Rice used as raw material: Ginga Polishing ratio 50%. Alcohol content 15 It has been a long time since I had a bottle of Akabu. The freshness of the sake can be felt and the juiciness and gassiness are easy to drink. It used to have an apple flavor, but this time it was more like rice and less like rice. By the second day, the taste had already calmed down - another delicious and different taste! Thank you very much for the meal 🙏.

Rice: Miyamanishiki produced in Nagano Prefecture Rice polishing ratio 55 Alcohol content 15 Sake degree +4.0 Acidity 1.7 Here's a little recap 🫡. This is Saruko-no-Spring given to me by a relative in Nagano. Saruko-no-Spring is a famous water in Iida City, and it is said that they found this water in search of the best water for tea 🚰. I haven't had a chance to drink the actual famous water, but I heard that this water is used as brewing water. The aroma of ginjo is gorgeous 🤤. The sake has a sake strength of 4, so it tastes light and dry. However, in the second half, the sweetness of the rice gradually spreads and then quickly disappears. As the day went on, the dry taste became milder and gentler. Thank you for the sake!

Personal preference 3.9/5 Rice: Akita Sake Komachi Polishing ratio 30%. Alcohol content 12.5 Sorry for all the Niimasa. I was about to finish with my favorite Isshaku Suisei, but the store owner told me there was a heretic guru available 🫢. I was also pressured by his wife, "You can't drink any more, can you?" 🤣. So........I ordered it! I heard that it is brewed with flax catfish as a base, but it tastes completely different! It's true that you can taste the unique sourness of the koji, but it soon settles down and the clear taste and gentle cherry-like sweetness spreads! It's similar to the ash I've had so far 🤔. On the last day, I went to Nyuto Onsen (hot spring) ♨️ It felt so good I soaked for an hour for the first time lol It was a trip to the fullest. ✈️

Personal preference 3.9/5 Rice polishing ratio 45 Alcohol content 15.5 Sake degree +1.0 Acidity 1.3 We had our last meal at Akita Airport on the way back to Japan. The sake we drank was Takashimizu's Jun-Dai! Although it is called dry, it is quite moderate and easy to drink with a sharp taste and moderate sweetness! I like it a lot. ✌️ I also ordered the Seri (Japanese parsley) kakiage, which was also delicious! I wish Seri was available in Kansai 🤔. Thank you for the food 🙏!

X of the new policy! One of those bottles I'd love to bring home someday! But it's getting more difficult to buy every year 😭 It's still delicious, this cherry-like sweet and sour feeling is just irresistible! If you go to the liquor store and get to know them before you go into the store The liquor store gave us some dada-mi albacore as a free gift... which was absolutely delicious 😋. I heard that he told the Kansai people that he was going to serve them, but I knew he could tell by the way he spoke... lol! Thank you, liquor store 🙏✨ PS: Today's Tazawako ski resort was great! The spring haze on the slopes was delicious!

I hadn't seen this one among the Colors yet, so I ordered it: ✨️ It is totally different from Senkou's Kame-no-o. It is also totally different from Sato Ubei! The taste is not dry or gassy, but a gentle sweetness that quickly disappears, like a pear 🍐. The mouthfeel is light and you could drink as much as you want! Very 👍👍 match with sashimi too! Thanks for the treat 🙏.

If you get excited when you see snow, you are still a child. ⛄️ So since I came all the way to Akita, I went on a Shinsei parade 🎶. I know I said I wouldn't ask for it last year, but when I saw they were selling it, I had a sudden urge to drink it... Sato Ubei is an Akita-only brew, so I've been curious about it for a while! The taste is the sweetest I've ever had! I read somewhere that it tastes like white peaches in syrup... and that's exactly what it is. I had it with seafood, the flounder was delicious 🎶! Thank you so much for the food 😋!

