This is Hitogokochi from Yamazan.
I remember this one had more bitterness than I expected.
It was like having rice in the center of a gentle sweetness like a peach.
Among all the Yamazan I've had so far, this is the one I felt had the most robust flavor.

It is not too sweet for a light nigori, and I like the balance of bitterness and acidity in the aftertaste with a slight effervescence.
I used to shy away from light nigori, but with this I can enjoy it with food 😆.

A bottle from our stockpile.
It has the fruity and mellow aroma of Sanke Nishiki. It is a mellow sake with a gaseous taste and a delicious sweetness that is typical of Yamazan. The bottle lid is a crown, so we drank it up. Thank you very much for your kindness.
I bought it because I have heard the name a lot lately and it is my favorite Yamae Nishiki.
It is very well-balanced and juicy-dry when on the lees, I like it!
Nagano really has a high level of quality 👏.
