Nutty aroma and mature taste
It is sold from mid-September to November, and is a limited edition for the fall season. Autumn is the season of appetite. Hiyoroshi," popular in the fall, is shipped after about six months of storage after firing, while Saikaze is stored fresh in ice temperatures for six months. After one summer of sub-zero temperatures, the sake slowly and effortlessly rounds out while retaining some of its freshness. Saikaze" is a mixture of several kinds of kamikura that have become delicious during this period. The sweet aroma, reminiscent of fruit, is overlaid with the calmness of maturity. The gentle aroma of ripe pears and apples is complemented by a nutty, full-bodied flavor.
The palate is gentle, with a supple sharpness. The flavor is concentrated in this Jinzou. Nama-zake conveys the dynamism of the active yeast directly to the tongue.
This is amazing. It is described as "pure rice sake that is unfiltered, unpasteurized, and made from pure sake" and it is. The taste is heavy and thick on the tongue. It tastes fresh like yogurt with a hint of rice, but it is not sweet. It is heavy and lingers in the throat, yet it is not sticky like Shaoxing sake.
The sake and acidity levels are undisclosed. It's an attitude that does not allow one to easily read the specs.
I found a great product. Highly recommended. Definitely recommended.

The gaseous, clear, sweet and sour taste of summer sake that matches the lapis lazuli color of the bottle is one that I wish I had encountered during a hotter time of the year✨.

The umami produced by the unrefined sake is soft but sometimes refreshing with a sharp stinging gas.
The sweetness and umami are mellowed by pear-like nigori. The acidity is effective and refreshing.
It is a dry sake with a mild and slightly fruity taste, with the flavor of rice packed into it.
As usual, it is of a very high level.
I would recommend this to many people!
This collection is just so delicious! There are no prominent harsh flavors, there is a very balanced and very strong scent!

A gift sake. It is a Kyoto sake brewery with bright sake bottles, said to have been revived in 2009, and is a four-season brewery. The sake rice "Nojoho" used to be used for sake brewing along with Yamadanishiki, and No. 11 yeast is used.
The aroma is quite rice malt-like, and the taste is refreshingly acidic, yet refreshing, like white grapes, melon, and soda. It is a refreshingly dry and delicious sake.
It seems to go well with refreshing cheese. It is a rare sake, but I enjoyed it very much.
