I had wanted to try this sake as well, and on my way home from the Kobe Marathon, I found it at Asano Sake Shop Sannomiya and bought it. The marathon was a mess, but I took the liberty of rewarding myself. 😭 It's freshly pressed so it's fresh, but the acidity and umami spread on the palate, and it's a very dry sake. It's like a San-in sake. 😋😋😋😋

Summer sake was in the refrigerator. The first sip is fresh and slightly sweet like a summer sake, and as you drink it, the dry umami flavor develops like a Nada Otoko sake. I like it. 😋😋😋😋 The third picture was taken at Izumi Sake Brewery when I visited Nada Gogo in the summer. The brewery is huge, just like Nada.

On the left is a directly pumped version of Honochi. Impression TYPE H. Be careful to open the bottle even though it is fire-aged, the aroma is fruity at first, and you can taste the umami firmly at the end of the bottle. The production is definitely delicious. It's a very good one 🤤😋😋😋😋😋. On the right is ZAKU Condensed H. A special process is used to remove the water part of Honochi and concentrate the original flavor, sweetness, and alcohol content of this 30% alcohol sake. Therefore, it is not sake, but a miscellaneous sake. When I drank it, I found that it was indeed a very concentrated version of Honochi's flavor and sweetness. I experimented to see if it could be watered down to the original Honochi, but it was still a little different, but the water was different too 💦.

A revived brewery that I wanted to drink, Yokoyama from Ikijima. Ikijima's groundwater and Akaban Omachi are the best match, well balanced, and very fresh sake. It reminds me of the sake of Toyo Bijin where I was trained. It is delicious. 🤤🤤🤤🤤🤤

Following on from the last issue, this is a dam storage sake. Last month, on my way back from the Joetsu 100k marathon, I returned via Toyama. At that time, I learned at a liquor store that each brewery in Toyama stored sake in the Kurobe Dam, so I bought some. It is this color after about 2 years of aging. It is a delicious color. It has a slight sourness, a pleasant umami as you drink it, and a good sense of maturity. 👍 Of course, it was the best heated sake. 🍶😋😋😋😋

This sake is aged in a controlled facility inside a dam. Recently, due to high summer temperatures, many of them are aged at a certain temperature in the dam. It has a moderate ginjo aroma, the flavor of Takananishiki from Nagano, and has been aged in a nice way. 😋😋😋😋

On my way home from the store, I saw a different hiyaoroshi (grated rice) on sale at Takashimaya, so I immediately bought it. It was the first time I drank Inata Hime at home, but it tasted calm and was very typical of hiyoroshi. It is best served warmed. 😋😋😋😋

The other day I visited Nada Gogo, a place I had always wanted to visit. Unlike the small breweries I usually go to, the factory, the complex, it was amazing 🫨. I bought a bottle of this sake from a brewery with a single yeast. It is an old yeast sake, so you would expect it to be more of a classic Mororo sake, but it is a Daiginjo made by Yamada, so it is a very light and easy to drink sake. 😋😋😋😋

I bought it again this year, my favorite Gokotsuru active nigori. 👍 I bought it in July, so it was sitting in the fridge for a while. It is a bit fizzy and less fizzy this year as it was last year. But the freshness, the Yamae Nishiki rice flavor, and the deliciousness are unmistakable. I love this sake and it is my regular summer drink. 😋😋😋😋😋

This year I could buy it, a wolf in sheep's clothing. This year it was low polished Aizan rice. Sake rice diamond, sweet and juicy, I was informed that rice used for Daiginjo can be made into this kind of sake if it is not polished too much. 🐺. Sweetness like Aizan at first, but the bitterness that comes later is irresistible. 🌾 The annual Ni-Hare challenge sake is both delicious and interesting. 😋😋😋😋😋

This is the sake I won in a 1,000 yen gacha at a brewery opening about six months ago. It's about 2,000 yen sake, so I guess I got a bit of a return on my investment. ✌️ I opened this sake in the fridge because I wanted to drink something more classic since I have been drinking a lot of fruity sake recently. As I expected, it is a refreshing classic sake. I sometimes want to drink this kind of sake. 😋😋😋😋

Sake brewed while listening to the Beatles. 🎵 I wanted to try this sake once. Low alcohol content of 8 degrees, fresh and drinkable like a juice. Cotton soars, fruity candy sweet taste, fizzy nigori delicious. 😋😋😋😋 On a personal note, I passed the sake test level 3 yesterday. 🙌

Last month, I went on an expedition from Nagoya to Osaka to YOMOYAMA NAGANO. I received a variety of sake at that time, and I thought I would like to drink it at home. I drank it heated at the venue and it tasted great. It is a very good sake. Miyamanishiki, 91% polished rice, almost unpolished. It is a locally oriented, gentle sake with lots of flavor. 😋😋😋😋 By the way, I stopped by the brewery on my way back from climbing Senjogatake in the Southern Alps last week and bought this sake. It has nothing to do with sake, but the weather was so nice and beautiful that I also included a photo of Japan's first and second most famous peaks as seen from Senjogadake. ⛰️

This sake is available this year. Since it was not available last year, there were many requests for this year's sake. It has a light acidity and elegant taste. Moreover, it is fresh because it is unpasteurized. It has a taste of Yamahai with a modern flavor of Hatsugoroku. It may not be enough for those who like Yamahai, but it is recommended for those who do not like Yamahai. 😋😋😋😋

200 check-in opened this sake. A bottle, which I usually do not buy. I found it at a liquor store in Togakushi and really wanted to drink it, so I carried it to Aichi even though it was heavy. 💦. I usually drink only junmai sake, but as expected, Genso Mai Elegance uses aluzoe. It has a pleasant taste and aroma of Nagano's Kinmon-nishiki, and is refreshing and clean. 😋😋😋😋😋

I completed the Hida Takayama Ultra Marathon, which continues to be ⛰️⛰️ this year. 🏃. As usual, I was drinking at the Takayama drinking festival the day before. I was soaked in sake 🍶. And this year's takeaway sake was Hirata Sake Brewery's summer sake. In March, I made a tour of four Suwa-taisha shrines, but was unable to complete the tour due to time constraints. In April, I visited the remaining shrines, Harumiya and Akimiya, and received a commemorative coin purse. ⛩️ So, I stopped by the nearby Mikotsuru again and brought back some server sake. You never know what the server sake is until you go there. This time it was dry junmai, orikarami, Miyamanishiki, not as glamorous as the Yamae Nishiki server sake, but delicious, like a super ureshi version of a classic sake. 😋😋😋😋
