It's been a while since I've had it, but I still feel it's "exceptional"! (In my opinion)
I had another glass with a refill.
(I actually saw some tangerine in the fridge...I asked but was told no 🥲)

Aroma 2/5 Wasn't that much?
Miscellaneous 4/5 Maybe even drier than Earth. It has a sake-like character.
The sweet and sourness typical of Niimasa is common. I would like to examine the aroma again.
Next up is the Yonodori x American White Oak pairing🪵✨.
We added a stick of American White Oak to the Yonodori for flavor. Originally, Yonotori has the mellowness and sweetness that only a wooden vat brewing can provide, but the addition of white oak changes the direction of the aroma. The aroma is distinctly woodier than Mizunara oak, with a mellow aroma reminiscent of vanilla.
As time goes by, the aroma becomes more familiar, and a slight oaky and rounded feeling is added to the palate. The wood components blend well together, enhancing the gentle sweetness of the Yonotori, but also making the overall impression much tighter.
It was as if the sake had been aged in whiskey barrels, a nuance that gave the sake a new look.
The strong and fragrant aroma, which is different from that of Mizunara, is impressive, and it is hard to say which is better 😋.
It was a very interesting experience to compare the drinks and rediscover the individuality of each wood and the depth of Yonotori 🍶.
Next up was the "Yonotori x Mizunara" pairing experience 🪵✨.
Originally, Yonotori has a soft woody aroma derived from the wooden vat brewing process, and we added a stick of mizunara oak to flavor it further. The woody, gentle aroma unique to mizunara gradually melts into the sake over time, giving it more depth of flavor.
The first sip accentuates the balance of Yonotori's inherent sweetness and acidity, and as the second half of the sip progresses, the fragrance of mizunara gradually spreads, adding calmness and depth to the overall flavor.
The way the aroma transfers is never too strong, adding an elegant nuance like that of barrel-aged sake, and the lingering finish is very pleasant. The more you drink, the more mellow it becomes, and the more you enjoy the changes in flavor, which is another charm of this pairing.
The warmth of the wood and the quietness of the sake.
Again, it was very delicious 😋🍶.

Aroma like white wine, with the most acidity, sweetness, softness, and no bitterness.
Even when you drink it, it is like a white wine.
On the second day, the sweetness increases and it is very tasty. ❣️
On the third or fourth day, the sweetness has settled down.
And then, with the Shine Muscat, this year's grapes are small but very sweet. ❣️
So when you eat and drink it, it tastes like white wine with less sweetness.
This is delicious, but it would be better to drink it with something that can take advantage of the sweetness of the alcohol😅.

The balance of acidity and umami is exquisite, as is typical of Shinmasa.
And the pleasant astringency is wonderful.
It's not as peculiar as I thought it would be, and it doesn't have a low-polished feel to it either 🍶.
