The sweetness and umami are concentrated, and the acidity is not so noticeable, but there is a sourness in the latter half.
It does not linger in the mouth and the aftertaste disappears rather quickly.
I like the taste.

The lamb had a bit of lamb's peculiar taste, but the smell was gone when we drank it together, and the sake itself was still tasty because it was so full of flavor.
I felt the power of sake, because the smell of the lamb was too strong for my favorite plum wine sour or the Vice sour I was drinking with a chaser today.

This is the second day after opening the bottle.
On the opening day, the wine tasted very thin, with no apple or melon flavor, and had a slight gassy and sharp aftertaste, but on the second day, the apple flavor started to come through.
