I found some lovely spring sake. On a day when I'm alone. Rice polishing ratio 60 Alcohol 15 Not much aroma, just a little bit of a kick. It has a soft sweetness and the flavor of rice is refreshing! It's a little bit dry and 180ml, so it was gone in no time while watching soccer ⚽😂. The third one is cream cheese in soy sauce 🧀. I learned from Maru that it is delicious without fail 🙏. It's a great way to soak cream cheese in soy sauce and mirin. It's become a staple of mine. ❣️

I looked in Mr. Takimoto's refrigerator. I found a bottle of "Kachikoma" in there quietly. This must be the "Kachikoma" that Bouken-san and Ao-chan were drinking... I quickly put it in my basket and went to the cashier. "This is Kachikoma, right?" I asked the clerk. She said, "I put the leftover bottle in the fridge a while ago. She said, "Lucky you! "Yatta!" I couldn't help saying that. It tastes like banana🍌. Sweet, yet refreshing. Spicy and alcoholic on the back end. Still tastes rough 3rd and 4th day, the sweetness gradually settles down, but the delicious taste comes out. ❣️ The fruity taste and the freshness of the sake are still there. The spiciness of the aftertaste has decreased and it has become easier to drink. 5th day: The fruity taste has settled down, but the taste has mellowed and is delicious! We enjoyed it with a tantalizing soy milk hot pot, kimchi hot pot, grilled sea bream, and more! I think the stewed hamburger steak with beef stew sauce was not so good 😅... Thank you for the first time drinking home and drinking fresh sake: ❣️

It's not about the sake... it's about the sake lees💦. Top left: Shichihonnyari. The sake lees had more umami than sweetness, so it was delicious in a soup with sake lees. ❣️ I could really taste the rice flavor! Bottom left: Akai Ito. The big bag on the bottom right is sakekasu. I used it to make yam gratin. It had a unique flavor, so I seasoned it and heated it so that the peculiarity was not a problem and the sweetness was delicious! ✩ red miso paste and sugar, poured over the yam, topped with pizza cheese and baked! Top right: Kaze no Mori Forgot to take a picture of the sake lees💦. It has a fruity flavor and is delicious as sweet sake or a Japanese dish. The photo shows spinach dressed with cream cheese and sakekasu with white soup stock and white miso paste! This dish was taught to me by Tsuyodai and is very delicious. ❣️ Bottom right: "Kaiun It is the one in the small bag. It has a clear taste, so it is easy to drink both sweet sake and sake lees soup! It's good for those who don't like sake lees. I liked Kaze no Mori among them. ❣️ I want to use it for more dishes next year!

13 years after the Great East Japan Earthquake We received a bottle of sake from this brewery, which was reopened after the disaster. 100% Gin-no-Iroha produced in Miyagi Prefecture Polishing ratio 50%. Alcohol 15%. Almost no aroma, acidity is the first taste. It tastes clean but mellow, and leaves a slight stimulation on the tongue. I wondered how it would taste with kimuchi nabe (kimchi stew), but it was delicious! On the second day, the acidity subsides a little and the mellow taste spreads further. The spiciness is now more pronounced. I had it with pork shabu hot pot and it tasted sweeter than drinking it by itself. ❣️ On the third day, it tastes less pungent and more mellow. It tastes like it would go well with sashimi, but strangely enough, it also goes well with strong food! It was delicious with yellowtail and radish. From the sake brewery that collapsed that day, we now have such delicious sake. Now they are helping to rebuild the brewery in Noto. We enjoyed the sake while thinking about the strength of the revival and the bonds of mutual help! Thank you for the food 🙏🙏🙏

Fruity with sweetness and umami spreading. Good balance ♡♡♡ Delicious! Clear taste with a clean finish✨ I want to finish a bottle! I'm so sorry 💦. 2nd day: Aroma is even more up↑↑Sweetness is also increased and it tastes even better Sweeter and tastier ❣️ 3rd and 4th day: The sweetness is reduced and the umami is stronger. It tastes sweeter with spicy side dishes. I've been drinking out a lot recently. I enjoyed drinking it at home because I could savor it slowly 🎶. The third one is a gift from Jive and pyonpyon! The cod roe has a rich cod flavor and is sliced thin, so it's soft and smooth to the touch. The rice cracker is thicker and chewier than it looks, and the more you chew it, the more bonito it tastes↑ Both were delicious and made me want to eat more. Thank you, Gyve and pyonpyon 💕🙏💕!

Around Lake Biwa by JR I saw the label at Isetan and decided that this was definitely a drinking iron. I bought a ticket for one station (150 yen) and it's a 3 hour trip in the opposite direction. You can't get off though💦. Oh, it's not a kisser 😁. When we changed to the Kosei Line at Omi Shiotsu, the number of passengers had decreased, so we had lunch with bento and a cup of sake. Classic taste. It was as tasty as the char siu pork rice in the bento. I regret that it was not an ekiben 😢. After the bento, I had the sweet shrimp beaver and â This beaver is milder than the curry flavor, so it's even more unstoppable 😆. It tastes great with alcohol, but I think I'll have a beer with this one 🍺... The weather was beautiful and we enjoyed the view of Lake Biwa, the snow-covered mountains, rape blossoms, and Lake Yogo ✨. We also took our time to see the sake wa 😁.

