Sold only at contracted stores and only in the Hokuriku region

The description "sake, thick and umami" seems to be traditional, but it's not.
The pleasant ginjo aroma and balance of the taste is superb.
As a food sake, it complements food.

Kikuhime Yamahai Junmai Tonkiri Harazake
Purchased at the Nihonbashi Takashimaya Department Store, attracted by its 19% alcohol content.
The first sip was surprisingly refreshing and had few peculiarities, but the weight gradually built up, probably due to the alcohol content. The taste also deepened. It has a nice mouthfeel, but the aftertaste is strong in the throat.

We tried to see which sake would go best with mackerel simmered in miso. We tried three different sake: Eiheiji Hakuryu Junmai Daiginjo, Houou Mita Moustache Ban Junmai Daiginjo, and Kikuhime Yamahai Junmai. Kikuhime won hands down. The concentrated flavor and fatty taste of mackerel and the salty taste of miso harmonize with the rich Kikuhime. It is delicious.
Kiku of Kikuhime This is a great perfection in a regular sake.
It has a rich flavor and the koji is made from the finest Yamadanishiki from Yoshikawa-cho, Miki City, Hyogo Prefecture.
Is that why it tastes like this?
