Yesterday I worked late again and had trouble cooking dinner, so I went to a local restaurant that my boyfriend is interested in. Apparently it is a place where you can enjoy beer and sake.
You choose from "fruity," "refreshing," "delicious," and "matured" sake, and then the owner will bring you three bottles of sake from which you can choose one.
We started with "Fruity. There was a Takachiyo among those brought to me, so I chose it.
Anyway, the aroma is nice! It tasted just the right amount of sweetness and was delicious! I was curious about Takachiyo, so I'm glad I got to try it! ♡♡♡♡

This bottle was purchased at the Yukiguni Shuho Kanazawa-ya during Halloween last year.
It was put to sleep after purchase.
The alcohol content is 16%.
Polishing ratio is 48% Junmai Daiginjo
When the bottle is opened, the aroma is rich and citrusy, with sweetness and acidity intertwined. The longer it sits, the richer it becomes.
The first sip reveals a complex flavor that is not monotonous, but rather a combination of juicy and dense orizumi (rice curd). A citrus-like acidity spreads in the mouth, and a lingering sweetness lingers in the mouth after swallowing. Delicious.
A delicious sake, perfect for the end of a sobriety period.

The umami expands, but it's still not peach 🤔.
The bitterness is still there when it's cold!
When warmed up, the bitterness settles down and the Takachiyo character comes out more.

I wonder where the peachy flavor comes out... Finally, the peachy sweetness appears in the umami!
The bitterness has almost disappeared, but the alcohol taste is more powerful 💪.
I think the peachy "As if Peach" from a sake brewery in Shunan City, Yamaguchi Prefecture, is the peachy winner 🤣.
