While the "gorgeous" (white wine-like) tastes are on the rise, the surplus of rice has turned into a "Junmai-shu" (pure rice sake) with complex sweetness of rice and acidity.

We finally opened a bottle of Kiho Tsuru for New Year's.
This is the top model of my favorite Kiho Tsuru. I was really looking forward to it.

After opening the bottle, I took a sip.
This one is a real treat.
It's not flashy by any means, but it has a sweetness like biting into a fine dried candy, and acidity and bitterness that wash it down nicely. Perfect balance.

As the days go by, the bitterness comes out just a little bit more.
I liked it best on the first day, but if you want to pair it with a meal, the third or fourth day is best.
It can also be served lukewarm.
The sweetness increases, and the impact of the first day is felt again. It's the best lukewarm sake I've ever had. It's just so gentle.
I'm glad I bought it even though it was expensive.
So far, this is the best sake I've had this year.

New Sake from "Kibotsuru" that Maru-san, bouken-san and many others have been raving about ✨.
I tried it, but my local liquor store had it in stock and I couldn't resist getting it along with the other sakes 🥰.
This time I'll be having it with the Tsuki no Oubai 😋.
The aroma is full and slightly melon-like with a sweet rice aroma, a slight gasiness that you can't detect unless you focus on the tip of your tongue, a fresh and penetrating sweet umami, a crisp citrusy acidity, and a gentle sweet aftertaste at the end.
Is this junmai sake? I'm sure I'll have to repeat this 🤩and I'd like to pursue other specs as well ✨.
