I went the next day (weekday) and there were only 3 bottles left!
Maybe it's getting more popular💦.
This one is 2,640 yen, which is expensive for Yamazan!
Maybe it's because it's a pure Dai Aizan.

Next, we opened the bottle of Yamae-Nishiki.
Compared to Hitogokotsuki, Yamae-Nishiki has a clearer outline.
However, the impression of softness remains the same.
It is stored in the vegetable compartment of the refrigerator at home. Since the weather has been getting warmer recently, the thermometer sometimes reaches about 8 degrees Celsius.
In winter, it is around 6 degrees. I don't know if it will survive the summer in the vegetable room with fresh sake.

So far the vegetable room seems to be kept at 5-9 degrees Celsius, but I'm worried about it in the summer 😟.
I do think they mature faster in the vegetable room 😓.

We stocked Yamazan's new sake in order. If you don't buy it when you see it, it will be sold out soon.
The light nigori draft was the second shipment in December, I believe.
It is soft and silky, but the gasiness becomes more mature as it matures 💤.
It was very relaxing and delicious 😄.

The other day I drank at home with a couple of drinking friends 🎉Cheers to silver Yamazan ✨It's a weekday, but we drink 🥂.
We served a salad with marinated tomatoes and deep-fried eggplant, and a plate of pink grapefruit, strawberries and pineapple as hors d'oeuvres. In addition, we prepared a plate of assorted Japanese food‼️cosmetics‼️😳The filet mignon sandwich was delicious😍.
For the main course we had 3 kinds of pizza 🍕 and dessert was ice cream and dacquoise 🍨.
The fresh sweetness, hidden bitterness and a hint of spiciness were just right and really easy to drink 🎊.
I heard that there are still other colors of Yamazan available 😍I'm looking forward to it ‼️

Well, I'll have some 🥂.
First of all, don't mix the orikashi.
There is not much aroma.
Gentle sweetness spreads in the mouth, with a pleasant gaseous sensation from the mid-palate.
The second half is full of sourness, with a lingering sweet and sourness at the end, which quickly fades away.
Mixing the cage
The aroma remains the same.
The mouthfeel is a little creamy and mild.
The gasiness and the sweet and sour taste that finishes with a final squeak remain the same.
This is brilliantly delicious 😋😋😋.

The aroma is gorgeous, just like Aizan!
When you put it in your mouth, the luxurious rice aroma, umami and fruity taste peculiar to Aizan spread with a slight effervescence.
The finish, including the lingering aftertaste, is wonderful!
I have a glass of Yamasan, which I opened a while ago.
The moderate fizziness and milky taste are well balanced.
The sweetness and umami are well balanced, and the finish is clean and spicy. A very well made sake.

Sweet and bitter, delicious 🩷I'm feeling good about bitter drinks lately 😊.
Today we have tai chikuwa with cream cheese on top, chicken with yuzu kosho flavored with shiso leaves, braised and fried green peppers for chopstick rest, 2 cheese pizza 💖.
The bitterness of Yamasan goes well with the bitterness of vegetables such as shiso leaves and green peppers, and I felt that pairing them together conversely made the vegetables more aromatic! It would certainly be perfect for aromatic vegetables ‼️ It also enhances the aroma of the sesame oil I fried the peppers in 🧐Vegetables and bitterness, I see 👍.
Tonight's pizza at our house is without tomato sauce as requested by my husband 🤭just olive oil, cheese, salt, pepper and maple syrup 🩷It's hard to choose between the acidic alcohol and cheese or the bitter alcohol and cheese 😋I love cheese and they are both delicious 😋.
