The second bottle of Yamazan
From the previous "Junmai Ginjyo Yamae Nishiki 50 polished, unfiltered, raw sake".
This Junmai Ginjo Hitogokochi Gowari Gobun Usu Nigori Unfiltered Nama-shu was more to my liking.
Slightly sweet and not too sweet.
Not too sweet
Not too sweet, just right.
I can drink it in gulps.
Delicious 😋.
I saved too much of last year's one, of course... Is it like the predecessor to the sparkling 🤎 that came out this year? (since it was a crown and not a battledore).
The aroma is sweet rice, citrus, grapes. Maybe some muscat?
When you drink it, it has a chili-swirling mouthfeel, grapes, and honey-like sweetness. I still think it has a bit of an aged feel to it. I put it down...
After a little while, the impression is the same.
The honey-like aroma that comes through to the nose is dense. But the taste itself is not sticky, so the aftertaste is clean.
This is delicious, but I wish I had drunk it fresh!
Unshakable love of the three mountains 🩶.
The first 2025BY Yamae Nishiki was
Unexpectedly, I was on a business trip and couldn't buy it💦.
Start with the 2nd Hitokochi ▶️
Hitogochi from Yaehara 55% polished,
15% alcohol by volume
Yamazan's draft sake is supposed to be insanely delicious 😋.
The sound of the bottle opening is a powerful mf pop!
Microbubbles are all over the glass when it is poured 🫧.
The top aroma is green apple.
The first thing you feel when you drink it is a pleasant freshness with the microbubbles popping in your mouth.
Taste,
Oh, it's quite dry.
It has a dry finish with little sweetness and umami.
The bitterness of the last taste is also quite clear.
It is a good sake to drink as a mealtime drink.
Maybe my expectations were a little too high.
The impression is quite different depending on the year.
I thought it was a bit too much.
(But it's still delicious.)
Yamazan finally welcomed us.
Polishing ratio 50%.

100% Yamae-Nishiki produced in Yaehara, Tomi City, Nagano Prefecture
It has been a long time since we have tasted Yamae Nishiki.
The aroma and mouthfeel are gorgeous and grape-like.
Compared to citrus acidity, the sweetness is moderate and soft. The impression is of a light, delicious acidity.
The acidity is followed by a grapefruit-like bitterness that is refreshing and clean.
It is a taste that can be convinced that it has been the talk of the town recently 😊.
I served it with chilled tofu and pork kimchi.
It washed away the darker pork kimchi ✨.
I'm so glad that there is now an official store near me that carries it 😇
Good morning, soumacho!
Congratulations on your first Yamasan🎉!
I'm jealous that you can take me to a liquor store near you 😍.
It's a really fruity and delicious Yamazan 😋.
Hi Jay & Nobby 😃.
Thank you 😃
It was a good sake that deserves to be recommended ✨.
I'll keep my antenna up 📡 as popular brands tend to be hard to find even if you become a dealer.

It is a new sake from Yamazan 🍶.
Slightly fresh and sweet aroma on the nose.
Fresh and chili in the mouth 🫧.
You can feel the roughness of new sake a little.
Slight bitterness and refreshing sweetness.
A little light 🤔.
Well it was delicious ✨️
