The third drink at our favorite yakitori restaurant is Hirakou Shuzo's Hitakami. This time it was the first Shibori-Kasumi sake! We often drink Hidakami here, but this may be the first time we have had this label! So, let's have it right away! First, the aroma. It has a sweet aroma. When you put it in your mouth, you can feel the sweetness and the bitterness. You can also feel a slight tingling sensation in the mouth. The aftertaste is a slight sweetness with bitterness. It is also delicious! And it was a tasting that made me realize once again that HIKKOMI is even more delicious when served with a meal.

The second drink at my favorite yakitori restaurant, Hanzo by Ota Shuzo! This time it was Kami no Ho Shiboritate! Hanzo is often on the lineup here, but this was the first time to try a freshly squeezed sake! So, let's have it right away! First, the aroma. The aroma is not so strong. When you put it in your mouth, the mouthfeel is quite clear. The sweetness is followed by a pungent spiciness that has a strong impact, and then a long pungent and bitter aftertaste. It is not my favorite sweet and savory taste, but it is also delicious! When paired with a meal, the sweetness is felt more directly than if it were on its own, and it is very tasty!

After a quick chat about the end-of-year cancellations, we had our first drink! It's been a long time since I've had a drink, but it's Hiroki Shuzo Honten's Tobiroki! Let's have it right away! First, the aroma. The aroma is not so strong. When you put it in your mouth, you will be impressed by its beautiful mouthfeel. It has a soft sweetness and spiciness that I like. It also has a slight old-fashioned sake feel to it, giving it a sense of thickness. The lingering taste is soft bitterness. It is a well-balanced sake that goes well with meals. By the way, it is a great place to drink, eat, and stay with a variety of really delicious dishes!

The first time I had a bottle of Nagurayama sake, it was very delicious, and I love it! Let's enjoy it right away! The first day First, the aroma. The citrus aroma is refreshing. When you put it in your mouth, it is not too sweet and fruity. It goes down smoothly. After that, the bitterness gradually spreads, and the spiciness spreads with a suit and a slightly salty taste, and there is a slightly heavy aftertaste that is both fruity and refreshing, like sake. The taste is complex and not easy to understand, but I found it to be an interesting sake. On the 3rd and 4th day The bitterness has weakened and the impression of sweetness has become a little stronger, but the overall impression has not changed much. Tomorrow we will visit our favorite yakitori restaurant for the first time in a long while, and for the first time in the new year! I'm looking forward to the three-day weekend of sake drinking!

The first day First, the aroma. The aroma is not so strong. In the mouth, you can feel a fluffy, beautiful sweetness mixed with spiciness and bitterness. The mouthfeel is very clean and easy to drink. It has a slightly fruity flavor, and the overall taste is gentle and medium. It is a very tasty sake that goes well with food. Day 2 The gradation of sweetness and bitterness, followed by a gentle spicy aftertaste that spreads in the mouth, is delicious today as well! This time, it is cooled down to a crisp and has a sharpness. Warmed to lukewarm. This time, we also served it warmed. The sweetness increases in the mouth, and the aroma on the nose is also very nice. The lingering aftertaste is longer in cold sake, which I prefer. Today is Christmas Eve. I'll be looking at the Christmas postings on my way home from work, and then my wife and I will be buying chicken (Kenta) and enjoying the Christmas spirit strictly at home. Here's a drink we had on Christmas Eve. Akanesasu by Tsuchiya Sake Brewery. This time it was a sparkling dry sake. This is the sparkling wine I wanted to drink. I got it the other day at the Komenohana and was looking forward to drinking it. Before I give my opinion, I have to say that it was a really tasty sparkling wine that I would like to repeat. Now, let's have it right away. First, the aroma. Surprisingly, it has a sake-like aroma. When you put it in your mouth, the first impression you get is that it is very sour. It is very refreshing. The sourness is the first impression, but there is also a hint of sweetness and a nice aroma. In any case, it is easy to drink! And it is delicious! Even my wife thinks it's delicious! My wife also said it was delicious! The bitterness is only slightly perceptible in the aftertaste, but this seems to create a moderately dry feeling. It was really tasty, shwashy, and refreshing, perfect for a toast. It was another blissful sake time today.

