It is still delicious.
It is fruity without any cloying taste.
It was the first time for me to taste sake rice.
This is a Yamahai of Tasake, which I have never had before. I mean, Yamahai itself is not a major brand, so I have never had that much of it. However, the Tengu Mai I drank on a trip was delicious, so I have a good image of it these days, and I have been looking forward to drinking it ever since. But I bought it more than a year ago, so I wasn't really excited about Yamahai at the time, lol.
It has a gorgeous aroma that is typical of rice wine and sake from the Tohoku region. But as one would expect from a special junmai, it has a very pleasant moderation.
It has a characteristic acidity, as if to say, "This is what I am looking for in a Yamarai," but without any peculiarities. It has a powerful body and a definite umami flavor...yet it has a calm and cohesive texture on the tongue. The end result is tangy and crisp. What a good balance!
I felt it would be good even if it was warmed up, so I tried it and was right!
It is a wonderful product that can be served by itself or with a meal!
It has a very slight acidity and a soft, silky, gentle sweetness that spreads... 🍶.
It has a moderate richness that makes it an authentic Junmai Daiginjo 😄.

Tasake Special Junmai Sake Koshiro Nishiki.
This is our first attempt at Tasake's new Koshiro-Nishiki special junmai sake!
Usually, special junmai sake is brewed with Hanafuki, but following Yamadanishiki, which will be sold once a year starting in 2021, Nishida Brewery has revived Koshiro Nishiki, which was developed as Aomori Prefecture's first rice suitable for sake brewing but had ceased to be produced. The purple title on the label gives a noble impression.
The nose has an apple-like aroma, and when you put it in your mouth, you will be surprised by its freshness with a slight gaseous sensation, although you would expect it to be fire-aged. The fresh, fruity sweetness and full flavor spreads quickly throughout the mouth.
The aftertaste is clean and refreshing, with beautiful acidity and pleasant bitterness.
It has a good balance typical of Tasake's special junmai and is lighter than Hanafukuyuki, making it a perfect bottle for this time of year when the heat wave is approaching its hottest day!
Wakamatsuya Reservation
This delicious sake has a tangy bitterness that finishes off the sweetness and tartness of the banana.
We enjoyed it with bite-sized gyoza dumplings, stewed chicken wings, and stir-fried tomatoes and eggs.
We are grateful to be able to drink it every year.

It was a restricted item at a liquor store I stopped by.
I was attracted by its appearance and bought it.
The aroma is fresh and lingers deep in the nose.
The taste is slightly sweet and slightly dry with low acidity.
It is crisp and easy to drink.
Last year, without knowing the value of this sake, I entered the bottle and thought "Oh, I might be able to buy a box of Tasake" 😳 The price was quite expensive, so I was afraid to let it rest in the back of the fridge, but I decided to drink it already and opened the bottle 🍶.
The first aroma is sweet like cotton candy and ripe melon 🍈The rice flavor slowly takes over in the mouth, and the acidity and bitterness come together at the end ✨The elegant smoothness on the palate helps to keep it from being too heavy and refreshing 😋The sweetness is of course subtle, but perhaps the aroma through the nose is what gives it the impression of sweetness. I think it's just the impression of sweetness and it's probably dry 🤔It was indeed a high quality that makes me want another cup 💕.