Kansai Sake-new year party (2) The first meeting started! Total 20 people at Uncle and Sake in Higobashi! Let's have a party with Kuuzo-san's music! Luther Temi-san, Sakaran-san. Mr. and Mrs. Wakata. My table's choice for toast. Ganbare! Sogen with a "Suzu" tasuki hanging on it. It was unanimous in its support📣 and in its desire to drink! Wakata-san said it tasted like a pear, with a firm sweetness and umami! It was very delicious! ❣️ I just hope the brewery can get back to normal 🙏! The food was delicious and the drinks were great! This one was also reserved for us by Umaumaimai 🙇. Another couple! Mr. Wakata and his husband, who have an account and watch everything, know a lot about sake and alcohol. We hope you two will come to every event, not just this one 😊.

Kansai Sake-new year party ①. I went to the tasting corner of Hanshin Department Store to see if anyone was there... There he was! He recommended Kamikai's Mizuikyo Kusu No. 1 and I tasted it too! I liked the lactic acidity and sweetness, but the person next to me liked it too 😆. We went to Kusunoki Fusae Omoya for the after party. Thank you bouken for taking me there 🙏. 12 people! You'd think it was the first party 😆. Everyone toasted with beer for the next all-you-can-drink party 🍻! But...I still wanted to drink sake. Maru-san ordered this one and so did bouken-san 😁. Nice aroma, sweet and fruity! And beautiful taste, delicious ❣️ The cheese and salted squid were delicious! Thank you so much for reserving a good restaurant for us, as expected of the host, Mr. Umaumai! Kansai Sake-no-Wa also had a couple members! Yasubeyesan and Orin 😊. They are both so friendly that I can't believe I've never met them before, it seems like they've been here for a while 🎶. I didn't get to talk to Yasubeyesan much... but now I have something to look forward to next time 😉. Please keep up the good work ❣️

I thought it would be good for the Dolls' Festival 🎎 because it's a peach-colored nigori. I was supposed to finish it in time for March 3, but it took me until today because I drank too much at an offline meeting on March 2💦. Rafa-san brought a bottle of sake from a brewery in Toyoake at the summer off-line meeting. I was curious and got it! Polishing ratio 70%. Alcohol 14 degrees Celsius Red yeast When the lid is loosened, it rises and rises 🫧. The big 🫧 cage is dancing 💃 and you will never get tired of watching it. Smells like white wine Sweetness with a hint of tanginess Bitter with a clean aftertaste! Tastes like sweet 🍓 with little acidity On the 3rd or 4th day, the piquancy is still there! White wine taste in both aroma and mouthfeel! And the aftertaste is like 🍓 flavor! It was very tasty to drink with 🍓 ❣️

March is here. The footsteps of spring, or is it like you can already see half of your body? Spring Shine was my favorite spring sake last year. I drank it again this year. 100% Yamada-Nishiki from Yoshikawa, District A Rice polishing ratio 55 Alcohol 14%. Nice aroma and pitchy! The gravity system is used, which makes it more gaseous. Soft sweetness from the four-stage brewing process, muscat-like flavor, acidity, and a slight bitterness, with a clean finish. The rice is polished to be clearer and lighter than last year's. I don't remember what it tasted like last year, so I couldn't tell 💦. By the second day, it tasted like muscat? Melon? Refreshingly fruity & sweeter, very tasty ❣️ Seems sweeter than last year. The 3rd day is already melon🍈! Even sweeter! Delicious sweetness with a clean aftertaste On the 4th day, it is sweet and delicious! The fruity taste has decreased, but it is very sweet and the flavor has increased↑. Last year, the sweetness was not so strong, but this year, it became sweeter and sweeter! I liked the 2nd day, when it had a nice sweetness with a nice freshness. ❣️ The third picture is a barrel of sake dedicated to Tenjin-san the other day. I enjoyed looking at the sake barrels not only from Kyoto, but also from Nada and Shiga.

I found this at Takashimaya in Kyoto: ❣️ There were different rice varieties, but I bought this one because of the 🩷 on the label. Very nice aroma! Chilli, moderately sweet and fruity. It has a bitter taste, so it's easy to drink. Smells great on the second day, too! Fruity like pineapple! And the umami is up↑. Good balance of sweetness and bitterness, easy to drink ♡. On the 3rd day, the fruity flavor has decreased, but the umami has increased and the bitterness has further decreased, making it easy to drink. The 2nd day, the most fruity, was my favorite. ❣️ We went to see the ume (Japanese apricot) garden at Kitano Tenmangu Shrine. Unfortunately, the weather was not so good, but maybe because of that, there were not so many people there and we could enjoy it slowly 🌸

I can't believe I can drink another bottle of Risshun Shibori: ❣️ The aroma is very fruity! Pineapple🍍? Pitchy fresh, not as sweet and refreshing as the aroma. After a little while, the sweetness and slight bitterness came out and it tasted good. But it still tastes hard. On the second day, it opened up and became more fruity! The sweetness has increased, but the sourness makes it easy to drink. And there is almost no bitterness! Very tasty ❣️ On the 3rd day, the fruity taste is gone, but the sweetness is still there! The sweetness has become more intense and tastes like mango🥭! Every day the expression is different and delicious♪ The third one is a beaver. I had it for the first time! It was really a delicious treat that I couldn't stop eating 😊.

Right: Shoyuki Junmai Ginjo Yamadanishiki Bessen PREMIUM Gentle sweetness and deliciousness! It is refreshing and easy to drink! Middle〈Izumibashi, wintering dragonfly eggs and snowman label - heavy snow nigori - active junmai nigori sake Piquant and refreshing sweetness. Delicious during a meal with the delicious taste of rice! Left: "Aizumusume Junmai Ginjyo - light nigori - Yukigasumi no Sato". Slightly spicy, fruity, sweet and refreshing!