Yesterday I went shopping in Osaka. We went to Hamagurian for lunch for the first time in a while. I had one glass of sake. It was a Kuroryu Daiginjo from Kuroryu Shuzo. Let's have it right away. First, the aroma. The sweet aroma is very nice. When you put it in your mouth, you can feel the smooth taste. It has a soft bitterness and a slight spiciness, with a refreshing aroma and a slight sweetness in the aftertaste. It is delicious. On its own, the sake had an image of being gentle and clean, but when paired with a meal, the umami flavor and aroma were well perceived, and the sake itself was a delicious sake that could be enjoyed even during a meal. I was feeling better after having a bottle of Jinzo and wanted to drink a little more. So tonight, we had another sake that we could only drink a small portion of. This is a sake from a brewery I have never tasted before. It is Wakakoma Junmai Ginjo from Wakakoma Shuzojo. This is the last bottle I bought as a souvenir from my trip to Toyama. I will have it right away. First, the aroma. The aroma is not so strong. When you put it in your mouth, you feel the old-fashioned sake? The moment you take a sip, you will feel a beautiful sweetness. The aftertaste is spicy and lingers in the back of the throat. It is a little peculiar, but it is also umami and a little complex, which is different from the taste I usually enjoy, but I like it this way. This was the last of the Toyama souvenir sake. It was a very satisfying experience for me to be able to taste so many Toyama sakes during my trip.

This time it was Junmai Daiginjo White. The sweetness was impressive when we tasted it, so we are looking forward to it. So, let's have it right away. First, the aroma. It has a refreshing sweet aroma. When you put it in your mouth, it goes from refreshing to sweet deliciousness~. The sweetness seems to be of the refined Wasanbon type. From the strong impact of the sweet and delicious taste, a little saltiness and full-bodied taste can be felt. It is not too sweet as it finishes quickly and smoothly. The lingering aftertaste is a slight bitterness. It is still delicious. My wife also said it was delicious. It is of course delicious on its own, but I have the impression that it would not be bad with a meal. The drinkable size when you want to drink a little, and this deliciousness, it was a very satisfying saké tonight as well.

My wife and I are drinking at home today. What shall we drink? The Nigorin Pic has started at Sake-no-Wa, but we don't have that much nigorin at home, so after much deliberation, we decided on this. This is the first sake from the brewery. Takeyu Junmai Daiginjo Aizan by Takeyuu Co. This sake is brewed with Ogawa yeast. Let's have it right away. The first day First, the aroma. It has a sweet aroma. When you put it in your mouth, you will taste sweetness, sharp bitterness, and spiciness that spreads in your mouth. It has a very firm spicy aftertaste. It was cold at first, so when it cools down a little, the balance of sweetness, bitterness, and spiciness improves, and the umami flavor is enhanced. It is delicious in its own way. When served with a meal, the bitterness and pungency become less pronounced and the balance with the sweetness improves even more. It is also delicious with a meal! Day 2 The sweet aroma that is somehow typical of Aizan passes through the nose while the sweetness is blissful. The bitterness and pungency are only slightly lingering. On the second day, the sake is quite sweet and delicious. It is a Ryusuisen from Ichinoya. This time it is Hitokochiki. I happened to come across this sake at a liquor store when I was looking for a sake from Nagano Prefecture. Let's have it right away. First, the aroma. It has a sweet vanilla-like aroma. When you put it in your mouth, you will feel a refreshing taste. It also has a slightly stimulating taste. Then, a refreshing pear-like sweetness is felt, and a fresh aroma passes through the nose. In the latter half, there is a soft bitterness that spreads in the mouth. I thought it was a slightly unusual flavor that I cannot describe well. When matched with a meal, the taste became richer and more umami. However, it did not interfere with the food. It was a delicious sweet and bitter sake that went very well with meals. Personally, I felt that it is a sake that I like to drink with meals. Well, it was a weekend where sake healed me and gave me energy for tomorrow.

