet and rich, with a sizzling acidity that ends with a slight bitterness.
Mellow, calm, roundness and chili freshness coexist...amazing!
Delicious even after a few days.
Fluffy sweetness and light bitterness - clean and tight. Come to think of it, it may not have the same Mori🌳 feeling (?) that I always get from Yamazan's Yamae Nishiki. I always feel that the forest🌳feeling(?) that I always feel in Yamazan🌳 Nishiki is not so much.
The unaged version is the same, but the Hitogokochi is a bit more sharp and bitter. Yamae Nishiki is softer and fluffier and sweeter.
Both were delicious✨.

I wanted to drink a nigori type sake for the first time in a while, so I opened a bottle of Yamazan's light nigori 😀.
This Usu-Nigori is a really thin nigori😇
There was no automatic stirring and I was able to take the supernatant and the mixture properly, but it doesn't look much different 🤣.
But the taste was quite different and surprising 🤣.
The supernatant sake has a strong umami and fruity taste, but the mixed sake has a more complex umami taste and tastes even better 😀.
In my opinion, Shinshu Kamerei is still my favorite Nagano sake, but Yamasan and Mikotsuru are competing for the second and third place.
Sake from Shinshu is really delicious after all 😀.

This is a restaurant in front of Matsumoto station where you can enjoy delicious soba and sake. This sake is on the night menu, but when we asked, they served it for lunch as well. Thank you very much for your time.

We had a bottle of Junmai Ginjo Yamadanishiki Unfiltered Nama-shu from Yamazan.
It is one of my favorite brands from Nagano Prefecture these days. Not only do I love the taste, but I also really like the design and coloring of the label. I like sake labels so much that I take pictures of all the sake I have ever purchased and then peel off the labels and file them away, so the label design is important enough to influence my decision to buy or not buy sake.
To be honest, there are many times when the taste of the sake I buy is not what I expected, but Yamazan is one of those rare cases where I like both the design and the taste of the sake to the highest level.
This Junmai Ginjo Yamadanishiki Unfiltered Unrefined Nama-shu has a sweet, fruity flavor with apple nuances typical of Nagano Prefecture, and the freshness of the sake can be enjoyed only with nama-shu.
Not only is it sweet, but it also has a nice crispness due to the alcohol taste that quickly passes through the nose and the bitterness of the aftertaste.
We still have a few bottles of Yamazan in stock with different labels, so we will enjoy them one by one.

As I thought, the light nigorigo is also quite tasty. Kinmon-nishiki is also good, but this one is easier to drink!

This is the first time I have had Yamasan, which I was curious about. The label is simple and cool with a sense of Kumiko.
When the Kanai family, the founders of the company, started their business, it was rooted in the community as "Yamasan Shoten" dealing in rice, miso, sake, etc. The name of the brewery was also changed to "Yamasan Sake Brewery" as it is.
The brewery stopped brewing its own sake around 2015, but it is now closed due to aging facilities and aging brewers. 
However, sake brewing resumed in February 2023. Started out on a small scale (about 60 koku). 
There appears to have been considerable investment in equipment, with a refrigeration facility, temperature-controlled tanks, and a re-equipped koji room listed.
