A little old, but I'll go over the notes.
Fresh and discreet aroma like pear. Soft in the mouth, with a moderate acidity and a silky finish that disappears quickly. It was a refreshing sake. ☺️

Soft mouthfeel and firm spiciness. The sweetness and umami taste spreads later, and it closes with an exquisite sense of balance and sharpness that is not only spicy.

It has been a long time since I have had sake. Tonight is the first Houou Mita I have had at home. I had decided what to drink at home first after tasting Hououmida. That was the Hououmida Mustache Ban. Of course, the label was cool, but I liked the concentrated sweetness and umami. This time, it was fire-aged, so I think the sweetness was stronger!
The aroma is strong and has a gorgeous sweet melon-like aroma. The smooth brewing water conveys the mellow sweetness of melon, the umami that is typical of the Kame-no-o lineage, and the wildness. The sharpness is not strong, but it disappears without a hitch, and the aftertaste is very cohesive. The thing I love most about Hououmida is the moustache. If there is an unfiltered, raw sake version, I'll buy it right away. Thank you for the food tonight, too!
2025.92nd.
A disagreement? This is a collaboration project between the two breweries, where laughter flows. The collaboration has been underway for several years with an ancient variety called Aikoku, and this release seems to be a full-blown release. This will stop the flow of the disagreement theory lol?
Putting that aside, when two of Tochigi Prefecture's best sake breweries, both of which have many fans, collaborate, there is no way I won't buy it. Of course, I bought the Sengoku version.
It tastes less sweet, wild, and rather dry. It also has a characteristic extended umami flavor derived from the sake yeast.
If you like ordinary Hououmida, you may be confused by the difference in taste, but this is a sake made from an ancient variety, and it is very drinkable.
Personally, I like the taste and look forward to drinking Senkyu's version.
I hope you will continue to collaborate with us more and more! And I hope you will dispel the theory of irreconcilable differences.
Thank you very much for the food.
The second glass was a "Houou Mita"!
Melon-like aroma.
Contrast between the supple sweetness and light acidity and astringency. The fresh mouthfeel was also a quintessential taste!
One of my friend's favorite brand.
It was worth recommending it to him.
