. Junmai Ginjo Shiboritate Nama It has been a very long time since the last time. The aroma of the freshly opened bottle is like melon in yogurt. The taste is not really yogurt, but there is a sourness. Plum-like? There may be a slight astringency. The next day, the sourness becomes stronger, but after about 5 days, the sourness becomes mild, and the yogurt and sourness are just right and beautiful. After swallowing, you can smell the delicious alcohol on the palate.

. I've had Mya 3 and Mya 4 before, but this is my first time with just Mya. I don't really remember the taste of 3 and 4 though 😅. When I opened it, it tasted quite rich with a chocolate-like aroma and a sense of maturity. The next day, the ripened taste became more intense and the chocolaty taste became less and less intense. It is delicious both when opened and after a long time 😋.

. I've had Takachiyo before but this is my first winding machine. Flat milling rice x micro bubble washing rice and it looks kind of awesome (poor commentary) 😅. The aroma when just opened is slightly grain-like? The taste is pear-like with a rice-like aftertaste. And maybe a nutty aftertaste? After a couple of days, the sweetness of the pineapple becomes stronger and there is a slight astringency. After a week or so, the sweetness is felt but the flavor and smokiness may be stronger. It's a fun and delicious drink with a variety of flavor changes 😋 yummy!

. Newly pressed Junmai Ginjo Gohyakumangoku Unfiltered Harajuku. It's been a while since I've had a BON-chan 😃. The first saké has a melon-like sweetness and a whisky-like smokiness on the nose. The aftertaste is surprisingly clean. After the next day, the yogurt feeling becomes stronger and the sourness and flavor increases 😋. After a week or so, the sourness has decreased considerably and there is a slight bitterness. It's crispy and delicious too 😄.

Chinese Zodiac Bottle 2025 SNAKE &RABBIT Junmai Ginjo Banzai 55 Nama-shu More than half a month has passed since the year 2025, and we welcomed the first drink of the year at Nisato again this year. The aroma is slightly apple-like. The smooth mouthfeel has a sweetness like apples and melons. The aftertaste is delicious. The day after opening the bottle, I could feel a moderate apple acidity, and the sweetness and acidity were just right, and the aftertaste was so good that I could drink it for a long time 😆. Yum!

When the bottle was opened, it was out of control in the bottle, so it was not completely topped off, but only the top clearings were available first. Banana and apple aroma. The taste is apple-like at first, but it soon disappears and the umami flavor remains. The lees that remain on the bottom of the bottle are good, and when mixed with the rest of the lees, the flavor is enhanced. I think there is a grapefruit taste after a while. But in the end it is apple type. It was delicious😊😊😊

But the next day, it starts to feel more dry, and the flavor and aroma spreads afterwards, leaving a lingering taste. It's totally different from when it was just opened. As the day goes by, the smoothness and plum-like acidity come out, and the change is fun and delicious.

The aftertaste is a little bit sticky in the throat, but as the temperature rises & the day goes by, it becomes less of an issue and the rice sweetness and umami are nice 😋. I tried warming it up to lukewarm and felt a sweetness like corn. It's strange. I think I prefer it at room temperature 😄Both are great 🐎.

. Two rabbits, two wolves. I learned that the concept is different from year to year and bought it two years in a row. This year's sake is "low-polished" and is 80% polished rice ah-i-yama ❤️. The aroma when just opened was plum? The first taste is a plum-like sourness, and as the sourness recedes, it slowly gives way to a slight sweetness and umami. The next day, the sweet and sourness becomes even more pronounced, but as the day goes on, the sweetness gradually becomes more subdued and comes to the fore. . This is the first Koei Chrysanthemum ✨ I've had at home. The aroma is slightly medicinal with a hint of sourness. The taste is juicy, sweet and sour, and may taste like orange 🍊 due to the preconceived notion of the name 😅If it's cold, it has an astringent aftertaste, almost like lime. As the day goes by, the acidity gets stronger and stronger, and you may start to get a strawberry 🍓 feeling. Very juicy 😋.

. Oumachi Gojuugo Mild Nigori Sparkling Nama It took me quite a while to open it😅. It has a sweet melon and awamori? The aroma is sweet like melon and alcoholic like awamori. The mouthfeel is naturally tingling with a hint of melon? I strongly feel the bitterness due to the carbonation. After the next day, the sparkle ⚡️ calmed down and the rice-umami feeling came out. I thought it might be melon on the first day, but I guess it tastes more like a carbonated grapefruit drink. It tastes like rice flavor, but carbonated and refreshing 😋.
