Yamazan Junmai Ginjo Yamae Nishiki Gowari Gobu Unrefined Nama Sake
I still have some nigori left in the fridge, but I'm in the mood for some Nagano sake.
I am very thankful that Yamazan, which I sought out when I traveled to Nagano, is now readily available in the Kansai region 🙏.
I'll have it cold.
A short gas sound when I opened the bottle.
When poured into a glass, a few fine bubbles adhered to the bottom rim.
The color is clear with a slight greenish yellow tinge.
The top aroma is mild and not very noticeable.
On the palate, there is a slight chilli gasiness and a freshness that gives the impression of youth. The slightly tight acidity is most impressive, and the sweetness and umami are modest, giving it a slightly modern taste.
After swallowing, the acidity and astringency tightens on the tongue and lingers as it is. The aftertaste feels clean as the bitter astringency lingers.
I thought it would have more sweetness, but Yamae-nishiki has surprisingly little sweetness and flavor, and I think I prefer Kinmon-nishiki.
I'll have to try the others, but the Rokubun Sen was delicious 😋.

When I hear the name Yamasan, I remember Yamasan, 🥺.
This is my first purchase since the opening of the distributor in Kansai.
I bought it at Takimoto where I dropped by after Vinos and Yaichi main store.
Dry but juicy, not too sweet. It also has a slight minerality.
It has a grape and muscat-like taste. I have the impression that this is the latest trend in sake quality.
I felt it was less sweet than Hitogokochi, which I drank before.
The 4th picture: Sake lees soup made with Morinori's sake lees.
The Machida Sake Brewery's sake was also delicious, but it tasted less sweet and more like a sake lees soup 😋.
I think it got sweeter about 2 days after opening 🤔.

This is one of the sake that my wife bought for me.
I heard that it is rather difficult to obtain.
The aroma is fresh and fruity, and the taste is sour and sweet, reminiscent of green apple.
I felt the taste was somewhat similar to the Echigo Yuki-Koumbai I had a while ago.
If I have a chance to encounter this sake again, I would definitely like to have it.
