It's been a while since I've posted here.
I'm going to upload some of my past drinks for my own records.
I will start this year with Kibotsuru.
It is a sake that I am used to drinking, but I am deeply impressed by how delicious it is.
This year's Kihotsuru was a little more dry, but it was still my favorite brand. I thought it was a little bit dry, but it is still my favorite brand. It is sweet, tasty, and a little bitter.
This year, I would like to be kind to people and my liver.

This is a new sake with a label that looks like it should be drunk on New Year's Day: ✨️
The rice used is Yamadanishiki.
Polishing ratio is 68% for both koji and kake
Sweet and sour aroma reminiscent of 🍌.
Slightly gassy mouthfeel,
The taste is fresh and new sake-like, but the sweet and sour flavor is deep, mild, firm, and satisfying☺.
Good aroma through the nose and delicious aftertaste with a hint of umami!

When you take a sip, you will feel a slight fizzy sensation, and after you feel the sake, the fruity and mild sweetness will spread quickly.
After that, the taste of rice is gradually released, and the aftertaste is slightly sweet.
It is a sweet sake, but the slight fizz and fruity taste make it a good sake that is refreshing to drink.
Not too sweet and refreshing, so it goes well with aperitifs and appetizers.

Beautiful and meh, classy. It's a little pineapple, a little understated in the usual Kibotsukuru way, but very tasty. Expensive but I'm glad I bought it.

Junmai Ginjo with Jun Dai class polish. I didn't have a good image of Yuyamanishiki, but this one is delicious with a refreshing sweetness that is typical of Kibotsuru.
This is the first time I have tasted Kibotsuru's Yuyamanishiki.

It is made from "Hinamaru", a new variety from Saga Prefecture, and "Reihou".
The new sake has a clean and refreshing aroma, a smooth and refreshing mouthfeel, a fresh gasiness, a rich sweetness, and a clean cut with bitterness and spiciness 😋.
The accent of bitterness in the second half is especially pleasing 🥰.
I was going to go through with it since I drank it last year, but I bought it when I heard that the rice had changed.
Hinamataru is like a new rice rice from Saga.

It has a faint gasiness, a lovely acidity and sweetness, like a bright, fresh fruit.
To me, it has a lot of flavor elements, with a long, sizzling, floral finish.