Personal preference 3.9/5 Ingredient rice: Yumemizuho from Noto Alcohol content 15 I brought this to my parents' house. Yumemizuho from Shinshu Kamerei ✨ I went to Ueda on a trip to Nagano and bought it 😊. It has a clean, refreshing taste and a slightly dry aftertaste! Still, it has an elegant sweetness that makes it easy to drink🎶. It's drier than the Shinshu Kamerei I've had so far Since it was New Year's, we had it with ozoni! Thank you for the treat 😋!

Personal preference 3.7/5 Rice polishing ratio 50%. Alcohol content 16 Happy New Year everyone 🎍. Just before the end of the year, I had the flu... I'm not only sick, but I'm teleworking in that state 💦. I drank Katsikoma🎶 from Toyama just before I recovered. My parents served it to me 🤲. At first it's not fruity but juicy and you can feel the sweetness of the rice 🌾. The second half is more sour and spicy, perfect for seafood 🦐. I want to eat white shrimp! That's what I was thinking while I was eating my parents' kushikatsu ✌️ I wish you all the best for the new year 🙏🙏. Thank you for the food 😋.

It still has the same refreshing sweetness, but with a bit of bitterness and gasiness, combined with a juicy, grape-like taste🎶. I felt bad for my sake-loving brother-in-law, but thanks for the treat anyway 😋.

Last week the wife was in Corona and I was in bed with a normal fever, so this year we're going as adults 🥹. The sake I served was Shinsei 🥃. He said he's not going to pursue Shinsei. That means this is the last Shinsei left in our house 😭 I love kijoshu after all, the deep sweetness is just irresistible 🤤. I thought it was like cherry... but I wrote the same thing last time, only it's a little less sweet than before and has a little bit of bitterness instead. It's still delicious even after all this ✨️ I had this with a yogurt sandwich I bought at Misasa Onsen and it's delicious! I think I'll buy it by mail order 🤔. Thanks for the treat 🙏.

Hoping to increase company sales and NISA assets 🙏. I didn't have time to go to a liquor store this time, so I bought this Yagamihime (👸) by Suwa Sake Brewery at the roadside station on the way home. I don't see 500m much, but is it a souvenir? I guess it's a souvenir? It has an amber color and a sweet aroma. It tastes more like plum wine than sake. It tastes more like a thicker, sweeter, and more sour sake than Chiyomusubi! So much difference in the same sake! Just the right flavor when mixed with soda water! I like the taste, but if you drink it thinking it's sake, it might be a little different 💦. I'm going to try this sake brewer's "Momonga" next time. ✌️ Thank you for the food 😋.

Personal preference 3.5/5 Rice: Yamadanishiki Rice polishing ratio 55 Alcohol content 17 Ichinomiya & Local Sake Tour Vol. 29 Of course we went to Ichinomiya Shrine in Tottori ✌️ Hokinokuni Ichinomiya Shitori Shrine The shrine is dedicated to the "Shitori," a clan involved in weaving. Even at the end of November, we could see the snow-capped Mt. I bought a bottle of Chiyomusubi Hatsushibori. It's not a raw sake, but a raw sake, but I don't know if there is a clear difference between the two 😅. I don't know if there is a clear difference between the two 😅 It has a strong sweetness rather than a fruity taste! I have a strong impression of sweetness rather than fruity! The alcohol content is not too low, so you can feel a strong sweetness. If I had to say, I would say it has a strong sweetness like apricots. We had it with dried flounder that we bought locally! It was a treat 😋.

Personal preference 3.8/5 Rice polishing ratio 70%. Alcohol content 15~16 I went on a trip to Tottori🚗³₃. Actually, this was the first time for me to go there properly. Did you go to Misasa Onsen, the hot spring was so nice ♨️ The public open-air bath under the bridge in the 4th picture is very open and I didn't go in because I was too shy 🥹՞. We had Takayuu at the ryokan. According to the sake analysis, it was dry and umami type, but the taste was.... My first impression is that it's clear and easy to drink! I couldn't taste much dryness or umami, but I could feel a lot of rice in the aftertaste... Finally, I was able to eat crab and I was satisfied 🦀🦀🦀. Thank you very much for the food 🙏🙏🙏.

