I happened to have a bottle of Yamazan, which I had been curious about but had never had a chance to drink. The label is stylish. It is a Yamada-Nishiki, unfiltered, unpasteurized sake with delicious specs.
The first impression I had was of apples. The orangey citrus flavor was mixed in with the apple flavor, making it quite a refreshing bottle. The flavor is just right, not too thick or too thin. It is sweet, yet refreshing.
If it tastes this good, I would like to try another spec.
The label color is very fresh and promising.
The taste is light, sweet and refreshing.
It's good even while eating 😚.
It will be gone in no time 😚.
I want to enjoy many other kinds of Yamasan from now on 🙌🙌

Both courses are identical this time. Excellent performance. The aroma is gorgeous. White peaches✕green apples. The nose is fresh, even though it is fire-brewed. The convergence is dry and excellent as a food wine. Light. Very well-balanced. Yamazan has the potential to break out even further.

Yamazan has been a hot topic of conversation, and we finally had the opportunity to try it for the first time in the Shinshu Secret Sake Hanpukai!
Founded in 1867, Yamazan Sake Brewery in Ueda City, Nagano Prefecture, has been practically dormant since 2015, but in 2023 it will restart under a new organization after taking over the business.
The deep indigo-colored label logo, carefully printed by letterpress, was specially colored for this hanpukai.
The nose has a fresh, apple-like aroma, and on the palate, it is fire-aged, but you can sense a freshness with a slight hint of chili. The dry impression of the body is juicy and delicious. The beautiful acidity and refreshing bitterness add to the long, lingering finish.
The best temperature is when it is cooled by snow, and when it is cooled down, you can feel its mysteriously more concentrated flavor.

Next up in the Bon Festival Sake Enjoyment Life is Yamazan, made with Nagano's sake rice, Kinmon Nishiki.
It has a strong flavor derived from the rice, which is typical of Yamazan, while a gentle sweetness and moderate acidity flow through the taste buds. The subtle gassiness is a nice touch 😋 I felt it was a bit heavy, so I would venture to say it had a grape-like fruitiness. No, no, no, I think the color of the label is pulling me in too much 😅.

The mouthfeel is well-balanced between sweetness and bitterness typical of muddy sake, with a touch of carbonation. The aftertaste is quite spicy. A little more umami would be nice. Yamazan's one of a kind
The aroma is clean, sweet, citrus, and even rummy.
When you include it, you get a chili, forest-like fresh aroma, and a sizzling richness. There is also bitterness.
Soon the concentrated acidity and umami pop and spread on the tongue. A refreshing acidity with grapefruit and greenish flavor passes through the nose.
Delicious~.
It is a fire-brewed version of the one that was on tap, so it may not be positioned as a summer sake, but while it has the Yamazan style, it is quite crisp and refreshing, so it was delicious even on a hot day 🍶.
It's also a perfect food sake 👌
However, I feel that it tends to be a bit sour after a while, so I prefer to drink it early!
