Yamahai Junmai Sake - Human Touch
All sake is brewed using the Yamahai method.
Slightly sweet and refreshing, but with a strong umami flavor.
A bit of bitterness adds complexity.
Uchiyo type
Today, we drink at home😊.
Choice is Hiraizumi from ☝️
I'll drink it well chilled first ✨
It's quite rich and has a strong rice flavor 😊.
It also has a good acidity like yamahai 😆.
The aroma is weak ☝️
Next, I'll try it hot 😁.
The richness is still the same, but the rice flavor is softer, the acidity is milder, and the aroma is more spread out...yummy 😆.
Sake warmer is now in use 😆.
Good evening, Kano-san.
The sake heater is working great ⤴️
I also enjoyed heating it up today, and I'm deeply impressed with the aroma.
I'm looking forward to drinking a lot of Hiraizumi this year 😊.
Good morning, ma-ki, 😊Heated sake warms and tastes great this time of year, so the sake heater is a big help... I'm glad I bought it, and ma-ki, how about a sake heater too 😁.
It is refreshing and easy to drink!
It is freshly pressed and has a nice sour and sweet taste.
It is said to be released in each season (spring, summer, fall, and winter), so I would like to drink the entire series.
Imadeya's hanpukai sake.
I had a bad experience with another Yamahai before, but this is probably a modern Yamahai type.
The aroma is not flashy, and the taste is calm with few peculiarities.
It has a fresh and sweet aroma.
It is colorless and transparent.
Bon appétit: ☺️
The acidity is extremely gentle and moderate. It spreads easily in the mouth without any resistance.
It is very gentle and too easy to drink 😅.
It reaches your throat very quickly.
Instantly, a thin layer of pickled burdock flavor appears on the upper jaw, which instantly turns into a taste like a mixture of cream and Mont Blanc, and disappears as soon as you feel a whiff of it.
I don't know what you are talking about for a minute 😌.
It's kind of like a dessert.
The last sake is served lukewarm.
The gentle acidity is followed by an elegant broth-like flavor, and finally, at the back of the throat, the taste changes to a grapefruit-like flavor that is both moderately sour and sweet. The lingering taste was a flicker of bitterness on the upper jaw.
I still don't think you know what I'm talking about 😅.
First Tobiraizumi
Immediately after opening the bottle, it was watery and you could not taste any flavor, but as the day went on, the umami and sweetness started to show up!

Let's go for another drink. I ordered a bottle of Hiraizumi. I have never had this brand before. This one has a completely different flavor. It has a refreshingly light mouthfeel, and the matured acidity spreads out. It has a dry aftertaste. It has a sense of presence. It tastes like old-fashioned sake. I finished drinking it just when it was finished. When should I drink Sentori?
IIMAYA GUITO! vol.5 November Sake. I went back to my parents' house for the New Year's holidays and left my cat in my wife's care, so we were together for the first time in a while. I don't often drink Hiraizumi, but it has a mineral taste with little Yamahai flavor. It seems to have a strong aroma, aiming to be a food sake. But the smell is not intrusive. Went well with tuna sashimi!
