My son went on a business trip to Niigata and got this as a souvenir😍. It's a 20 degree sake, brewed with Gohyakumangoku (five hundred million stone), and seems to be a hiyaoroshi spec after one summer. My impression is that it is a light and dry sake. It is good cold or on the rocks. But this kind of sake is best when heated. Delicious 🍶😋😋😋😋

Last year, I passed the second level of the Japanese Sake Certificate and last week, I passed the sake tasting test. After passing the test, I opened my first bottle in Futanami. I am not sure what to expect 🐺. This year's Ninani is seclet, I don't know the rice or the milling ratio. Futani is an experimental sake from Futani Rabbit, every year we get a different sake. Last year, they released an extraordinary sake made from 80% polished Aizan rice. This year's Futani has a slightly yellowish color. The aroma is not that strong and the taste is dry but full of umami. I wonder if the rice is low-polished again this year, or if the rice is Okazaki Yamada, which was introduced this year. This is just a guess, so please don't rely on it. But I like it, it's delicious. 😋😋😋😋😋

I have not been drinking at home this summer due to summer festival events at my favorite restaurants. 😹. My inventory is growing. 😭 The first upload in a while is Hatsuroroku, which is my guess. It is brewed with Yamadanishiki from Hida and a new yeast, Association Ka8 yeast. It has a gentle sweetness and freshness. It is a reasonably priced daiginjo that can be drunk smoothly. 😋😋😋😋

A little trivia: Ni-Utsuri's Yamada 55 is made from Okazaki-produced Yamada rice. When using Okazaki grown Manzai rice, the rabbit is given an ear of rice, and this Okazaki produced Tada 55 is usually given an ear of rice as well. 🌾. However, according to the brewer, one out of every 100 bottles has a rabbit with an ear of 🥕. It is a rare bottle with a playful spirit. 😍. The taste is naturally the same for both 🥕 and 🐇 with 🌾. It's like Ni-Rabbit, stable, fresh, fruity and umam sweet. 😋😋😋😋😋

I have always thought that Isobojiman's Honjozo sake is the best, but this Tokujun sake is indeed excellent. It is no wonder it was ranked No. 1 in the Sake COMP Junmai Sake category. You can tell that this sake was carefully brewed using top-grade rice from Akaban Omachi and subsoil water from the Oigawa River. It is a delicious sake that makes the most of the flavor of the rice. 😋😋😋😋😋

I volunteered at yomoya Nagano in Nagoya. This was my second time following last year's Nagano event. The people at the brewery in charge treated me well and it was a very meaningful time. I am very happy to be here 🙏. By the way, one regret I have is that Okazaki Sake Brewery of Kamerei is not participating this year. I think they stopped because too many people gathered. 😭 So I opened a bottle of Kamerei that I bought when I visited the brewery in April. It has a fruity aroma that isn't too gorgeous, and a beautiful flavor that makes it easy to drink. It is definitely delicious. 😋😋😋😋😋

Miyasaka Brewery brought keg to the Nagoya Takashimaya sake brewery market, and this sake was bottled from the keg. As one would expect from keg sake, the freshly-opened, crisp feeling is irresistible. You can enjoy it with low alcohol content. 😋😋😋😋

There was a recent event at Nagoya Lasik where 20 breweries from Niigata gathered, and I purchased this sake at the event. This sake is only distributed to local sake stores and is not available outside of Niigata. It was brought specially for the event. Koshitanrei is made from Yamadanishiki and Gohyakumangoku. It has the characteristics of its parents, and while it is full and soft, it is also light and wearable. It is a very good sake. It is delicious. I like it. 😋😋😋😋😋 If I find it, I'll be sure to buy a repeat 👍.