Hello Pon-chan 💭. I had a pot of Matsuba crab and a miso soup of Seko crab 😋. We didn't have any shells, so we couldn't have any sake 😭. The bath was great! The open-air bath is designed so that you can't see it from the outside, but it's very hot lol.

Alcohol content 16 Ichinomiya & Local Sake Tour No. 28 Late November is the season of autumn leaves, so we went to Ichinomiya Shrine. Kiinokuni Ichinomiya Niutsuhime Shrine I heard that this shrine is the origin of the syncretism of Shintoism and Buddhism, and that it is called "kata-san" to worship only at Koyasan🫢. Sake: Junmai Daiginjo from Kido in Wakayama It is named after a toji (master sake brewer) and is bottled from the middle of the best unrefined sake. It is named after the master brewer and bottled from the middle of the best sake. 1,800 yen for this is too cheap, right? 😳 I have had Junmai Kido before, and compared to that, it has a gassy, apple-like sweet and sour taste on the palate! Personal preference 3.8/5 Rice used: Kitsushizuku Rice polishing ratio 60 Alcohol content 16 Another bottle given to me by my parents ✨ This is a special junmai dry sake from Kamikawa Daisetsu! It seems to be a summer-only sake as it is said to be made with Kitashizuku! It is dry, but the first mouthfeel is very refreshing! The spiciness leaves your mouth early, and the bitterness and sweetness combine to make it easy to drink 🎶. I had the impression that the spiciness was moderate when it comes to white grape, and the sweetness was strong when it comes to soda water 🥰. It's definitely refreshing and would be good for summer, thanks for the treat 🙏.

Personal preference 3.4/5 Rice: Kyoto Gohyakumangoku Rice polishing ratio 50%. Alcohol content 17.5 The other sake I got was Rokuyu by Haneda Shuzo. I saw it at Takashimaya before but didn't buy it, and it's been a while since then 🥹՞. This one had a slightly strong dry taste, followed by a sweetness that spread on the palate. Not so much fruity? Instead, I could taste the elegant sweetness and felt it was Junmai Daiginjo 😋. Thank you very much!

It has a dry taste, but the alcohol content is not high, so it is easy to drink! Even though it's dry, it's on par or a little subdued, so it went well with tofu dishes! I had mistakenly thought it was lemony when I heard it was from Sawaya Matsumoto, but it was delicious! Thank you for the drink!

Personal preference 4.0/5 Ingredient rice: Hokkaido Ginpu Polishing ratio 60 Alcohol content 12 A bottle bartered with my parents' father. He said he went to Hokkaido in autumn. What about my crab? I asked him, of course he didn't have any 🦀. Aside from 🦀, this sake here is Goshiki Saiun (Goshikinokumo) jiri by Fukushi Shuzo! They only wholesale to Hokkaido and Kanto, so this is a first for me🎶. Not only is it low-alcoholic as stated, but it's also very easy to drink with just the right amount of sweetness and acidity😊. The taste is very moderate so it would go well with light food... so I had it with hanpen~! Thank you for the treat 🙏.

Personal preference 4.0/5 Rice: Omachi grown in Okayama Prefecture Polishing ratio 50%. Alcohol content 16 A bottle brought to the inn. Since it was in Nara, I brought a bottle of Kaze no Mori from my house. It has a light but gorgeous aroma and a sweet and sour fruity taste that I can't get enough of 🤤. The gasiness is also a nice touch. And most importantly, it's easy to find and reasonably priced~! This is the first bottle I will recommend to my friends who have never had sake before! I'm going to get myself hooked on this one 😏. Thank you for the sake 🙏🙏🙏
