[Very moderate in a good way😁]. The nose is muscat-like, but mild. It is not so sweet, but it is not dry either. The fizziness that is often associated with nigori sake is completely absent. It has both moderate umami and a refreshing aftertaste. There is nothing really special about it, but it is a delicious sake that goes down smoothly 😘. The regular junmai ginjo is a bit sharper, but the orikarami has a softer structure 😊. I think it is a good representation of the "ultimate food sake" as orikarami, in a different way from the regular product: ✌️

[The destructive power of Kamitachika😁]. Gifu Prefecture, Gero City, Furusato tax return gift. From the moment the bottle is opened, the sweet fruity ginjo aroma explodes 🤯. It may be one of the strongest aromas I've ever had 😄. It has a slight effervescence and is sweet and very juicy 🧃. I had never heard of this brand before, and it was not registered in Sake-no-wa, but it tastes like Eiko-Fuji or Kangiku, with a sweet, royal, and gorgeous taste 🦚. It's been a while since I've had a sake from this line, but it's easy to drink and goes down a treat 😘. I'm sure it would be great with gratin or stew 😋. I haven't tried it but I don't think it would go well with sashimi...

[I like nigori a little sweeter 🥰]. I remember drinking it 3 years ago and liking it, so I bought it: ✌️ The lees are small for a nigori sake. It has a peachy aroma and a slight effervescence that is exactly what you would expect 😄. It is not dry, but lightly sweet and has an exquisite refreshing taste. I think this level of sweetness is the best for nigori sake 😊.

R6BY 1st bottle 😄] I've been drinking only ice-aged sake for the past month or so, but I finally got my hands on some new sake. This year, I started with Tsururei's nigori sake: ✌️ It has a thick leesiness and strong carbonation, perfect for this time of the year 😊. Not so much sweetness, but dryness and heaviness. The first day it didn't have much fullness, but on the second day I felt it became a little more rounded. I like the robust nigori sake too 😙. I'll be drinking a lot of nigori for a while 🫡.

【みんなちがって、みんないい】 氷温熟成4連発目は美寿々! 生熟好きにはたまらない、無濾過生原酒の氷温熟成モノ😍 リンゴ🍎系の香りで、少しだけチリチリ感あり。 上立ち香からもっとジューシーな感じかと勝手に想像していたが、思いのほか辛口でシャープ😙 一口に氷温熟成と言っても、造り手によって様々な特徴があって面白い😄 引き続き「氷温熟成」の文字を見たらノータイムで買うことにしようと思う✌️

[Kunpeki Kanpeki 🙆‍♂️] A hometown tax return gift from Konan City, Aichi Prefecture. The third consecutive low temperature aging following Houou Mita and Tosa Shiragiku 🎆. The aging period is said to be half a year, but the liquid is a little ochre-colored with a yellowish tinge for that 🟡. The moment you drink it, you can feel the impact of the sweetness and the alcohol, and after swallowing it, you will be left with a sharp bitter taste with a matured taste 😆. A little nutty 🥜 flavor, low acidity, and a strong umami and toromi, exactly what I like 🥰🥰🥰🥰🥰🥰. It is sold all year round and is priced around 1,500 yen, so great that I think I'll make it a regular sake 🤣.

[I want to be there for a little while longer 😍] Furusato tax return gift from Geisei City, Kochi Prefecture😄. The price of the bottle is over 3,000 yen if you buy it normally, so the more you buy, the more useful the Furusato tax payment is 😁. The aroma is melon-like, with a gentle sweetness spreading from the attack and a very smooth mouthfeel 😋. Sweet but not too sweet, soft spiciness with little acidity gives it a clean crispness, amazingly delicious... 😳😳😳😳 It was so delicious that once I started drinking it, I couldn't stop and drank more than 3 gou of it at once 😂. I almost finished it, though my rationality was just barely triggered...

[Champion of the land 👑] A 3-year aged Jun Daigin brewed with Gohyakumangoku from the Mita district, which is also the origin of the Houou Mita name. Just hearing the name makes you drool 🤤. Quite a fruity melon🍈 type top nose. The attack is gentle and thin, but the umami with a rounded richness overflows from it, and after swallowing, a spicy bitterness spreads gradually. The lingering aroma has a slight alcohol taste with a hint of maturity, which is quite to my liking. I like it best when it is aged for about 3 years in chilled or ice temperature as a spec! 💯💯💯

[Marbled✕Roman = Dignity of a champion ⁉️] A summer-over-summer sake from Kasumi Romain, it has a soft aroma of melon🍈 that is characteristic of Romain. There is a thin layer of nigorigo, and the taste is smooth with volume and sweetness, but strangely enough, the aftertaste is clean and ends with a pleasant bitterness. I quite like the quality of this sake😍😍. Although it has been aged at low temperatures over the summer, I don't detect much of an aged taste, so I can recommend it to those who don't really like hiyaoroshi in general 😊.

[Emerald Froujon🟢] The first version of the back of the green jade I've seen. 🌗 The top aroma is fresh and fruity just like the front, and I was convinced it was a winner even before I drank it 🎯. The attack is clean and thin, but then elegant sweetness and deep umami come out of it, and it's really good 🤩. As it claims to be dry, there is a spicy and bitter aftertaste, but there is no harsh acidity and no strange peculiarities 😆. The dry taste is well expressed in a way that does not lose the Ryoseki brewery's characteristics, and that is a word of praise 👍👍👍👍.