Purchased at Takashimaya store. While talking with Ms. Ito, the female toji, about various topics, I felt the recent appeal of Ko no Tsukasa. The rice is local Yumesansui, the water is super soft, and the sake is carefully brewed by hand. This sake is refreshing as a summer sake and can be drunk very easily with a light nigori taste. We have been invited to do some plucking of our own rice paddies, but we are still contemplating it. 😋😋😋😋

This is a limited edition sake from the May 11 brewery opening. I really have a weakness for limited edition sake. 💦. It was my first time to visit this brewery, but the weather was nice and I was healed by the greenery in the nature-rich brewery in the mountains. ⛰️ I don't know the specs of the rice, but it has a fresh aroma, and is a fresh sake that can only be made with unblended sake. 😋😋😋😋

This is a limited edition sake from the brewery open house held during Golden Week. I can't help but buy the limited edition sake. 💦. Well, this sake is made with Yamadanishiki from Hida and is a modern fruity sake. I guess it tastes more like first green than traditional Okuhida. It's delicious and super likable. 😋😋😋😋😋 The weather was perfect that day and it was great to drink sake with friends while surrounded by fresh greenery. 👍

I bought it a long time ago and was happy to drink it at my favorite restaurant. 💦. This time, drinking it at home, I realized once again how good doburoku is. I was wary of the explosion when I opened the bottle, and while it was full of rice flavor, it had just the right amount of gasiness, juiciness, and finally cut off with bitterness. Just one year ago, the Mizutani brewery lost its warehouse to a fire that destroyed it completely. At one point, they thought about closing the business, but with the support of the brewery in Aichi and many people wishing to revive the brewery, they started walking toward revival. This sake was brewed by borrowing one of Tsurumi Shuzo's tanks. It is a soft and gentle sake. 😋😋😋😋 It looks like there will be a sake co-brewed with Yamazaki Gosei of Oku etc. and Sekiya Brewery of Houraizumi. I'm looking forward to it, good luck Mizutani Shuzo📣📣.

Nagano Marathon Expedition & Sake Brewery Tour. On the first day, we drank sake at the brewery openings of Nanasho and Nakanori in Kiso Fukushima, and then went to Nagano on the same day to run the Nagano Marathon on the second day. I ran the Nagano Marathon on the second day. I managed to finish the marathon in a shambles. On the third day, I stopped by Okazaki Sake Brewery in Ueda, drank sake at Shinshu Kurado, and returned to Aichi. The sake I uploaded is from Nakanori, which I bought at the brewery opening, and is a mixture of junmai blame. The blamed sake has a bit of a tangy taste, which can make it difficult to like or dislike. It is an interesting sake. 😋😋😋😋

I went to brewery openings every week in April: 4/5 Isobeki, 4/12 Shikishima, 4/19 Nanasho, Nakanori-san, 4/27 Okuhida, I bought sake every week that I was interested in, so I will report on them here and there. I'll report on them as I go along. Shikishima is a revived brewery. They are making progress and taking on challenges every year, and I can feel their enthusiasm in this young brewery. I bought this sake at the brewery opening. This sake is a rare No. 8 yeast, which I challenged because I thought it would be a good match for Shikishima's sake quality. It is a sake that is well balanced between the characteristics of No. 8 yeast, which is rich in acidity, and the umami of Yamadanishiki. 😋😋😋😋😋

Every year, Tamitsu wins an award at the Omachi Summit. It has a fresh, rich taste that is unique to Omachi. All Tamitsu is pressed either in tanks or in bags, and you can feel the care taken in its production when you drink it. I love Tamitsu. ❤️ 😋😋😋😋😋

It is one of my own top 3 nigori, Kawanakajima's nigori. It is a very good nigori 🍶. I often drink it at my favorite restaurant, but this time I got it in a pouch and drank it at home. (3rd picture) The nigori is super creamy. It has a great texture and smoothness on the tongue, and a rich umami and sweetness. I recommend heating up the nigori at Kawanakajima. 😋😋😋😋😋

I bought it at the end of the year and opened the bottle now that the cherry blossoms are falling. 🌸 Fuyuko's nigori is probably inspired by the snow in Kyotango. Tamagawa's sake has a classical and heavy image, but Fuyuko is light. But it tastes like Tamagawa's typical dry sake. 😋😋😋😋

This is the first sake brewed with drunken musubi🌾, a newly developed rice suitable for sake brewing in the Tono region of Gifu Prefecture. As the label says, it is a clear, fresh and fruity sake. I have also drunk Kozaemon, Onnajyoju, and other drunken musubi, and they are really delicious. I recommend this rice. It is delicious. 😋😋😋😋😋

This sogave was brewed last year and laid down for a year. Believing the story that sogave tastes better when it has been aged, I resisted the urge to drink it 😓. It is true that the freshness is not so great, but the flavor is more intense. I recommend you to be patient and let it rest. Delicious 😋😋😋😋😋