I wasn't planning to drink today, but somehow I felt like it. So we decided to have some Tomiou, which was sold by weight on Tuesday. It was my first experience of selling by weight, so I had it with the memory of how much fun it was. First, the aroma. It has a fresh, slightly citrusy aroma. When you put it in your mouth, you can feel the bitterness from the smooth mouthfeel. It also has a hint of sweetness, albeit moderate. The lingering aftertaste is the bitterness and spiciness that spreads in the mouth. It is a fresh and powerful sake, and although I found it a bit spicy, it is very tasty in its own way. It goes well with meals, and during the meal, I felt that the sweetness was also well balanced with the bitterness. I tried it on the rocks, which is also recommended. I tried it on the rocks. After the sweetness increased a little, I felt the bitterness was stronger, and the pungent bitterness spread quickly. It seems to have lost some of its curdiness. We moved to Demachiyanagi for lunch and finally went to Matsui Sake Brewery. Many foreign visitors came to the brewery, which was very popular. After a lecture on how to drink, it was time for a tasting. Kamizo Sparring The sweetness and the sizzling taste are delicious! There is a bit of bitterness, but the sweetness is quite strong. My wife's favorite! Junmai Clear You can feel the sweetness and bitterness at the same time. It is also sweet, but the bitterness lingers and the mouthfeel is smooth. Shiboritate Genshiyu Soft sweetness and a hint of bitterness with a traditional sake feel. Fairly heavy Junmai Ruri The mouthfeel is smooth, with a good balance of bitterness and gentle sweetness. It has a good balance of bitterness and gentle sweetness. Junmai Daiginjo Saikaze Narai Delicious the moment you put it in your mouth. Next was Fujioka Sake Brewery's Aozora. We were also given a set to compare drinks and a few snacks. For purchase, we took home a bottle of Kinuhikari Orikarami, which is not included in the paid tasting. Here are my impressions of the paid tasting. Junmai Daiginjo Oorigarami Aizan Milky and full of umami, but not too sweet. It can be enjoyed as a food sake. Junmai Daiginjo Oorigarami Betsuatsurae Yamadanishiki A clear, old-fashioned sake with a strong umami flavor. It also has a strong umami. The lingering aftertaste is refreshingly bitter and well-balanced. Junmai Ginjo Yamadanishiki A classic sake that has been around since the beginning. It has a smooth mouthfeel. It has a soft sweetness and a salty taste with a soft lingering bitterness. A sake that is delicious every time you drink it without giving up. Special Junmai Unfiltered Nama Sake At room temperature. The taste in the mouth is very robust. A nice spiciness from the firm mouthfeel that only junmai sake can have. The second half has a refreshing citrus aroma, sweetness, and a soft lingering bitterness. The rice used to make this sake is Kinuhikari. When you put it in your mouth, the sweetness and bitterness give way to umami. It is clean and fruity. The lingering aftertaste is a soft bitterness that is common to all of the wines we have had today, and I felt it was exquisitely balanced. It has been a while since I have had Aozora, but it was delicious.

Today is my day off, so my wife and I are in Kyoto for a sake brewery tour. I saw a post by Sake no Wa about visiting a kamizo (a sake brewery) and thought it was close to Demachiyanagi area. We decided to visit a brewery in Fushimi as well. We originally planned to go from Demachiyanagi to Fushimi, but we had to stop at Tambabashi due to a train accident, so we started from Fushimi. Although we could not visit the brewery, we first saw the massive exterior of the Matsumoto Sake Brewery and then went to the nearby Kitagawa Honke Brewery. This was our first visit to the brewery. Kitagawa Honke's Tomio. This time, we tasted three kinds of sake and took home two small bottles. The Junmai Daiginjo, which is sold by weight, was poured into bottles on the spot, which was a very exciting experience. This post is about the remaining bottle (the one on the far right). Probably an alcohol-added daiginjo according to the description. First, the aroma. The aroma is not very pleasant. When you put it in your mouth, it has a refreshing sweetness and a beautiful mouthfeel that you would not expect from an alcohol-added sake. It was very tasty and very satisfying to drink. However, my wife was a little uncomfortable when she felt the alcohol was too strong, so we gave up on taking it home. All of the sakes were very refreshing and tasty with a straightforward taste. After enjoying Tomiou, we moved on to Fujioka Sake Brewery in Aozora.