Memory of the Tidal Wave Kawachinagano City's hometown tax return gift😊. Sake made by submerging freshly squeezed unfiltered unpasteurized sake into the bottom of a dam lake and maturing it for half a year. That alone is a level of story that makes it a great Tsumami 😆. The alcohol content is high at 18 degrees and the sweetness on the attack is quite strong. It has a strong full-bodied flavor, and at the end of drinking, you get a spicy taste with a complex aroma that is similar to that of aged sake. I like this one a lot 😍😍😍. I think I'll donate another bottle if it's still in stock 😁. My only contribution of Osaka sake was at an izakaya when I started Sake no Wa, so I've finally achieved my national domination of the country with only 4-gouple bottles home-drinking: 🎖️

[What is different from Zak! What is Zak! ②] Shimizu Seizaburo Shoten hiyaoroshi drinking comparison. Following Saku, Suzukagawa 😆. The top aroma is faintly apple and white bean flour. The sweetness is less than that of Saku, and the taste is smooth and refreshing at the end. After swallowing, you can feel the same slightly bitter aftertaste as the Saku, and it is delicious👍. Unlike the junmai ginjo Saku, this is a junmai sake, but it is even more beautiful and clear than Saku. ✨️ Bottom line, it is similar to Zaku, but it is fun to compare the difference and they are both delicious ‼️

[What is different from Zak! What is Zak! ①] Shimizu Seizaburo Shoten hiyaoroshi drinking comparison. First up is Saku😁. The nose is reminiscent of berries and various other fruits. When you drink it right out of the fridge, it gives a smooth impression with rounded sweetness and acidity. And yet there is a moderate spiciness in the aftertaste 👍. The aftertaste feels more robust, especially with subsequent temperature changes. The fruity nature of the crop and the drinkability of the aftertaste are well balanced, and it is a masterpiece 😋.

[From the smallest to the largest. The power to move the mountain diesel 🎶😁😁. Fruity apple🍏 from the moment the bottle is opened, with a winning aroma. The mouthful is quite juicy, sweet and slightly fizzy, but it's not a lingering sweetness that lingers, but cuts through quickly 👍. The aftertaste is spicy with a little bit of maturity, and the wine is very drinkable and surprisingly delicious 😍😍😍😍. A bit pricey at 2,750 yen including tax, but it is a great wine that goes above and beyond the originally high hurdle, and definitely one that will be on my personal ranking for 2024 🥳.

The Tale of the Tortoise and the Dragonfly🍁] A beautiful label with dragonflies on it, jackets ✌️ I had the impression that Kame no Umi was sweet and sour, but Hiyayoshi is rather dry, with a moderate sweetness and lightness that made it easy to drink for me 😁. When opened, the sake has a slightly gaseous taste, with a characteristic acidity and sharp aftertaste. A few days after opening the bottle, the flavor becomes a little more rounded and leveled 🆙. The millet clam 🐚 sashimi was the best match 😋.

[Surprisingly, it was my first time 😳] I've been drinking Haneya for a long time, so I thought I've bought Hiyayogoshi before, but apparently it was my first time 😂. The standard Haneya has a fruity aroma, but the hiyaoroshi has a less fruity aroma. It's quite lightly made and I found it a little too sweet and sour for me... 🤨. If you pair it with something like sashimi, the sweet and sourness will stand out badly, so it's better to pair it with something a little sweeter. I think pumpkin salad🎃 was the best among the things I paired it with this time. On the fourth day after opening the bottle, it became a little more drinkable and I felt the quality of the sake changed. I prefer it after some time rather than freshly opened 😄.

I've never had too many of the famous brands 😅]. I think this is pretty common 😄. As expected, I had drunk the standard junmai sake Urakasumi at an izakaya, but this was my first time to try other labels. Fruity melon-like aroma on the nose. The slightly sweet, full-bodied umami is followed by a firm acidity and a lingering crisp spiciness. It is not flashy or distinctive, but it is an orthodox, umakuchi junmai-shu👍.

[Tonight is Yamada😄] Sake Sho Yamada limited edition that I bought and drank during my trip to Hiroshima: ✌️ Yamada" is a new sake made from "Yamada" Nishiki, which is bought in tanks and aged for nearly a year before shipping 😍. The mellow but clean sweetness, the spiciness in the aftertaste, and the melon-like aroma are exactly what you would expect from a Saijo sake 😋. I wonder if it's due to the aging process, but it has a flavor that doesn't lose to meat dishes, so I think it's easy to pair with western food as well 😆.

[Rice shochu? 😮] I found a bottle that I haven't tasted yet and bought it 😁. It has 19% alcohol by volume and +20 sake, which is a strong spec like rice shochu 😳. When I drank it, there is almost no rice shochu feeling (of course), but the alcohol is indeed very strong. I think it would be better to drink it with some small ice cubes floating on it to make the taste more rounded👍. Chokyu is really quite different in character from bottle to bottle, so it's fun and good 😂.

[My favorite word is ice warm 🧊] Of all the sake related words, my favorite is "ice temperature aging". When I find it, I basically go to the cash register 😁. If it's a fresh sake, it's even better💘 The aroma is quite sweet 🍑 and the attack is actually as sweet and juicy as you'd expect. But surprisingly, it doesn't linger and tightens up with a nice spiciness: 👍️ It is said that this is a half year old sake from this spring, so you can't smell the matured aroma in the hints. It is good with a hearty meal. ⛩️ It can be served with Western food as well.
