(I can hardly tell the difference as I don't have a good taste buds.
First impression: gorgeously fruity!
The mouthfeel is sweet and sour like berries, which is typical of Niimasa.
A little woodiness or umami and bitterness in the aftertaste.
I think the S is a little more umami than the S.
If anything, I prefer the S, or is the S enough?

Since April, I have not been able to find time for sake activities and it has been difficult to find time to buy sake and drink at home 😌.
Since this is an opportunity to get drunk, I will open a bottle of sake that is being stored (aged) at home.
Flax cat was opened after 1 year and 4 months of aging in ice temperature.
The appearance is a slightly pale golden-green crystal.
Putty and gas bubbles🫧 in the glass.
The nose is sweet with a calming freshness and depth.
Aromas of dried apricots.
Ripe macerated melon-like sensation.
Soft wood vat feeling.
Deep green, flowers.
The aroma of dairy products derived from the yeast is only a hint of whey.
The rice aroma is beautiful white dumpling.
The gas bubbles are smooth.
The sweetness with a sense of fruitiness like grape pulp is felt, and then the light acidity with a sense of attack like citric acid spreads with a sense of transparency.
The lingering sweetness and clear umami taste lingers on the tongue and ends in a sharp finish.
The lingering acidity that runs through is also pleasantly intoxicating.
At lower temperatures, the acidity is more refreshing, and the sweetness and umami with depth and clarity in the back of the mouth are enhanced. ☺️
As you drink more and more, the transparency comes forward from the mid-palate, and the acidity and gassiness are refreshing and easy to drink 😊.
It's been quite a while since I've had a flax cat, but it's still delicious 🐈☺️

I felt the most acidity while sweet and sour 😊.
