The last Tobi Tsubame was not one of my favorites, so I took my revenge on Tobirazumi. It is surprisingly refreshing and not too sweet for a sake with a sake strength of -9.0. It is labeled as a "during dinner" sake, but I think it is more of an after-dinner sake. Either way, this was delicious 🙏.

I️ swallowed silver last time, so I️ am going to do gold this time. Silver to gold is rather natural. Silver was more dry than gold, so I don't know how it will be this time 🤣. I️ will open the bottle now. The aroma is apple-like 👍 The taste is also apple-like but with sweetness and umami of rice and less yamahai feeling 🤗It's very easy to drink. It's not more dry than dry, but it's hard to drink on its own 💦. At least it goes well with pizza and bulgogi. Personally, gold is delicious 😋.

Indescribable complex acidity😁. Sweetness is gentle ✨ It's kinda like drinking wine... Another interesting drink 😆. This kind of thing is also possible 😁. And that's it ✨ My wife was on her way home from a New Year's Eve party and forced me to go home 😅.

Being served hot - with meaty duck rice and shrimp rice. This is a very good paring, upon heating the sake becomes more round and the rice sweetness comes out to match with the rice dish itself. The lactic acid is creamy and match well with the fats in duck. The umami also made the shrimps taste better! Fantastic!

Hiraizumi Yamahai Junmai Shu - Human Touch -. The second month of the fifth installment of IMADEYA's GUITO! hanpukai comes from Tobirazumi in Akita, which was founded 1487 years ago and boasts the longest history in Tohoku. Tobirazumi's famous Yamahai sake has a slightly higher aroma component, but the brewer's skillful technique (Human Touch) has been used to keep the balance just right. It has a clean and clear sake quality, just as one would expect from its apple-like top notes and clear, translucent color. The sweetness is restrained and the impression of beautiful acidity stands out.
