We opened the bottle the night before we moved! I think it was a few years ago that I won the Sakenomy lottery and was able to purchase a bottle of Shinsei. I was thinking about when to drink it and when to drink it. The timing was when I moved 🤣. （I had to unplug the cellar the day before.) Pleasantly fizzy and delicious! 〜Ohhhh. Happiness 🥰.

Next, too, is Shinsei ✨. I've had Viridian before, but this is my first direct pumped ☝️ It's just so well-balanced when it's straight 😁. And it's so easy to drink, you can go straight through it ✨. This is... a delicious sake 😁.

I opened the bottle in fear of forgetting to drink it. It was so delicious. The balance of acidity and sweetness is wonderful, and there is no cloying taste at all. The presence of the bottle is also wonderful. Rice polishing ratio 45%, alcohol content 13%. Forgot the price

Very tasty. Aroma of hansaku, geranium and Oronamin C. Mellow and refreshing mouthfeel. Discreet and deep sweetness, spicy acidity. Clear minerality, light astringency. Serve with cucumber, Kin Kameko Miso & Aoki Miso Akane, scorpionfish, kochi, kuei sashimi, and sauteed scallops.
