Aomori City's Machinaka Onsen Restaurant. This is one of the sake comparison. It has a crisp, clear, moderately fruity mouthfeel, and a refreshing taste that is not taken away by the sweetness! The set of shiokara (salted fish) with grated daikon (Japanese radish) softened the salty taste and paired perfectly with the rice wine. The restaurant's original "kakiage" of apples and scallops was hot and crispy, another new-found delicacy... (The kakiage comes in two portions, but it was so good that I took this picture after eating one...)

Today is Tasake.
Junmai Daiginjyo 40%5%, 100% Akita Sake Komachi. As the name suggests, the rice polishing ratio is 45%.
It was a summer-like day, skipping spring. We asked our stock of Tasake-den to make an appearance.
It has a fruitiness like white grapes or green apples, a gentle sweetness, and a tangy, bitter finish. Very elegant.

Drinking comparison. They are completely different because of the difference in rice type and rice polishing. My wife said that the special junmai was a young man's sake with a clean and sharp taste. The Daiginjo is for adults with a deep flavor. Both are super tasty. Both are extremely delicious!

When served cold, the umami spreads mildly and becomes crisp and dry at the end.
As the temperature rises, the umami is further refined and it becomes the best sake!
