It tastes like a straight Yamada, just like the Yamada-Nishiki.

Delicious with white grapes and fresh acidity 😋.

I don't buy until they run out of stock! But when I find a gap, I go on a sake patrol. Shinshu Kamerei is no longer available, and the owner's top recommendation? This is Yamazan, which is certainly as good as it gets. I bought it in the spring and have been waiting for a while. It is a Yamae-nishiki produced in Yaehara, Tomi City. It is a bottle that expresses the terroir of Yaehara. Is the slight bitterness a production of the rice? Is it the skill of the Kurihara toji? The delicious rice flavor comes from a nice, fresh aroma. It is perfect even in summer.
Next, we have the San San 😁.
It has a good balance of flavor and aroma, just like Yamadanishiki. ☝️
And it has a fresh and robust rice flavor, as is typical of unfiltered raw sake 😁.

Calm, fruity, sweet and acidic
Fresh, lush, and clean without interfering with food.
Less umami than the Hitogokotchi we had previously, but with a lot of acidity.
Both are delicious, but this one made a better impression on me, perhaps due to the season.

I was bothered by the strong Alc component throughout, which explains the banana feeling that lingers in the mouth.
I prefer Scotch detective to Yamamura detective, and Masaya Oki Forever.

It has a nice tartness and sweetness, and the mouth feels like it's being shaken, so it's no wonder the bottle didn't have any oomph when it was first opened 😍.

I noticed that the Kinmon-Nishiki was a bit more peculiar, so I decided to pair it with Parmigiano-Reggiano, which is a very good marriage 😉.

When I drank the Jungin Yamadanishiki, I also thought that Yamazan was better than the Yaehara sake rice from Nagano, but I thought this Jun Dai Yamadanishiki was better than the Jun Dai Kinmon Nishiki!

It has a great balance with the acidity that is typical of Yamazan, not quite sweet and delicious👍.
Considering the taste and the price of 30.5 percent, it's no wonder it's 2,750 yen including tax. ‼️

I had a bottle of Yamazan Junmai Ginjo Kinmon Nishiki.
This is my second bottle of Yamazan, the first being a light nigori, so this is my first clear sake.
The first bottle was a light nigori, so this is the first time I have tasted a clear sake. Unlike the light nigori, which was refreshing, the sweetness, umami, and acidity were concentrated, and the taste was juicy, as if you were biting into a ripe fruit.
Perhaps it is the color of the label, but the nuance of grapes is strongly felt. While it has a rich flavor, the second half has a sharpness that comes from the bitterness, so you will never get tired of drinking it.

The ginjo aroma has a refreshing acidity reminiscent of blue bananas.
